Vegetarian Mexican Lasagna

Another awesome Saturday to go down in the books. It started off with a mango, banana, and almond milk smoothie.

Dana and I sipped our coffee on the deck while tossing the ball to Moose. It was a very relaxing morning.

During the middle of the day we headed to celebrate our friend’s son, Leo’s 1 year birthday.

We mingled outside, hopped in the blow up hopper, watched as 5 kids opened up Leo’s gifts for him, and ate some awesome food. I didn’t snap a photo but I had a plate full of pulled turkey, Ramen salad, some sort of pesto pasta salad (maybe?), fruit, a peanut butter cup chocolate chip cookie and a piece of birthday cake. OMG everything was fabulous and so much fun. Leo is such a cutie and handled all of the extra attention so well.

After the party we stopped at Gertens Greenhouse and Garden Center to look for some plants for our front yard.

We had a $50 gift card from our wedding and we did a great job of spending as close as we could to that amount. With a water thrown in our total came out to $49.66. Not bad, huh?

We bought three Barberry plants and one Sedum. I’m excited to see how they look in the front! Thanks Brian and Amanda!

We stopped home to drop off the plants and pick up the pooch. We took off for a nearby little lake for a walk. Moose was not on his best behavior but it was still a nice walk. He wanted to get into everything and kept cutting us off and pulling more so than usual. He has his good days and bad days just like me.

Dinner

For dinner I got creative with the zucchini once again, this time in the form of lasagna. The zucchini is popping up in our garden here and there and you better believe it’s going to get eaten. 

To start, I cut my zucchini into thin lasagna-like noodles. I sprinkled them with salt in a colander, and let them sit in the sink for 10-15 minutes. Then, I removed them from the sink and patted them dry with a paper towel.

Next, I combined 1 cup of cooked black beans, 1/4 cup diced red onion, 3/4 cup corn, 1/4 cup diced tomatoes, 2 teaspoons of chili powder, and a dash of salt.

Next I began the layering process starting with salsa on the bottom, then a sprinkle of bean mixture, zucchini, salsa, bean mixture, zucchini, salsa, bean mixture, and topped with cheddar cheese.

Into the oven it went for 45 minutes at 400°. Then I flipped the oven to broil and broiled for 2 minutes to crisp the top.

I let it sit a few minutes before slicing and plated it up.

Vegetarian Mexican Lasagna

Ingredients

  • 1 medium zucchini
  • 1 cup black beans, cooked
  • 3/4 cup corn
  • 1/4 red onion, diced
  • 1/4 cup tomatoes, diced
  • 2 tsp. chili powder
  • pinch of salt
  • 1 cup salsa
  • 1 cup cheddar cheese, shredded

Directions

  1. Preheat oven to 400°. Lightly grease bread loaf pan with cooking spray. Set aside.
  2. Cut zucchini into lasagna-like strips. In a strainer in the sink, sprinkle with salt. Let sit for 10-15 minutes, then drain and pat dry with paper towel.
  3. In medium bowl combine beans, corn, onion, tomatoes, chili powder and salt.
  4. Begin layering: 1/3 cup salsa, 1/3 of bean mixture, zucchini, 1/3 cup salsa, 1/3 bean mixture, zucchini, last of the bean mixture, last of the salsa, finish with the cheese.
  5. Bake for 45 minutes then switch oven to broil. Broil for 2 minutes.
  6. Remove from oven and let cool for 5 minutes. Cut carefully and serve. Finish with a few sprigs of cilantro.

Such a great spin on lasagna. I hope you’re not getting tired of all of the zucchini recipes! Pretty soon there will be a bunch of tomato recipes once they start turning red in the garden.

Date at Pittsburgh Blue

Happy Friday to you all!

Last night, Dana and I had a date night. We still had a gift card from our wedding to a chain of restaurants in the area, and it was burning a whole in my pocket.

The chain of restaurants is called Parasole and among their restaurants, we chose Pittsburgh Blue Steakhouse which specializes in duh, steak, but also has a great variety of seafood.

We got all dolled up, had our own happy hour at home with a glass of wine, before heading out the door to the restaurant.

We told him that if dogs were allowed at the restaurant we would so let him come with, but no can do. Rules are rules. Sorry, Moose. Winking smile

While we contemplated our dinner orders, we both ordered a glass of Zinfandel which was perfectly smooth and slightly sweet. By far my favorite wine.

They also brought out a bread basket which I had originally said I was going to pass on, but changed my mind about 7 minutes later. Boy am I glad I did. The bread loaf was made up of 4 large rolls that were incredibly soft on the inside, and the outside had a light crust brushed with garlic butter and sea salt. OH MY. I thought I had died and gone to heaven.

For dinner I ordered the seafood cobb salad. The salad started with a bed of romaine lettuce drizzled with lemon vinaigrette, and then was piled high with these toppings:

What an awesome salad. I ate 80% of it and was pretty proud of my accomplishment.

Dana ordered the prime rib which to me is the most unappetizing thing ever. I’m just not much of a meat person as you may well know by now. He really enjoyed it!

We also ordered a side of asparagus which were the bomb.

Although I was feeling pleasantly full after dinner, I really wanted to finish date night with something sweet. I had the bright idea to stop at Whole Foods on the way home and get some gelato.

2 scoops: 1 scoop chocolate brownie and 1 scoop salted caramel.

Are you kidding me? My second glimpse of heaven that night. I especially loved the salted caramel.

It had been way too long since we have had a date night like this. It was perfect. I loved spending such a nice evening with my hubby. Thanks Brett and Krystle for the great wedding gift!

A Joke for Monday

The weekend isn’t really over, is it? I feel like it never happened it flew by so fast. As always.

It was a wonderful weekend. I didn’t do much on the side of cooking and didn’t  develop any new exciting recipes over the weekend, but I surely enjoyed relaxing at home and with friends.

Saturday

Breakfast was a cup of coffee with stevia, and a piece of almond bread toast with PB2 and cinnamon.

The fam bam and I headed out for a 3.35 mile run around the neighborhood. The weather was PERFECT. It is finally starting to cool down around here and the temperature was high 60’s with a light sprinkle which felt great.

We switched up our grocery shopping day to Saturday instead of Sunday since we both had fun plans for Sunday and wouldn’t be able to go on our usual day.

When we were at Costco we stumbled upon a super large pet bed for Moose for only $20! Seriously you don’t find that price anywhere on pet beds. His other bed had seen better days and he was definitely ready for a new one; a big boy bed.

I think he likes it. Actually what’s funny is that we had to force him onto the bed for this photo. I think he likes it? Smile with tongue out

Lunch was very random. I had grabbed a sample or two at Costco, and when I got home, I wasn’t sure what I was hungry for so I made it a small snack type of lunch.

I started with cooked carrots with cinnamon.

Then oven roasted turkey breast with cheese.

And then I think I moved on to a couple of bites of peanut butter and then called it a day, but I’m not for sure.

In the afternoon, I relaxed and laid out on the deck. It was wonderful and much needed. I have been exhausted.

Dinner was Roasted Butternut Squash Soup that I made a while ago and stored in the freezer. I love having homemade soups in the freezer for days like Saturday night, where I had no inclination to cook or make anything. All we had to do was grab a couple of bags of soup from the freezer, pop them in a bowl in the microwave, and top them with some chives.

Sunday

On Sunday I headed to Mankato to meet up with a couple of my girlfriends from college. Being that we were all dietetics majors, there is always food involved at our get-togethers.

I brought apples, mango, cherries and yogurt dip, Terra sweets and carrots chips (which are amazing btw), and to the left unpictured is a giant bag of trail mix which I dominated.

We also had pretzel chips and hummus, carrots, and lettuce wraps. Pretty healthy, right?!

I loved loved catching up with the girls. They both have beautiful little baby girls so I got lots of quality baby time. I love baby time, and girl time, so it was a great Sunday.

When I got home, Dana, Moose, and I went for a leisurely walk around the neighborhood, then I got ready for the week ahead.

Monday Joke

So, I was thinking…since I tend to have a hard time dealing with Mondays, with going back into work week and all, how about I try to throw you all a joke on Mondays when I remember? I know I am not the only one out there who struggles with this day, so we can all benefit from it. I’m not guaranteeing any quality jokes, but if they can at least make you smile, or give you the slightest chuckle, I will feel like I’ve done my job.

Q: How do you turn a soup into gold?

A: Add twenty four carrots!

Dinner Date with My Girls

This is going to be a short but very sweet post. Last night I met up with two of my great girlie friends, Kate and Heidi (also two of my bridesmaids) for dinner at Emma Krumbees in Belle Plaine.

Emma Krumbees is an old bakery and restaurant that offers everything from burgers, to salads, sandwiches, flatbreads, and has an extensive breakfast menu too.

I decided on the Citrus Chicken Salad and I ordered the half portion because whole salads at restaurants tend to be absolutely ridiculous. In the salad was iceberg lettuce, red onion, avocado, tomato, grilled chicken, and a lemon citrus vinaigrette on the side. It was a very simple salad, and it was pretty tasty. The amount of food was perfect.

After dinner we walked on over to the gift shop and chit chatted along the way. Emma Krumbees also has an apple orchard and in the fall you can come and pick your own apples. I did that a long time ago with my mom and dad, and would love to do it again this fall!

After a couple of hours we were forced to say our good-bye’s and go our separate ways. It has been so bittersweet getting together with Kate lately because she is moving away to Georgia in less than a week. I am attempting to soak up every last bit of her before she leaves. I definitely will be making plans to go visit her out there.

As always, it was so good to be with my girls, and although Kate will be in Georgia soon, we are still going to Skype, and have a glass of wine together that way, and before we know it I will be heading out there to visit, or she will be coming home to visit.

I stopped by my mom and dad’s on the way home and hung out with them for about an hour before heading “home, home”. Mom and dad’s is my second home, and my house is my first home. I love the comfort of each place.

The rest of the night was spent hanging out with my men.

Today has been an absolutely AMAZING Saturday. I have lots to share with you tomorrow, but it’s going to have to wait. I hope you are all having a great day as well. 🙂

Cabin Weekend Photo Recap

We had such an absolutely amazing time away at the cabin this weekend. It was a sunny, relaxing, laugh-until-your-cheeks-hurt, 100% laid-back good time. 🙂 The family members at the cabin were my aunt and uncle Chip and Patti, two of their kids Aaron and Ali, my aunt and uncle David and Doreen, their two boys Matthew and Nathan (their cabin is next door to Chip and Patti’s), my mom and dad, and Dana and me.

This post doesn’t need many words, so how about a photo cabin recap instead? Here it goes…

I didn’t want to leave on Sunday; I had such a blast. This is definitely what the doctor had ordered. Thank you to my gracious aunt and uncle/Godfather for having us out to your lake place. I hope we can make this happen more often!

In case anyone was wondering, I did manage to stick to the SCD all weekend. It wasn’t easy, but I did it. I really want to reach my hands into the popcorn bag and the peanut M & M’s, but I resisted and snacked on some cantaloupe instead.

Banana Muffins and Yogurt Bites

Happy day everybody!

The weather has finally cooled down around here and it is so pleasant again. I was getting a little tired of the 100° heat. I live in Minnesota, now come on I’m not used to that. It is in the mid-70’s right now and supposed to warm up to the 80’s or so which is just perfect considering we are going to a pool party today. Want to know the most exciting part? My brother is here all the way from Bogota, Colombia! I haven’t seen him since our wedding in October and I am psyched to see him!! YYYYYaaaayyyyy!

This morning, Dana and I made our way to the gym after sleeping in until 8:40 am. I couldn’t believe we slept in until then, we don’t ever do that. We must have needed it. Anyway, we warmed up with a mile run then hit the weights and cranked out triceps, shoulder, and chest work. Dana was my personal trainer today and he whooped my butt. My arms are already sore. I couldn’t take a picture without holding my arm with my other hand to stay steady. I’m a serious wuss. But hey, I strength trained today! I said I wanted to get back on that train, and although I may be a little weak right now, you have to start somewhere. I feel like I am starting over now that I am starting to get my energy back again. That’s okay though.

I have a large watermelon to cut up before the party today and a few other things I want to do, so I am going to try to whiz through the rest of this. Here goes a recap from yesterday!

Saturday Lunch

This is a sorry attempt at a photo of a banana with cashew butter. It was really tasty but the photo sure doesn’t present itself that way!

I also stuffed my face with a load of watermelon which again, I forgot to take a photo of it but you know what watermelon looks like.

Afternoon workout and snacks

In the afternoon, I made my way down to the treadmill and got a half hour walk in while watching The Doctors. I also weeded the garden in the back which is looking real good! I can’t wait for all of the fresh veggies soon to come.

I made myself a snack of yogurt with honey and cinnamon a little while later.

And whipped up some nummy little frozen treats for Dana and I.

Please welcome strawberry-banana yogurt bites.

I simply blended:

  • Homemade SCD yogurt (you could use whatever yogurt you prefer)
  • Strawberries (fresh or frozen)
  • 1 banana
  • Touch of honey (because the yogurt is slightly tart)

Once blended, I poured the smoothie mix into the star freezer molds and place in the freezer overnight.

Today I popped them out of the molds and taste-tested. They turned out perfectly sweet and are such a nice and healthy way to cool down in the heat of the summer. These are perfect for adults and kids alike. If you don’t have fancy freezer molds, you could simply use a mini muffin tin or an ice-cube tray.

So cute, right?!

Speaking of mini muffin tins and cuteness…a few days ago I gave you a little sneak peek to a muffin that I had made. Well, it’s sharing time. 🙂

I am working on making snacks for Dana and I that are quick and tasty, and that can hold us over for a little while. I searched around and found a recipe for SCD Banana Muffins from this site. However, knowing me, I adjusted the recipe slightly. I am so excited to share these little gems with you. I prepared them in mini muffin tins so they are perfectly snackable.

Mini Banana Muffins SCD-friendly (makes 2 dozen mini muffins)

Ingredients

  • 2 cups almond meal
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/8 tsp cloves
  • 2 medium overripe bananas,  mashed
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 tsp apple cider vinegar
  • 1/4 honey
Directions
  1. Preheat oven to 350°. Lightly grease 2-mini muffin tins with sunflower oil (or whatever you have on hand); set aside.
  2. In small bowl, combine almond meal, baking soda, salt, nutmeg, cinnamon, and cloves; mix well and set aside.
  3. In large mixing bowl, beat together bananas, eggs and vanilla.
  4. Add vinegar and honey and mix.
  5. Mix in dry ingredients until combined; do not overmix.
  6. Pour batter into prepared muffin tins and bake for 20 minutes, rotating the pans half-way through.
  7. Muffins are done when toothpick inserted in middle of muffin comes out clean and tops of muffins begin to feel firm. Remove from oven and enjoy!
I am loving these little guys just plain jane or with a little smear of cashew butter.
For Dinner…
We brought dinner over to the Greg and Sue’s (my in-laws) last night. We brought lean hamburgers seasoned with salt and pepper, SCD ketchup, butter lettuce to use as our burger “buns,” and asparagus to grill on the side. I topped my burger with legal cheddar cheese and a slather of mustard and loaded my plate with asparagus. I went back for seconds of the asparagus. What is it about grilling asparagus that makes it so absolutely delicious?! LOVE! Before we grilled the asparagus, we nuked them in the microwave for 4 minutes to make sure they was cooked enough and easier for me to digest.
This was OH so GOOD!

When we got home I started making another batch of homemade SCD yogurt because I ate up the first batch. Then I was led out back where there was a little excitement. Our neighbors just got a 4 year old golden retriever and they met for the first time last night. Moose was introduced to a new friend named Sadie. Moose goes crazy over golden retrievers; he absolutely adores them. Remember this photo from the dog park?

Ok, that may not have been a golden retriever, but close.

It was so sweet watching Moose and Sadie together. Sadie was a little apprehensive but she was also just introduced to a new home and is working on adjusting to a lot of changes. I give it 2 weeks and they will be BFF or lovers, one of the two.

Day 2 of SCD Intro Diet

Hi friends! I hope everyone’s week is off to a great start. Can you believe tomorrow is July 4th already? I can’t! For those of you who missed yesterday’s post, you may want to check it out here. Otherwise you are going to look at my diet for the day and wonder what has gotten into me.

Monday

Yesterday was day two of the introductory diet on the Specific Carbohydrate Diet. The morning began with a slice of SCD cheesecake which looks pretty good right? I wish I could say it tasted as good as it looked, but it didn’t. You have to use this special dry curd cottage cheese aka Farmer’s Cheese in the recipe, and I despise it. It leaves the world’s worst after taste in my mouth that makes me nauseated.

I also drank a glass of pineapple juice to try and wash out the flavor. No such luck.

After breakfast I was working on my blog when Dana comes rushing in with Moose saying something about how he thinks Moose broke is toe. Holy cow, okay, wasn’t expecting that, what do I do? I ran over to Moose to see that his dewclaw is completely bent to the side and dripping blood. I ran and got a towel to try and catch the blood and Moose howled from pain. We loaded him into the car immediately and headed to the Animal Hospital.

When we got there they weighed Moose (90 lbs–he lost weight!) and headed back to the clinic room to wait for the doctor. I caught this photo of him for the very brief moment that he was sitting. He was so incredibly anxious and wouldn’t sit still. He knows this place…

They ended up numbing the area, and had to tear the dewclaw off which they said is the pain equivalent to us ripping our nail off. That news made me cringe. They sent us home with a laundry list of meds and a cone head to keep him from licking his bandage. Our poor baby. I feel so bad for him. We hate to have to have him wear that thing because he is miserable in it, but we don’t want him licking his bandage or gnawing at it while we are gone.. He can’t relax so he just sits there with his head lifted the entire time.

We gave it a rest after a little while because we were going to be home with him. He was fairly sedated at this point and konked out for the majority of the day.

That was a lot of excitement before 10 am! When I got home I was hungry again, so I snacked on a hard-boiled egg.

Lunch time rolled around and since my options were pretty slim due to the restrictive two-day intro diet, I sipped on a cup of chicken carrot soup.

And some pineapple jello.

I hit the road to go meet my mom during her lunch break and visit with her. I brought a picnic blanket and we sat under a nice shady tree and chatted for a good 45 minutes. Loved it! Dana and I hit the gym in the afternoon. I wasn’t feeling very energetic, so I brought a magazine along and hit the elliptical for an easy 30 minute workout.

For dinner, I made myself scrambled eggs with salt and pepper.

Bearing the 100° heat, I wanted to whip up a batch of SCD allowable bread so that Dana could have something to make a sandwich with. It was super easy and the bread looks awesome. I’ll try to remember to get Dana’s report back so I can let you know what he thought.

And yes, our house was a sauna after this got done baking!

SCD Bread (Recipe from this site)

Ingredients

  • 3 1/2 cups almond flour
  • 3 eggs
  • 3 Tbsp butter, melted
  • 1 tsp baking soda
  • 1 cup homemade yogurt
  • 1/4 tsp salt
Directions
  1. Mix all ingredients in food processor
  2. Bake for 55-60 minutes at 350°
**Note: this bread is not meant to be eaten during the introductory phase of SCD. I made this in preparation for the stages to follow.

I spent the rest of the night cleaning up the kitchen, I seriously cannot tell you how many dishes are involved with this SCD. I also watched DVR’ed Bachelorette which I have decided is my preferred way of watching the show. Some of the conversations can become pretty darn boring, so I fast-forward and get to the good stuff. In case you haven’t watched it yet, I won’t say who went home. I will say I was very happy with her decision, but I don’t know how she is ever going to pick between the last three guys. They are all great!

I am in a very good mood today because I have moved past the introductory diet and moving on to incorporating more fruits and vegetables today. I hope everyone has a wonderful day and I will catch up with you soon.

Going Away Party and Welcome Home Party

Last night we attended a going away party for our good friend, Luke. He will be moving out of state to begin a new job and although the feelings are bittersweet, as we are sad that he is leaving MN, we are also VERY excited for him in his new endeavor and are so happy for him.

We celebrated at Bar Lurcat in Minneapolis. Our friend, Krystle did an amazing job of putting this party together. The atmosphere was very relaxed as we sipped on our wine, snacked on mini sliders and other appetizers that were served, and all mingled and chatted the night away.

Here is the man who were celebrating on behalf of, pictured with his beautiful girlfriend (and one of my best friends), Kate.

Cafe & Bar Lurcat is located in the Loring Park area in Minneapolis. I don’t go to this area often, but really should. It is beautiful and has an almost Tuscan-like feel to the side streets. There is also a nice park located right behind where we parked our car (pictured below). There are other restaurants I wouldn’t mind exploring, or it would be fun to bring a picnic. I want to go back!

It was a really great night. We haven’t been out in a while due to traveling and me not feeling the best, so it was definitely a lot of fun. Luke, can’t wait to come visit you! Congratulations again!

Although, we enjoyed going out, Moose on the other hand wasn’t the most impressed. We gave him his alone time for a few hours, and by the time we returned, he had gotten over the fact that we left him in the dust, and welcomed us the best way he knows how: smothering and kisses.

So much love from our big man, who btw is shedding like CRAZY right now.

Now, it is Saturday morning, there is a steady rain falling outside, and I just baked up a lemon blueberry treat to bring to mom and dad’s tonight in celebration of Father’s Day. Sounds cozy right? I’ll share the recipe with you later gators.

I’m Still Delicate

It’s someone’s big day…

Our funny, sometimes annoying, very entertaining doggie, Moose turns 4 today. Also known as Mooser, Moosebear, Big Bear, Booboo. He has big plans to lay around the house and dream of chasing squirrels and eating flies. Who knows he may even get to go running with his uncle Kevin. My brother Kevin is going to be staying with the big bear this weekend because Dana and I are heading up north to the Boundary Waters. We are meeting up with one of my other brothers, Scott, and his girlfriend Nicole for an adventurous weekend full of backpacking, canoeing, portaging, camping, fresh air, and wildlife.

I will be learning a lot this weekend. I am not the most “outdoorsy” person. I have always been what my family calls a delicate doily. I have always liked wearing dresses and jewelry. I hate killing bugs. I cried all the time in basketball. I cried all the time in general when my feelings were hurt. I was delicate then…

And delicate now…I can handle a lot more now than I used to though. I am realizing I am capable of a lot more than I ever thought I could be. I never in a million years would have thought I would be signed up for a half marathon that is now two and a half weeks away, but I am. This weekend will be very good for me. I am truly looking forward to it.

Tuesday’s Breakfast

Gluten free english muffin with grape jelly on one half, and peach preserves on the other half. I ate one bite off one, then the next bite off the other (I ended on a peach bite).

Lunch

A half of a large precooked sweet potato with a sprinkle of cinnamon, brown sugar, and maple syrup. Please make this! I am contemplating eating this for breakfast even. It is SO good. Either bake or microwave your washed sweet potato, mash it, microwave it, sprinkle with the condiments listed above, and devour. Melty peanut butter would probably be really good on this too. Yum.

Dinner from last night is almost too embarrassing to post. I didn’t snap any photos of it because it was truly nothing to be proud of. In fact, I am a little ashamed considering I am a healthy living blogger. We all know, no one is perfect. I just have to say that given my current health status, junky foods have the tendency to sit better in my system lately. This is no excuse for what I ate for dinner. Okay so I bought a medium bag of pretzel M & m’s at the grocery store today, and half the bag is gone. Foods that are made with enriched white flour like pretzels and Cheez-its are very tolerable for me right now too, and some of those were consumed as well. Yup, that’s just peachy.

Anyway. Guess what? Remember that dress I mentioned a few days ago that I bought at Target for $7.00? Well, it fits! I wore it to work yesterday.

Such a completely awkward loner photo but I had to show you. That photo actually really reminded me of the first day of school photos that mom and dad would take.

Sporting the jean skirt with the lace trim, ruffle socks, and purple and pink backpack (my favorite colors of course). I was all set for preschool and 21 some years of school after that. He he.

Alright, I am off to the North Country. I plan to capture some moments on camera and cannot wait to share my experiences with you when I get back. Don’t miss me too much while I am gone. 🙂

Keep it in Perspective

After yesterday’s post about low-residue diet, limiting the “roughage,” etc., I thought I might dive a little further into the subject. I personally needed to brush up on it as it’s been a little while since I learned about it in school, and I thought some of you all might be interested in learning about it too.

What Is a Low-Residue Diet?

According to WebMD, “A low-residue diet is a diet in which fiber and other foods that are harder for your body to digest are restricted. Fiber is made up of plant material that cannot be completely digested by the body. High-fiber foods include whole-grain breads and cereals, nuts, seeds, and raw or dried fruits.

 Residue refers to undigested foods, including fiber, that make up stool. If intestinal walls are inflamed or damaged, digestion and absorption of nutrients and water may be impaired, depending on the location of disease activity.”

What can you eat while on a low-residue diet?

Grains:

  • Cold cereals that aren’t high fiber (Corn Flakes, Chex, etc.)
  • Enriched white bread
  • Cream of Wheat, grits, and I seem to tolerate oatmeal well
  • White rice, pasta

Veggies:

  • Cooked veggies such as mushrooms, green beans, carrots
  • Potatoes (no skin)
  • Canned vegetables
  • =(

Fruits:

  • Bananas
  • Melon
  • Canned fruit
  • Cooked fruit
  • Avocado

Dairy:

  • Dependent on the person and their lactose tolerance.
    • I don’t handle lactose well, so I avoid it even when I am fully well. I usually drink almond milk or soy milk instead. Small amounts of this kind of milk doesn’t seem to bother me much.
    • This goes for cheeses and yogurt as well. It is very dependent on the person and varies case by case.

Protein/Meat:

  • Most meat is fine to eat as long as it’s fairly lean.
  • Eggs are fine

Snacks and Sweets:

  • Cookies
  • Pretzels
  • Rice crackers
  • Pudding

To Avoid:

  • Nuts, seeds, peanut butter (this one I may not completely follow)
  • Dried fruits
  • Raw vegetables
  • Whole grains
  • Certain cooked vegetables (broccoli, brussels sprouts, cauliflower, etc.)
  • Beans, lentils
  • Popcorn
  • Caffeine

For those of you who read my blog regularly, you will notice that the foods listed in the “To Avoid” column, are the ones that I eat most regularly.

I have not completely handed over my diet to low-residue, but I am going to follow a majority of it for now, reminding myself that this is only temporary. I have been dealing with Irritable Bowel Disease (IBD) since I was 12. The symptoms come and go, and now that I am older and know my body well, I am hoping that I can fight this current bout quickly. Staying positive will help me to feel better sooner too! I am constantly reminded of how lucky I am to be as healthy as I am, and that there are a lot of people out there who are faced with more serious health problems than mine. That being said, I will be fine. This too shall pass. I will continue to keep it all in perspective.

This subject matter isn’t necessarily the easiest thing for me to talk about. It’s a little embarrassing, but I figure if I can help even one person out there who might be dealing with the same issues, it is worth it to share. So, here I am! An open book.

My food photos will look a little different for the time being, but I promise to return to the veggie packed diet that I love so much before too long.

On a more fun note, mom and dad brought Abbie over last night and the two dogs ran around in the yard. I snapped some pretty cute photos.

That last one is my favorite. Needless to say, Abbie is a little nervous around Moose who outweighs her by approximately 80 lbs. Who can blame her. Someday they will be best friends.
