- 2 (15 ounce) cans black beans, rinsed and drained
- 1 cup bell peppers, diced
- ⅓ cup red onion, diced
- 1 green onion, diced
- 2 Tbsp. cilantro, chopped
- Sauce:
- juice of ½ of a lime
- juice from ½ of an orange
- 1 tsp. red wine vinegar
- salt and pepper
- In medium bowl combine beans, peppers, onions and cilantro.
- In a separate small bowl mix the sauce.
- Pour the sauce over the bean mixture and stir gently to combine.
- Serve cold as a salad or with corn tortilla chips.
