Chicken Marbella
 
Ingredients
  • 2 large chicken breast, cut into 10 large pieces
  • 2 garlic cloves, minced finely
  • 2 Tbsp dried oregano
  • ¼ cup red wine vinegar
  • 3 Tbsp olive oil
  • ½ cup prunes, quartered
  • ¼ cup dried apricots, halved
  • ½ cup large green olives, rough chopped
  • ¼ cup capers and some juice
  • 3 bay leaves
  • ¼ cup honey
  • ½ cup red wine
Instructions
  1. Preheat oven to 350 degrees F.
  2. Arrange chicken in a shallow baking pan; set aside.
  3. In a small bowl combine all remaining ingredients; mix well; pour over chicken.
  4. If time allows, let marinade in the fridge for a few hours, otherwise place in oven right away.
  5. Bake for 1 hour, basting chicken with juices frequently, until chicken is cooked through.
