Banana Muffins and Yogurt Bites

Happy day everybody!

The weather has finally cooled down around here and it is so pleasant again. I was getting a little tired of the 100° heat. I live in Minnesota, now come on I’m not used to that. It is in the mid-70’s right now and supposed to warm up to the 80’s or so which is just perfect considering we are going to a pool party today. Want to know the most exciting part? My brother is here all the way from Bogota, Colombia! I haven’t seen him since our wedding in October and I am psyched to see him!! YYYYYaaaayyyyy!

This morning, Dana and I made our way to the gym after sleeping in until 8:40 am. I couldn’t believe we slept in until then, we don’t ever do that. We must have needed it. Anyway, we warmed up with a mile run then hit the weights and cranked out triceps, shoulder, and chest work. Dana was my personal trainer today and he whooped my butt. My arms are already sore. I couldn’t take a picture without holding my arm with my other hand to stay steady. I’m a serious wuss. But hey, I strength trained today! I said I wanted to get back on that train, and although I may be a little weak right now, you have to start somewhere. I feel like I am starting over now that I am starting to get my energy back again. That’s okay though.

I have a large watermelon to cut up before the party today and a few other things I want to do, so I am going to try to whiz through the rest of this. Here goes a recap from yesterday!

Saturday Lunch

This is a sorry attempt at a photo of a banana with cashew butter. It was really tasty but the photo sure doesn’t present itself that way!

I also stuffed my face with a load of watermelon which again, I forgot to take a photo of it but you know what watermelon looks like.

Afternoon workout and snacks

In the afternoon, I made my way down to the treadmill and got a half hour walk in while watching The Doctors. I also weeded the garden in the back which is looking real good! I can’t wait for all of the fresh veggies soon to come.

I made myself a snack of yogurt with honey and cinnamon a little while later.

And whipped up some nummy little frozen treats for Dana and I.

Please welcome strawberry-banana yogurt bites.

I simply blended:

  • Homemade SCD yogurt (you could use whatever yogurt you prefer)
  • Strawberries (fresh or frozen)
  • 1 banana
  • Touch of honey (because the yogurt is slightly tart)

Once blended, I poured the smoothie mix into the star freezer molds and place in the freezer overnight.

Today I popped them out of the molds and taste-tested. They turned out perfectly sweet and are such a nice and healthy way to cool down in the heat of the summer. These are perfect for adults and kids alike. If you don’t have fancy freezer molds, you could simply use a mini muffin tin or an ice-cube tray.

So cute, right?!

Speaking of mini muffin tins and cuteness…a few days ago I gave you a little sneak peek to a muffin that I had made. Well, it’s sharing time. 🙂

I am working on making snacks for Dana and I that are quick and tasty, and that can hold us over for a little while. I searched around and found a recipe for SCD Banana Muffins from this site. However, knowing me, I adjusted the recipe slightly. I am so excited to share these little gems with you. I prepared them in mini muffin tins so they are perfectly snackable.

Mini Banana Muffins SCD-friendly (makes 2 dozen mini muffins)

Ingredients

  • 2 cups almond meal
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/8 tsp cloves
  • 2 medium overripe bananas,  mashed
  • 2 large eggs
  • 1 tsp vanilla
  • 1/2 tsp apple cider vinegar
  • 1/4 honey
Directions
  1. Preheat oven to 350°. Lightly grease 2-mini muffin tins with sunflower oil (or whatever you have on hand); set aside.
  2. In small bowl, combine almond meal, baking soda, salt, nutmeg, cinnamon, and cloves; mix well and set aside.
  3. In large mixing bowl, beat together bananas, eggs and vanilla.
  4. Add vinegar and honey and mix.
  5. Mix in dry ingredients until combined; do not overmix.
  6. Pour batter into prepared muffin tins and bake for 20 minutes, rotating the pans half-way through.
  7. Muffins are done when toothpick inserted in middle of muffin comes out clean and tops of muffins begin to feel firm. Remove from oven and enjoy!
I am loving these little guys just plain jane or with a little smear of cashew butter.
For Dinner…
We brought dinner over to the Greg and Sue’s (my in-laws) last night. We brought lean hamburgers seasoned with salt and pepper, SCD ketchup, butter lettuce to use as our burger “buns,” and asparagus to grill on the side. I topped my burger with legal cheddar cheese and a slather of mustard and loaded my plate with asparagus. I went back for seconds of the asparagus. What is it about grilling asparagus that makes it so absolutely delicious?! LOVE! Before we grilled the asparagus, we nuked them in the microwave for 4 minutes to make sure they was cooked enough and easier for me to digest.
This was OH so GOOD!

When we got home I started making another batch of homemade SCD yogurt because I ate up the first batch. Then I was led out back where there was a little excitement. Our neighbors just got a 4 year old golden retriever and they met for the first time last night. Moose was introduced to a new friend named Sadie. Moose goes crazy over golden retrievers; he absolutely adores them. Remember this photo from the dog park?

Ok, that may not have been a golden retriever, but close.

It was so sweet watching Moose and Sadie together. Sadie was a little apprehensive but she was also just introduced to a new home and is working on adjusting to a lot of changes. I give it 2 weeks and they will be BFF or lovers, one of the two.

Nutty ‘Naner Bread: WILD HARVEST Recipe Contest

Happy Independence Day everyone!

As mentioned a little while ago, I received a wonderful package of WILD HARVEST Organic products courtesy of WILD HARVEST and SUPERVALU INC. in conjunction with the Healthy Living Summit 2012.  SUPERVALU INC. provided these products to me for free and asked that I come up with a fun and healthy breakfast recipe which included three or more of their products provided.

As soon as I received my box of goodies, my brain started rolling at a mile a minute. I absolutely LOVE recipe creation and was super pumped to get started.

The WILD HARVEST ingredients I chose to include in my breakfast recipe are: WILD HARVEST Original Applesauce, Creamy Peanut Butter, and Cherry Vanilla Granola.

Here is what I came up with. I hope you like it!

Nutty ‘Naner Bread

Step 1: Preheat oven to 350°F. Use cooking spray to lightly coat one 9 x 5 inch bread loaf pan. Set aside.

Step 2. In mini food processor, process 3/4 cup WILD HARVEST Cherry Vanilla Granola into a course sand texture.

Step 3: In a small bowl, combine processed granola with 3/4 cup almond meal, 1/2 cup whole wheat flour, 1 teaspoon baking soda, and 1/2 teaspoon of salt. Mix to combine; set aside.

Step 4: In a large mixing bowl, beat together 1/4 cup granulated sugar with 1/4 cup WILD HARVEST applesauce.

Step 5: Add two eggs and 1 teaspoon of vanilla; beat well.

Step 6: Add 3 over-ripe mashed bananas; beat until smooth.

Step 7: In a small liquid measuring cup, measure 1/3 cup almond milk. Add 2 teaspoons of white vinegar to milk and mix.

Step 8: Alternate adding dry ingredients, then milk mixture to the batter, until both are incorporated into the batter; beat until well combined.

Step 9: Pour batter into prepared loaf pan and bake for 1 hour and 5-10 minutes. Baking time will vary so check bread at 1 hr and 5 minutes and test if it’s done by poking a toothpick through the center of the loaf. If it comes out clean, the bread is done. Remove from oven. Let cool slightly.

Step 10: Once bread has cooled, melt 1/4 cup WILD HARVEST creamy peanut butter in the microwave for 30 seconds.

Drizzle over bread. Scrape the bowl clean to get every last drop of the wonderful peanut butter onto that bread!

Step 11: Sprinkle the top with 1/3 cup WILD HARVEST Cherry Vanilla Granola.

Serve slightly warm or cooled to room temperature. Enjoy this nutritious and delicious Nutty ‘Naner Bread for breakfast with a side of fresh berries and a glass of low-fat milk or your favorite morning beverage.

Nutty ‘Naner Bread (Makes 1 loaf)

Prep time: 20 minutes; Bake time: 1 hour and 5-10 minutes

Ingredients

Bread:

  • 3/4 cup WILD HARVEST Cherry Vanilla Granola, coarsely ground
  • 3/4 cup almond meal (almond flour would work fine too)
  • 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup granulated sugar
  • 1/4 cup WILD HARVEST applesauce
  • 2 eggs
  • 1 tsp vanilla
  • 3 over-ripe bananas, mashed
  • 1/3 cup almond milk
  • 2 tsp white vinegar
Topping:
  • 1/4 cup WILD HARVEST creamy peanut butter
  • 1/4 cup WILD HARVEST Cherry Vanilla Granola (for topping)

Directions

  1. Preheat oven to 350°F. Use cooking spray to lightly coat one 9 x 5 inch bread loaf pan. Set aside.

  10. Once bread has cooled, melt WILD HARVEST creamy peanut butter in the microwave for 30 seconds. Drizzle over bread.
  11. Sprinkle the top with WILD HARVEST Cherry Vanilla Granola.

Serve slightly warm or cooled to room temperature. Enjoy this nutritious and delicious Nutty ‘Naner Bread for breakfast with a side of fresh berries and a glass of low-fat milk or your favorite morning beverage.

Not Quite a Warrior, More Like a Pansy

Hello there! Happy Sunday to all. I hope everyone is having a fabulous weekend. Mine has been busy, but a lot of fun.

Saturday Morning: Warrior Dash

It was Warrior Dash morning which meant I was going to have my typical pre-race meal: perfectly ripe banana with a light smear of Smart Balance peanut butter.

I gathered the first set of troops for a “I-just-got-out-of-bed-but-let’s-do-this” pre-race photo.

We made our way to Afton Alps and picked up some of our friends on the way. Parking cost $20 so we figured we would pack everyone in to one vehicle to cut the cost, and hey, we were going green too. The parking scene was an obstacle in itself–driving through farms, weaving around cones, riding over some seriously bumpy terrain; it was actually hysterical. Once we parked, we took a shuttle bus over to the race.

We arrived super early, which I love. We went and picked up our bib numbers, timing chips, t-shirts, and warrior headgear. We then had plenty of time to relax, pin our numbers on, use the facilities a couple of times, and snap some clean pre-race photos with our group.

Being that I have not been feeling my best lately, I was slightly nervous that this race wasn’t going to be a good idea. I become fatigued very easily, I feel weak, and my stamina isn’t where it could be, and mostly, I was afraid to be far from the restrooms. That’s the ugly truth. Not only that, I felt very sick the night before. I woke up Saturday morning feeling pretty good though, and mornings are usually better for me than night-time when there isn’t a whole lot of food being digested yet, so I decided to give it a go.

Off to the race we went. The first obstacle was a bunch of car tires tied up in a bunch, and you had to run through them kind of like you were playing football and knocking through everyone. I liked that one but that’s probably because I was the first one to run through and didn’t get knocked in the face by any of the swinging tires. 🙂

Let’s see the rest of the obstacles from what I remember:

  • Balance beam that slanted up down up down.
  • Climbing wall with uneven foot holdings and a slanted top which made it challenging to climb over.
  • Cargo net wall
  • Snow blowers set with water that basically blind you as you run through
  • Crawl under barbed wire on rocky grounds
  • Slightly slanted wall with rope to pull yourself up and over
  • Grassy steep hill and rope to pull yourself up
  • Hurdles and barbed wire so you had to go over a hurdle and then under a barbed wire, over a hurdle, under barbed wire, etc.
  • Water slide!
  • Jumping over fire twice
  • Mud pit
But the most challenging part of the race wasn’t the obstacles, it was BY FAR the insane amount of hills. In between the obstacles was 3 miles of “running” through the grassy, truly beautiful views of Afton Alps, but I would say (and I don’t think I’m exaggerating) that 60% of the running part was uphill. And I don’t mean little bunny hills, I mean crazy steep hills that even the most incredibly in-shape person would struggle to run up. My team walked most of the hills and even walking them was hard for me! I kept losing my breath and had one scary moment where I couldn’t catch my breath at all and felt like I was beginning to hyperventilate. This happened to me during the half marathon as well. I think what happens is when I begin to feel so short of breath, I begin to panic and the panic only makes the breathing more difficult. It is such a scary feeling though, not being able to catch your breath. The group I was with was so supportive and everyone kept cheering each other the entire way.
The race ends with the mud pit where you have to crawl on your elbows in 1-2 feet of wet mud under a barbed wire. This year they sprayed us with a hose while we crawled, which made it even more messy (but so fun!). Dana and I were very cliché thanks to me, and held muddy hands through the finish line.
We all finished in one piece. Kevin completely tore it up and finished probably 25 minutes before we did. Next year I tell ya, he is taking the prize. Seriously. (BTW the guy on the left in this photo is Stu, and he is Matt and Adam’s uncle and a friend of ours as well. He wasn’t in the previous photos).

After all the muddy shots, we headed to the rinse area where they had a snow-making machine shooting out a thick mist of water. It was very cold but felt good to get all the muck and dirt off! We then donated our shoes, dried off in the sun, and headed home.

I don’t know if I’m a true warrior. I’m more of a pansy, but I still finished the race. 🙂 Intestinally speaking, I was fine during the race, but I could tell my stamina wasn’t where it used to be. My body is fighting hard right now and I understand that, so just completing the race at all was a big accomplishment for me.

Wedding Reception

Dana, Kev, and I had a wedding reception to get to. We showered up, making sure to clean out the mud in the ears, and headed to my cousin Mike and Jess’ wedding reception. They got married in Mexico in March and are having their reception back home to celebrate with everyone. It was set up in a large outdoor shelter near a public lake. It was so nice to be outside; it was a little hot, but I kind of liked it. They had the reception catered with the great classic barbecue foods: burgers, brats, chicken, beans, watermelon, pasta salads, and lettuce salad. I didn’t snap a photo of my lunch but I had a few bites of chicken, a half a burger, and a huge lettuce salad with mustard.  Mike and Jess did a wonderful job planning for the reception. Thanks for a great time!

At this point in time, I was completely beat, but Dana and I had a few errands we needed to run. It started with what was going to be a quick trip to our nearby natural food store, but we ended up having to make a trip to Whole Foods, and Trader Joe’s in search of almond flour among other very particular items. If you’re looking for almond meal/flour, Trader Joe’s has the BEST deal. The other stores had the almond flour as well but it was about double the cost.

For dinner, I ate 1 1/2 leftover turkey burgers from Friday night with a side salad.

I think the burgers tasted even better the second time around!

The rest of the evening was spent with some food preparation.  Tomorrow’s post is going to be a big one. I am beginning a new way of eating, I don’t like the word diet so I am going to try and not call it that. It is going to heal my colitis, I know it is. I have already begun to feel better and I have only just started the process. I can’t wait to break it down for you, so check back tomorrow! I don’t mean to leave you high and dry, but there is a lot that goes into it, and I want to make sure I have adequate time to tell you everything I need to tell you. I have tomorrow off of work so it will be the perfect opportunity.

Sweet and Savory Burgers

Warriors, unite. It’s time for the Warrior Dash!

I am going to be tearing up hills, climbing over walls, crawling through mud, and running through the grassy course at Afton Alps today. I cannot wait to fill you in and hopefully share some good pictures with you.

Friday Breakfast

A classic of mine: banana and PB2.

Lunch 

I was at a conference for work, and they served an impressive taco bar. I didn’t take a photo unfortunately but I can tell ya it looked and tasted great. I loaded my plate with chicken, lettuce, cilantro, tomato, corn, black beans, onions, and salsa. For dessert I ate a small serving of sweet compote with blackberries, strawberries, and blueberries.

In the afternoon we ran a few errands and I munched on sugar snap peas and almonds. I am really anxious to tell you about the “Breaking the Vicious Cycle” book I mentioned to you yesterday. Melanie is going to be cleaning her gut, in a very healthy way. More to come so soon!

Dinner

Sweet and Savory Turkey Burgers (I didn’t measure exactly)—recipe idea from this site.

  • lean ground turkey*
  • 1 small apple peeled, cored and grated
  • 1/4 cup or less onion, grated
  • celery seed
  • dried sage
  • chives
  • black pepper
*You can substitute lean ground beef or ground chicken

I crunched on some watermelon before dinner. Note my fashionista outfit I’m sporting. You can usually find me in something of these sorts while I am home. I am all about the comfies.

I assembled the burgers, and Dana cooked them to perfection on the grill.

Such a great team. I plated my burger up with a small salad with olives and honey mustard, and two slices of cheddar cheese. Look, it’s a Christmas tree!

The rest of the night was spent getting ready for the Warrior Dash, painting my toe nails, and playing with the pooch.

Mashed Potato Add the Laughing Cow

Everyone do your happy Friday dance!

First things first. Since it’s Friday that means it’s time to check in on the very last week of the June Yoga Challenge hosted by the beautiful and talented Courtney at SweetToothSweetLife.

I am happy to report that I once again have met my goal of three yoga sessions a week.  Yoga On Demand has been great–I have been able to practice yoga in the comfort of my own living room at any hour of the day.

I began the challenge one week late into June, but I can honestly say that in the three weeks that I have been partaking in the yoga, I have improved my flexibility and have learned how to incorporate breathing techniques throughout my day if I begin to feel stressed. I also feel like my arms are beginning to tone up a bit from all of the planks and downward dogs.

Although the official June Yoga Challenge is over, I will absolutely continue to practice yoga, and hopefully move from a beginner status, to a more intermediate yogi. Hopefully someday I will be able to master the crow pose! Thank you, Courtney for such a great opportunity and for inspiring me to get my yoga on.

Thursday Breakfast

A piece of spelt bread toast with cinnamon honey PB2 and banana slices.

Lunch

Lunch included a potato which I cooked in the mini crockpot on low for about 4 hours with 1-1.5 cups of water (prepared on Monday). Once it was done cooking, I peeled the potato…

And whipped the potato with a small amount of chicken broth.

I then mixed in one light swiss laughing cow wedge, and added salt and pepper to taste.

I packed it up in a nice little tupperware container and brought it with me to work, warmed it in the microwave, and had a quick and nummy lunch. There is nothing to it really. Homemade mashed potatoes are well worth the small effort. I really enjoyed adding the Laughing Cow wedge into the potatoes. It gave a very subtle creamy cheesy taste to the potato.

If you don’t want to use the crock pot method for cooking your potato, you can always bake your potato in the oven, or for an even speedier cooking method, poke holes in your clean potato, and cook in the microwave for about 5 minutes, turning halfway through (cooking time varies depending on the size of your potato).

I also had some super juicy watermelon with lunch.

Dinner

Your eyes aren’t fooling you. This is a veggie-packed salad. I am taking a different approach to my colitis and only time will tell how my body reacts. This dish is full of mixed greens (kale, spinach, and other dark greens), broccoli tops, mushrooms, avocado, olives, carrots, Morningstar’s Griller Chik’n Burger, and Newman’s Own Lite Honey Mustard.

Welcome back greenery. You are lovely and I have missed you so. This was my first time eating Morningstars Griller’s Chik’n which is a vegetarian chicken burger. Each burger is 80 calories, 3 grams of fat, 350 mg sodium, and packs 9 grams of protein. I prepared the burgers by placing them in a sauté pan on the stove top, and cooking on each side so that both sides crisp up and the burger is heated through.

The taste of this burger was great! I think they tasted like real grilled chicken. It is a nice substitute to meat every once and a while. I love Morningstar veggie products. They do a great job.

Etc.

Last night I started reading the book, “Breaking the Vicious Cycle” by Elaine Gottschall. It is all about treating intestinal problems including Ulcerative Colitis, through the diet.

The book focuses on scientific research which proves that individuals with intestinal distress can often benefit from a specific carbohydrate diet. I am only about 20 pages in but I am very curious about this diet and am anxious to read more. I’ll keep you posted on what I find and tell you more about the book later.

I took a rest day yesterday on the workout scene. I will probably take another one today. Tomorrow is the Warrior Dash! For those of you unfamiliar with the Warrior Dash, it is a 5k run combined with obstacles throughout. The very end of the race involves crawling through 2 feet of mud. It’s a beautiful site.

Peanut Butter All Day

Yesterday I decided to take a break from the smoothies. I don’t know if my body was reacting poorly to the weekend of fun and not eating normally, or if it was reacting because I had two smoothies on Sunday. One way or the other, it wasn’t very happy. Since I had to be at work yesterday, I thought it would be a good idea to stick with the basics.

Delicious basics. Cream of Wheat with cinnamon, banana, and stevia in an almost empty peanut butter jar. The hot cereal makes the peanut butter melt off the sides. It is so so good. I scraped this bad boy clean.

The protein, fat, and carb combo did a great job of holding me over until lunch time. At lunch I came home and made myself a PB2 banana sandwich and served it on possibly the cutest plate I have ever laid my eyes on. Target boutique really knows how to make me happy. 😉 This plate was $1.79 I think; well worth it. I have another one to show you soon too!

I also ate some pretzels and cheesy crackers with hummus and a piece of dark chocolate. Then back to work. After work I headed straight to the gym even though all I wanted to do was lay outside on the deck under the beautiful sun. I brought an issue of Fitness magazine and read it from front to back while movin’ it on the elliptical. It felt great to move yet I kept it a fairly relaxing workout. I was still sweating through it! I think I have decided that Fitness magazine is currently my favorite magazine. I love reading all of their recipe ideas, workouts, and tips on healthy living.

Anyway, I headed home to hang out with the boyeeze. On the menu for dinner: lettuce wraps with pulled chicken, apple, avocado, and Newman’s Own Lite Honey Mustard.

I loved all of the different textures and the sweetness from the apple and honey mustard with the slightly salty chicken. After the lettuce wraps I got into the peanut butter again. Yup, you read it right, peanut butter for the third time, this time with pretzels (Hales I thought of you while snacking on this one). I just couldn’t keep my paws off the peanut butter yesterday. And since I’m being totally honest, I’ll go ahead and tell you I also had a few bites of rainbow sherbet and a lemon cookie.

After dinner I still had quite a bit of energy to burn, so made my way down to the treadmill and walked my way through the Bachelorette. Well, part of it at least. I am such a huge Sean fan still. I am really hoping that Emily falls for him and they can live happily ever after.

Once again I got roped into watching this season. They always get me somehow.

Tilapia Fish Sticks

Friday is such a wonderful day. I love Friday. But first, we have to recap Thursday.

The day began with a warm bowl of Cream of Wheat with cinnamon, brown sugar, and PB2.

For lunch, more peanut butter, but the real stuff this time. A piece of spelt toast with natural peanut butter and banana. I also ate some watermelon and insanely addicting Barbecue Pop Chips.

After work, Dana, Moose and I hit the pavement for a long walk around the neighborhood. The weather was absolutely perfect yesterday and I was so grateful we were able to get out and enjoy it at least for a little while. We cruised for about 3 miles.

Dinner was a fun one. I must be in a “dipper” food type of mood this week considering Wednesday I made Italian dunkers, and last night I made….tilapia fish sticks!

Assembly Line Preparation (in this order)

  • Plate: Cut two defrosted tilapia filets into 1 inch strips, cutting with the lines of the filet. Season the fish with cracked black pepper.
  • Bowl: In a wide bowl pour about 1 1/2 cups egg whites.
  • Plate: Pour a heaping pile of almond flour, salt, and pepper. **
  • Baking pan: Spray with non-stick cooking spray
**Notes: If you like a little kick you could add a pinch of cayenne to the almond flour. If you don’t have almond flour, you could use breadcrumbs or cracker crumbs instead. I picked up a bag of almond flour at Trader Joe’s and this was my first time using it. Almond flour is completely gluten-free; the only ingredient is almonds. It also packs 7 grams of protein and 3 grams of fiber per 1/4 cup. I am anxious to use it in baking in the future.

Assemble:

Dip fish sticks into egg whites.

Roll and cover in almond flour.

Place on prepared pan. Once all of the filets are on the pan, lightly spray the tops with non-stick cooking spray.


We had plans to grill these bad boys outside but our plans were halted when we realized we ran out of propane. Hence the reason you see the fish filets on our outdoor grill pan versus and indoor pan. We moved the process indoors to the oven but I didn’t feel like dirtying up another pan so we left it on the other pan.

In a preheated 450° oven, bake for 12 minutes, turning once. Finish by broiling for 3-5 minutes until the fish sticks begin to crisp (keep an eye on them!). Serve with your favorite dipping sauce. In my case, ketchup.

These reminded me of childhood in such a huge way. They are perfect for adults and kids alike. You feel like a kid when you eat them. It’s wonderful. They are slightly crunchy on the outside and tender on the inside. They are a very healthy alternative to frozen fish sticks!

Now, back to Friday. It’s that time to check in on the June Yoga Challenge. Just a reminder to you all that my goal is to complete three yoga sessions per week. Time and intensity do not matter in my challenge, only completion of the sessions.

The session from this morning was by far the most challenging to me. I am still working at beginner level but am hoping to step-it-up to intermediate in the future!

I am loving yoga more and more each day I practice. I am continuing to notice that I am able to better control my stress now that I have added yoga into my routine. If my day is becoming stressful, I will remind myself to breath and slow down. I still have a LONG ways to go on increasing my flexibility, but I have already noticed a slight difference and it’s only been a short while. I can’t wait for another week!

Happy Friday to you all. I have two special guests coming to stay with me this weekend, my brother Scott and his girlfriend Nicole (our Boundary Water tour guides). I have to decide what to make them for breakfast tomorrow morning. I’m off to go brainstorm, run errands, and get some stuff down around the house.

Pasta Bolognese Per Request

Hi friends! I hope everyone is having a good Monday so far…

It’s time to recap a super awesome Sunday that was spent with my husband and the dog. It started with BOGO coffees at Caribou. I stuck with a decaf coffee with sugar-free hazelnut (num) and Dana went for the Milk Chocolate Mocha with a shot or two of espresso.

Let the Father’s Day fun begin! Today was all about the hubby. Moose even made sure to get his dad a sweet card for Father’s Day. How thoughtful, right?

For breakfast I made myself a pb banana sandwich (I ate half of it before remembering to snap a photo). I ate my banana ‘wich and sipped on my coffee while we cut coupons.

Once again, the coupons were completely lame this week. We cut two measly coupons. TWO. And they were for household type things so they weren’t even exciting.

Next, we hit the Sunday usuals: Target and Costco. We stocked up on some good eats and even bought Mooser a new chicken. His last one had to be tossed due to a terrible stench that really raunched up his breath each time he played with it. Gross.

We got a few things done around the house, I completed a relaxing yoga session, and then I made Dana a special Father’s Day sandwich.

This beautiful creation is made up of:

  • Two pieces of whole wheat bread
  • 1 slice of lower-sodium turkey breast
  • 1 slice cheddar cheese
  • Sliced tomato sprinkled with onion powder and pepper
  • Mustard
  • 1 drippy egg.

All grilled to perfection with love.

I LOVE making special meals for the ones I love.

In the afternoon, we had to run a few more errands which included plans to take the pooch out for a walk around the lake. Our plans were hindered when the clouds opened up and mother nature watered our grass from 1:00-5:00 pm. I wasn’t sure if it was going to let up, so I decided to head down to our treadmill to get a little walk in just in case. I walked for 35 minutes while watching The Blind Side. Such a great movie.

Towards the end of my workout, the skies had cleared up and Moose really wanted to take his dad out for a Father’s Day walk :wink:, so we headed out. It had cooled off quite a bit after the rain and the sun was even peeking through. It was a perfect evening walk with my guys.

Since today was all about the dads, I told Dana he could have whatever he wanted for dinner. His decision: Pasta Bolognese. My version of course.

I started by sautéing 1 cup diced yellow onion, 2 minced garlic cloves, and 1 cup of chopped mushrooms in a light amount of garlic infused olive oil. After about 3 minutes, I added a jar of No-Added Sugar Ragu, added a shake of garlic powder, basil, and oregano. I gave this a stir, covered, and let simmer while I prepared the rest of the meal.

In a separate pan, I started browning up a package of lean ground chicken and began boiling my water for the pasta. Once the meat was browned, I sprinkled it with oregano and garlic powder. I like to flavor each part of the dish when I can. I added the meat to the sauce, then finished the sauce by adding about 3/4 cup of chopped green olives.

Once the pasta was finished cooking to al dente, I drained it and served up two heaping plates full of pasta and Bolognese sauce and topped with parmesan cheese.

Great decision, honey.

After dinner, we just had to have dessert because it was Father’s Day after all. So what did we decide to do? Head to the Frozen Yogurt shop down the road of course. Jeez louise this is the third Sunday in a row now that we have done this. We are getting a lot better at controlling our frozen yogurt pour and limiting the toppings at least. Last night we spent $7.00 between the two of us which was our cheapest fro-yo purchase yet.

Last night I chose non-dairy, non-fat Valencia Orange Sorbet mixed with the tiniest bit of sugar-free vanilla fro-yo (to get the orange creamsicle effect). I topped it with gummies and was extremely happy with this combo. You are probably aware by now that I usually opt for the chocolately, rich toppings when it comes to my fro-yo and ice cream, but I am trying to cool it on the dairy, and since the only sorbet flavor option they had last night was orange, I didn’t think topping it with cookie dough and brownie pieces sounded very appetizing. The gummies were just perfect.

Any time I eat gummies I am reminded of my childhood, and my college years. Growing up we had gummies as a special treat, and through my college years, my girlies and I would buy a huge bag of mixed gummies from the grocery store when we were having a girl’s night in. Sweet memories.

What a great Father’s Day weekend with my papa on Saturday, and Dana on Sunday. We will be celebrating Father’s Day with Dana’s parents next weekend. Let the fun continue.

I keep forgetting to tell you all, that last week I DID reach my June Yoga Challenge weekly goal. When I posted on Friday I had only completed two yoga sessions and my goal is three per week. Well, you better believe that after I posted on Friday I hit up the yoga. I am really loving it and am feeling pretty sore from it as well. Work it baby!

I still need to share that awesome Lemon Blueberry Bar recipe with you all that I made on Saturday. I didn’t forget! It’s still comin. Have a great Monday.

My Day of Small Meals

I have officially taken on the June Yoga Challenge along with Courtney at SweetToothSweetLife and other lovely readers and bloggers.

Basically, the challenge is to incorporate more yoga into your life. You set your own goal as to how you wish to do so. Courtney’s challenge was to incorporate three yoga sessions into her weekly routine. It doesn’t matter how long the session, or at what difficulty, just as long as you do it keeping your own personal goal in mind. Or, you can create a different type of yoga-related challenge, such as mastering a new pose or trying out a new yoga studio for the first time. It’s up to you.

On Fridays, we all check in with our weekly yoga status updates and motivate eachother through those weekly updates as well as through twitter. It’s always more encouraging and motivating working out with others, and this is a fun and different way to do it!

At first I was thinking my goal would be to incorporate one yoga session into my weekly routine, but considering I have already tackled two yoga workouts in the past two days, I figured I could create a heftier goal. I am going to also have a goal of completing three yoga sessions through the week. I am finding I am enjoying this workout first thing in the morning; it is very relaxing and allows me to mentally and physically relax as I begin my day.

The other part of my challenge is working around this big dude who likes to sit directly next to me on the carpet during yoga time.

And inevitably he just HAS to go outside during this time.

He keeps me smiling at least. 🙂

My brain and body could really use the stress relief from yoga. Thank you Courtney for creating this and motivating me to get yoga’ing! It’s always a good idea to set fitness goals for yourself, and I look forward to continuing this challenge.

Food Recap from Yesterday

I had a day full of small meals and snacks versus three bigger meals and small snacks in between. I prefer to eat this way, but my work situation doesn’t really allow for this type of structure. Well, our schedule was a little different yesterday and it just so happened that it did work out for me. So, here it goes.

Breakfast: Cream of Wheat with cinnamon, brown sugar, and bananas with a cup o’ decaf coffee with cream and stevia on the side.

Snack: the rest of the banana from breakfast with PB2

Snack #2: Unphotographed tuna noodle salad at work

Lunch: Lower-sodium turkey breast, hummus, and avocado wrap

A spoonful (or two) of peanut butter…

Dinner: Cooked spinach, pureed black beans, cheddar cheese, and avocado with salt and onion powder

Lastly, pretzels with honey mustard dipping sauce, and then I made myself I small batch of PB2 with honey to finish’er off!

I love these kinds of days! I get to eat all day long. I was extra hungry yesterday too so this worked out perfectly.

I slept much better last night by the way and am very thankful. I had a rough night of sleep the following night and was hoping it wasn’t going to be a reoccurring theme.

Question of the Day: Which do you prefer? Small meals and snacks throughout the day/grazing or 3 larger meals?

I prefer grazing throughout the day but like I mentioned, work doesn’t always make that possible. I feel like my energy level is so much greater when I am eating smaller meals throughout the day and I am able to regulate my blood sugars more evenly versus many highs and lows which makes for a happier me overall.

A Quiet Date Night

Happy weekend!

Recap from yesterday…

My day started off with a follow up appointment with the gastroenterologist regarding my current colitis flare. To give you a quick update, I’m still not feeling very well. The doc is going to amp up the dosage of my medication and has recommended I stick to a low-fiber diet as best as I can, reminding me that some small salads here and there will probably be fine, just don’t go crazy. I told her I had tried to stick to a very low-fiber, low-residue diet, but couldn’t stick with it very long because my body was craving greens so bad, and I wasn’t feeling well because of it. I am going to continue to experiment with my diet, but have decided to only allow myself to experiment at night or dinner time, so that if I do have a negative reaction, I won’t be stuck at work with it.

Anyway, I am continuing my research on different allowable foods and plan to get creative. I got busy in the kitchen later and whipped up (literally) a batch of roasted butternut squash soup for my lunches or dinners next week. People with U.C. can often tolerate cooked veggies; squash, carrots, sweet potato, but are continued to be advised to stay away from cruciferous types of vegetables such as broccoli, cauliflower, because they often cause GI distress. I will be posting this recipe soon! It turned out fantastic.

We made a stop at Trader Joe’s to pick up a few things since we were in the area. I L.O.V.E. LOVE Trader Joe’s. We especially love their Three Buck Chuck.

For lunch…I had some snacks and then made myself one of my most favorite lunches of all time. Spelt bread in this case, with peanut butter, honey and bananas. In my younger years, whenever I got sick with flare-ups, my mom would buy me spelt bread and I seemed to tolerate it well. I thought I would give it a go again.

So beautiful. I actually used PB2 on this one today because I am needing to watch my fat intake right now. Since PB2 only has 1.5 grams of fat per serving, it was a good decision today. I could probably eat this lunch every day and never ever get sick of it. Num.

I made my way to the gym but really wasn’t feeling the best so just hit the elliptical for an easy pace and easy resistance for a half hour.

Dinner and quiet date night….

For dinner I pureed a can of rinsed and drained pinto beans with garlic powder, onion powder, cumin, salt, pepper, and a touch of chicken broth. This was an experimental dinner btw to see if I can handle brown beans in the pureed form. We cooked up some white rice, and chopped up tomato, cilantro, and avocado, and piled it on a plate. We melted cheddar cheese on the deal and called it one quick and easy dinner.

Whoops, forgot the cheese.

There it is. How could I forget the cheese?!

I was hoping that we had mild salsa on hand to top off the dish but we didn’t, so I ended up seasoning my dish with a little dash of salt and a splash of lemon juice. I didn’t miss the salsa at all. I actually think I prefer the lemon taste (would have used lime if we had it and that would have been great too!).

Dana and I had a quiet date night planned for last night. We waited to finalize any date plans until I knew how I was feeling and since I wasn’t feeling great, we decided to make ourselves a healthy dinner, rent a movie, and stay home.

A while back I read ‘The Help’ and have wanted to see the movie ever since. Well, it just so happened redbox had it for us.

We spent the evening cuddled on the couch in our cozies watching ‘The Help.’ That is my idea of a perfect date night.
