Weekend Update: Clean It Up

Happy Monday my friends. Yes, we are going to make Monday happy today. Think of one thing you are thankful for and make that your happy thought for the day. My happy thought: it’s my birthday month! What’s yours?

It’s going to be a real quick weekend update for you all today. Friday night, Dana and I were feeling so super creative and motivated in the kitchen that we ordered ourselves a Domino’s veggie pizza. 🙂

I whipped up a batch of Julie’s raw brownie bites in the Ninja Ultima. Holy cow you guys. If you haven’t made these yet you absolutely must. They taste like a fudgy brownie. SO GOOD!

Dana and I actually went out to eat this weekend. For those of you who have been following me for a while, you know this just doesn’t happen very often. I ordered chicken fajitas and they did not disappoint. Although, my favorite part of the whole meal was probably the beans on that side plate.

We spent the day on Saturday with friends and it was such a great time. It was very much of an impromptu hangout, and sometimes those are the best! We grilled up burgers and hung out with the kiddos and the babies! Loved it.

On Sunday I got cozy in the kitchen and made a batch of beef and veggie soup. I am realizing I need more zinc in my diet and the best way to get that is through meat. This soup was completely amazing! I may or may not share the recipe.

My body wasn’t too thrilled with me and my not-so-healthy weekend. I am going to do my best to get back on the clean eating track as best as I can within reason. It starts with that soup; mostly clean and veggie-packed! My body will thank me.

It was a quiet weekend once again which ends our quiet weekend marathon for a little while. We have lots of birthday celebrations coming up and I am obviously super excited!

Weekend Favorites

So it’s for real Monday already? This weekend flew by! Mine was incredibly relaxing which I couldn’t have been more excited about. I was thinking, instead of doing a full recap of my weekend, how about I just breakdown some of my favorite moments from the weekend? Yea, I like that idea.

1. Watching an insane amount of New Girl with Dana while cozy in my sweatpants and snacking on some homemade caramel corn. What made it even better was that Dana made it!

2. Meeting up with Katie for lunch at Panera! The excitement of getting together with Katie would have been enough but then you add Panera on top of that?! Man alive I was excited. And believe it or not, I actually branched out and instead of the usual French onion soup, I actually got broccoli cheese soup. It totally hit the spot! I was so happy to be with Katie for a while. Such a treat.

3. Making some delicious food. For breakfast one day I made a two-ingredient pancake topped with peanut butter and real organic maple syrup. Not the prettiest photo I realize, but so tasty!

I also whipped up a batch of gluten-free pasta salad. I can’t remember if I used quinoa noodles or brown rice noodles (I had gotten them from the bulk bin at the co-op) but I do know it was one of the two. In the mix: peas, olives, celery, onions, chicken, mustard, mayo, salt and pepper, and a splash of lemon juice. This stuff was crazy good! homemade gluten free pasta salad

4. Watching Home Alone while walking on the treadmill in my warm home. Doesn’t that just sound cozy?!

5. Sleeping in and waking up with no alarm clock. And sleeping a lot. And getting an extra hour of sleep.

6. Dinner with my family on Sunday night. I should really say feast and not dinner. My mom and dad went all out with steaks, potatoes, broccoli, salad, and fresh fruit! So good! I think my body was really screaming for some iron from the red meat because it tasted really good to me last night. Our bodies know best after all. It was so nice hanging out with family as always!

My Beautifully Relaxing Weekend

Walks and some light jogging!

I actually went for a light and slow jog yesterday for about two miles. I cannot even begin to explain how good it felt. I am still needing to take it slow in the name of healing, but my jog was only slightly faster than walking pace so I am still taking it easy. I know better than to push myself at this point in the game.

Now that the weather has cooled off a bit and we are in the 70’s versus the 90’s, it makes outdoor running a lot more enjoyable. I may even get out for a jog this morning again!

I plan to finish off the long weekend with some more shopping. I have a super amazing event coming up so I am shopping for an outfit. More to come on that soon!

Also, I may work on a little bit of food prep. I have big plans for dinner with my lovely lady friend Kalley tomorrow. Get excited!

My Friday Night: Blends and Spoon River

After work yesterday I made my way to downtown Minneapolis to meet up with my friends and fellow bloggers Katie and Becky. I always get excited about meeting up with these girls. Although we’ve only known each other for a short time, I feel so connected to them. Our conversations are always great, we laugh, we talk about life, blogging, food, etc. We always have an amazing time together and last night was no exception.

Becky poured me a glass of chilled white wine upon arrival of course. 🙂 Like she says, if you come over, she’ll always keep your glass full of wine.

The only thing about this get together was that it was a little bittersweet. Becky will soon be moving to Chicago, so this was our Bon Voyage get together. It was more sweet than bitter however because for one, I am thrilled for Becky and this new chapter in her life, and two, Chicago really isn’t very far away; a quick plane ride or a five-hour car ride. It’s no big deal. Now we have more of a reason to go out to Chicago. We’re already starting to plan for our trip out there!

Last night we headed over to Spoon River for dinner which is “a restaurant in Minneapolis committed to the advancement of organics, the support of local growers and serving the freshest, most delicious food possible.” source  Sounds amazing right? Well, it was.

I ordered the vegetarian special for the night which was zucchini stuffed with ricotta, goat cheese, and kalamata olives, roasted bell peppers, roasted eggplant, green beans, and a quinoa pilaf. Oh my goodness everything was fabulous; so full of flavor and incredibly fresh. Go eat there now!  spoon river

We sat outside and enjoyed the perfect evening.

For dessert I enjoyed two homemade bars: a Special K bar from Katie and a cookie dough bar from Becky (recipe to come!). Both were sinfully delicious. I felt bad I didn’t have any bars to contribute!

We said our good-bye’s at the end of the evening but as I always say, “it’s not good-bye, it’s see you later.” I can’t wait to see you gals again soon. I love you both!

The remainder of the evening was spent cozied up in my sweats and laughing at this guy who thought it was a good idea to dissect his toy…

Clean Almond Chocolate Cookies

Thursday, August 8th is Miracle Treat Day at Dairy Queen. Dairy Queen will donate $1 to the Children’s Miracle Network Hospitals for each blizzard purchased. Make Thursday a DQ Blizzard day if you have one in your area!

So speaking of ice cream, I have been seriously craving it, like in a really bad way. When these cravings arise I will make myself a batch of banana soft serve but ya know what, I’m not going to lie, it’s just not the same. I can’t wait for the day when my body is stable enough to enjoy a frozen ice cream treat now and again!

Until then, I will continue to find substitutions to the sweet treats my body has been craving.

On Monday, we had a cool and cloudy day here in Minnesota; the perfect cookie baking kind of day. I whipped up a batch of clean almond chocolate cookies! I was inspired by a recipe from the Clean Blog but made quite a few changes, so I wanted to make sure and share my recipe with you all.

These cookies are gluten-free; made from almond and coconut flour.

They are refined sugar-free; sweetened with coconut nectar and applesauce.

They are rich and chocolatey thanks to raw cacao powder and cacao nibs.

And they are pretty darn delicious if you ask me.

They have a rich chocolatey flavor, they are subtly sweet, and Dana and I have really been enjoying them for the last few days! We can’t always have cookies around or we would turn into cookie monsters, but it’s fun to have them around the house every once in a while!

Almond Cacao Cookies

Serves: 3 dozen cookies

Ingredients
  • ½ cup coconut flour
  • 1 ½ cups almond meal/flour
  • ½ cup coconut sugar plus ½ cup to coat dough balls
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 Tbsp raw cacao powder
  • 1 cup raw cacao nibs
  • ¼ cup unsweetened applesauce
  • 1 Tbsp coconut oil
  • ¼ cup almond milk
  • 1 teaspoon vanilla
  • 1 cup almond butter
Instructions
  1. Preheat oven to 350 degrees F. Line a baking sheet with a non-stick baking pad or coconut oil.
  2. In a small bowl, combine the flour, coconut sugar, baking powder, baking soda, salt, cacao powder and cacao nibs. Set aside.
  3. In a large bowl, combine the applesauce, coconut oil, almond milk and vanilla.
  4. Add dry ingredients slowly into wet ingredients and mix until well combined.
  5. On a small plate, sprinkle ½ cup coconut sugar.
  6. Roll batter into 1 inch balls, then roll in coconut sugar, and place on the baking sheet leaving about an 1½ inches between cookies. Use your hand or the back of a cup to flatten the cookies to about ½ inch.
  7. Bake for 13-15 minutes. Let cookies completely cool on the pan.ENJOY!

Cinnamon Muffins {refined sugar-free and gluten-free}

The perfectly sweet way to start your day…with mini cinnamon muffins! They are cute, sweetened with honey and no refined sugar, gluten-free and would be PERFECT with a little smear of nut butter. Although I recommend taking time in the morning to sit down and thoroughly enjoy your breakfast, I know that this isn’t always realistic in the busy world we live in, these muffins would be perfect for on the go.

Since they are mini-size you can decide how many you want to enjoy at any given time. They also make a perfect pick-me-up snack or even for dessert. You could even bake up some apple slices with cinnamon and crumble one of these little guys right on top of your apple slices! Or crumble one on top of some Greek yogurt! I’m getting all excited over here! Mmm, mmm.

Cinnamon Muffins (refined sugar-free, gluten-free)

Serves: 3 dozen mini muffins
Ingredients
  • 1 cup almond flour
  • 1 cup brown rice flour
  • ¼ cup coconut flour
  • 1 tsp baking soda
  • ½ tsp sea salt
  • ½ tsp cinnamon
  • 3 Tbsp flax seed + ½ cup water
  • ¼ cup coconut oil, melted
  • ¼ cup unsweetened applesauce
  • ½ cup raw honey
  • 3 eggs
  • 1 Tbsp vanilla extract
  • Topping:
  • ¼ cup honey
  • 2 Tbsp cinnamon
  • 2 Tbsp coconut oil, melted
Instructions
  1. Preheat oven to 350 degrees F. Lightly coat two mini muffin pans with cooking spray. Set aside.
  2. In a medium bowl, combine all flours, baking soda, salt, and cinnamon. Set aside.
  3. In a food processor combine flaxseed and water and process until frothy.
  4. In a large bowl, beat together the flaxseed mixture, oil, applesauce, eggs, and vanilla.
  5. Slowly blend dry ingredients into the wet ingredients until combined.
  6. Carefully spoon batter into prepared muffin tins.
  7. In a small bowl, combine the topping ingredients: melted coconut oil, honey and cinnamon. Mix well and spoon over muffins.
  8. Bake for 12-15 minutes or until tooth pick inserted into middle muffin comes out clean.

Mint Dark Chocolate Recipe (Sugar-Free, Soy-Free, Dairy-Free)

That’s what I’m talking about.

One of my biggest vices has always been sweets, mainly chocolate. When I started seeing my Naturopath I told her about my sweet tooth and that I truly enjoy eating chocolate on a daily basis. Since I know that my body reacts very negatively to sugar, especially at this point in my journey, I should be avoiding processed sugar as much as possible. I had settled with fact that at this point in my life I just wouldn’t eat chocolate or at least not as often as I was before.

But then…my naturopath suggested that I make my own chocolate using raw cacao powder, coconut oil, stevia, and almond butter. I am very good at casino games at daisyslots and other clever things. But, why had I not thought of this? Brilliant. She recommended I do some searching online to find a recipe. And that is just what I did.

I found a recipe from Practical Paleo which served as my inspiration. I ended up creating these beautiful chocolates!!

I have been experimenting with different ingredients and amounts of ingredients. I have had a couple of flops (my first batch came out pretty bitter) but I would say that I am getting pretty darn good at making my own chocolates. I cannot believe how easy they are to make!

My friends at Navitas Naturals were kind enough to send me a bag of their Raw Cacao, Raw Cacao Nibs, and Coconut Sugar so that I could continue to experiment in making my own chocolates.

So far I have only used the cacao powder, but I know I will be using the other two ingredients at some point. I am super intrigued by the coconut sugar. Coconut sugar has a lower glycemic index than regular cane sugar so it helps an individual maintain a more steady blood sugar versus major blood sugar dips and spikes.

Raw cacao is one of the richest antioxidant sources found in nature. Not only that but it provides other important minerals like magnesium and iron. So yes, the rumors are true that dark chocolate is indeed good for you (in moderation of course).

You’re probably thinking, cut to the chase Melanie, I want to see this recipe! Okay okay here you go. This is my recipe for Mint Dark Chocolate which is my favorite recipe so far (the rest still need some tweaking).

In a microwave safe bowl, mix together 1/2 cup melted coconut oil with 1/2 cup cacao powder. You can use any cocoa powder but raw high quality is best and make sure it is unsweetened. You can find raw cacao by Navitas Naturals at Whole Foods and I found it at our local co-op as well.

Next, mix in 1/2 cup of almond butter. I use homemade but you can use store-bought, just make sure to look at the ingredient label and check that there is no sugar added!

Next, I add in 15-20 drops of liquid vanilla stevia. You can adjust the amount of drops to your liking. More if you like sweeter, less if you prefer not as sweet. Lastly, I add in a minuscule splash of mint extract. I have never really measured this but I would say 1/4 teaspoon or less.

Give this all one last good stir.

Next, drop the chocolate into mini cupcake liners ( I didn’t have these so I just used the normal sized ones) on a baking sheet. Once all of the chocolate is dispersed evenly among the liners, place the pan with the cupcake liners and chocolates in the freezer.

(Side note: the top chocolates in this picture below were an experiment that didn’t turn out to be my favorite so I am not sharing any recipe for those ones until I perfect them!). The chocolates on the bottom are the mint ones before they went into the freezer.

It doesn’t take long for these to set (20 minutes or so) so before too long you have yourself some tasty, sugar-free homemade dark chocolates! IMG_3200

Since I had to use the normal sized cupcake liners, I cut my chocolates into quarters so that they were more bite-sized and I stored them in a Ziploc bag in the freezer.  If you used the mini cupcake liners you probably won’t need to cut them. You need to keep them in the freezer because they will melt at room temperature.

Now you can have your dark chocolate and eat it too! I hope you enjoy!

Homemade Dark Chocolate (Sugar-Free)

Gluten-Free Expo Goodies

On Sunday evening (sorry still catching up from the weekend), Dana and I went to a gluten-free mini expo at a restaurant called Ernie’s. Dana had read it in an email and mentioned it to me, and I thought it would be something fun to do on a Sunday evening. We made “reservations” for 5:30 and headed on over to Ernie’s.

We were greeted by one of the managers of the restaurant who was exuberant about his restaurant—I mean this in a very good way. He was thrilled first of all that we were there, and then continued to explain to us all of the gluten-free menu items available at Ernie’s. He sent us home with a menu and then encouraged us to gander over to the free sample area.

I was hoping that the actual vendors would be present and representing their brands, but it was the Ernie’s staff behind the counters instead. They were all very sweet and were versed in some of the product information, but they couldn’t answer all of my questions or really go in-depth about the products. Still, I was very happy with the Ernie’s team. They did a great job.

We began with GF cornbread and pancakes. Both were made from Bob’s Red Mill mixes. They had used the mix to make up three different flavors of cornbread: plain, chili, and jalapeño cheddar. I snagged a chili one.

The cornbread probably would have been really good if it was warm, but I ate it cold. It tasted okay, but nothing to write home about. The pancakes however were fresh off the griddle. The enthusiastic pancake flipper encouraged me to take as many as I wanted. She said she uses this mix at home and LOVES it. I like it when they can relate and tell me how they use the product. I really liked those pancakes and would maybe even buy the mix to have on hand at home.

On this plate: Bob’s Red Mill pancakes, cornbread, Lundberg Rice Chips, EnerG crackers with salmon dip, and Oikos Greek yogurt.

Mary’s Gone Crackers was also there and I was able to take home three different flavors of their crackers: black pepper, sea salt, and onion. So far I have only tried the black pepper and they are good…and spiiicccaaay (that one for you, ONW). I can handle a little heat. 😉 Mary’s also makes cookies, and I was sent home with a handful of those too.

The Celiac Foundation of Minnesota was there too and I actually knew the wonderful lady volunteering to represent the company! It was nice to catch up with her and she sent me home with a box mix for focaccia bread! Num!

 

Next stop was the GF beer lady. I was extremely anxious to try this stuff. I am not a huge beer drinker and the reason for that is I get bloated and feel terrible every time I drink it. Since I usually go for the red wine anyway, this isn’t a big loss for me, but there are time when drinking a beer is way easier than drinking a glass of wine.

They had a couple of different beers they were sampling; one was said to be very hoppy, and the other one was very light. I don’t do hoppy beer, so I tried the light one. The brand is called New Planet and they are based out of Boulder, CO. Of course they are! So many awesome companies are based out of Colorado!

I couldn’t find the ingredient label for this particular flavor online (they are temporarily out of stock) but I found the one for blonde ale, which I’m sure is fairly comparable:

I’m still trying to decipher if I have a slight intolerance to the starch from corn, as well as yeast, so I would need to be careful if I decided to buy this beer for myself. I really enjoyed the taste of it; It is extremely light and slightly sweet.

If you are an avid beer drinker, you may not like this beer, at least the Tread Lightly flavor. They do offer hoppier, heavier beers too so they can accomodate all.

I haven’t looked into pricing, but I have a feeling it’s a little steep. The chances of me actually buying this beer are fairly slim, BUT if I were to buy a GF beer, this would be the one I would choose because I got to sample it and I know I like it.

The next table over was the restaurant’s clam chowder. Being I’m not a huge fan of clam chowder to begin with, I wasn’t too crazy about it, but still, I tried it. You never know when the taste buds are going to change on you! I never give up on trying foods. I used to not like cake, now look at me. 😉

Next up was the dessert table full of GF chocolate chip cookies, brownies, and cornbread muffins.

I could have parked myself in front of that table for the remainder of the evening and been a happy girl. After all, we were the last group to go through and there were still mounds of desserts! But, I played it cool and stuck to one plate.

The had made cookies from two different chocolate chip cookie mixes; one was the French Meadow Bakery Mix, and I believe the other one was Bob’s Red Mill mix. One of them had a funky after-taste and because they weren’t labeled, I’m not sure which one it was. Oh well. I really enjoyed the brownies!

The next vendor over was from Daisy Blue which is an all-natural skin care line based out of Albert Lea, MN. They sell, soaps, lip balm, makeup, scented oils, lotions, and more. She sent me home with a lotion and hand soap sample and they both smell great!

The very last stop we made was the GF pasta bar. They had two brown rice pastas they were sampling with their homemade GF alfredo sauce. I used to LOVE alfredo sauce but I have grown out of it for some reason. Again, maybe because my brain connects the memory of my upset tummy from pasta alfredo from the past? Not sure. It tasted okay to me, but nothing I would order off of a restaurant menu.

The very last stop we had planned on making was to taste their GF chicken wings, but by the time we got over there they were all out. Not a huge loss to me because I’m not a huge wings fan (unless my mom makes them), but Dana was a little bummed.

At the end of the night, we were sent home with a bunch of free loot!

It was well worth the $6.00 we spent to get in. I had fun with it!

Although I’m not celiac and and not completely gluten intolerant, I know for certain I am gluten sensitive and finding brands that offer delicious GF products is something I am very excited about. No need to live a painful life when you know how to eliminate the culprits of the discomfort right?

Alright, we are officially caught up from the weekend! Now I can get on with the week. 🙂

Hi my friends! I don’t usually post on Sundays but I have had such an amazing last couple of days and I can’t wait to fill you in. Does the post title intrigue you?

On Friday I got dolled up after work for a friend’s wedding. I was so happy that the weather actually held up and ended up being beautiful and partly sunny when the evening rolled around.

My hair actually looks pretty long in that photo. It’s hard to believe I had about five inches chopped off of it! I’m starting to like the cut more and more.

On Saturday morning, Dana, Moose, and I hit the neighborhood for a five-mile run. This was our test run to determine if we were ready to run in a 10k next weekend. Well guess what? We passed our test. The run went pretty well and we have officially decided to run in a 10k next Saturday! The registration is complete so there is no turning back now.

Next on the agenda was a meet-up with Becky and Katie, a couple of my fellow blogger friends. We met at a local Caribou coffee where we sipped on our coffee, chatted about life, new adventures, and of course, our blogs. There is so much to know and learn about blogging and it is so incredibly nice to have friends to bounce ideas off of.

I have a few new projects I would like to work on with the blog this upcoming week. The girls definitely got the wheels spinning with some great ideas!

Our date continued at Patisserie 46 off of Grand in Minneapolis. They are well known for beautiful desserts, fresh bread and pastries, ice cream, but they also offer savory menu options like pizza, quiche, cheese plate, and paninis.

I pretty much freaked when I walked in this place. Cue the angelic music.

We all snapped photos, drooled over the decadent beauties, and contemplated our dessert decisions for what seemed like eternity.

I decided on the “Rory” which is caramel mousse, vanilla cream, sable breton (don’t ask me what that is), salted caramel, and pecan nougatine. Sounds pretty fancy, right?

It was a work of art…almost too pretty to eat. Almost.

I savored every bite of it’s decadence. It was creamy and caramely and just sooooo good. I also bought a peanut butter and chocolate chunk cookie home to share with Dana. It was pretty good, but not as good as the Rory.

The main reason we went to Patisserie 46 was to meet up with the wonderful Teresa, who is one of the owners of Famiglia Meschini wines. This family-owned company manages a vineyard in Mendoza, Argentina which is where Teresa’s husband, Eugenio is from. He grew up in a wine-making family, and his passion for wine only progressed over the years. Teresa is equally passionate. Eugenio, along with Teresa, their family and other extended family members, own and run this growing business.

Teresa brought four different wines for us to divide among ourselves and taste. She also mentioned getting together again in the future to do more of a complete taste testing. We were all about that idea! We were all excited to meet her, hear about the wine and her company, and of course, we were all happy to get free wine!

After our sugar rush, we parted ways…

I’m not one to have a drink very often, but when I do, it’s almost always a glass of red wine, so I made sure to take one of the reds home to try. The one I got was the Pinot Noir which is made from grapes from Chile (they work with another vineyard in Chile).

Dana and I had a quiet night on Saturday so we decided to crack open the bottle while we played an exciting game of Yahtzee. We have pretty crazy Saturday evenings. 🙂

We both enjoyed the Pinot Noir. It isn’t usually our first choice of reds (we usually go the cab sauv route or red zin), but this was a very pleasant, subtle, and smooth wine and we both liked it quite a bit.
