EAT! Getting Summer-y Around Here.

If you’re hungry, I apologize in advance because this post is going to make you even more hungry. There have been some serious delicious eats happening around here lately and it’s about time I caught you up on some of them.

No need to get too wordy. Let me show you what I’ve been eating lately!

Tilapia, dirty rice, and broccoli made by mi madre, so obviously it just tastes better!

Almond butter and apricot jam toast.

Grilled veggie burgers in a gluten-free tortilla, a lazy attempt at coleslaw, and baked beans. It’s feeling summery around here and you can tell by my meals!

Panera’s poppyseed salad. You know the temperatures are warming up when Panera gets this on their menu. It is a must for me to get at least once a summer.

Broccoli cheese soup from Panera. 🙂

Apple with peanut butter. There may have been a couple of mini chocolate chips added to this snack.

GF waffle with pepper jack cheese, mustard and a fried egg. Probably my favorite quick go-to these days. It’s easy, fast, it’s salty and spicy and packs some nice protein with the egg and the cheese!

Beef taco salad!

What do you think? Not too shabby, right? Are you hungry yet?

Thanks Jenn for hosting the WIAW!

I’m always looking for new quick meal ideas. Any go-to’s for you all lately?

We’re Talking Sunshine

Minnesota got snowed on yesterday if you haven’t yet heard. This isn’t out of the ordinary for April seeing as we got snow in MAY last year, it’s just never welcomed. I can’t complain a whole lot because where I live we just got a dusting of snow, but the northerners got up to a foot! Yikes!

I am looking forward to this weekend because it is supposed creep back up into the 60’s. I’m ready for the summer dresses and flip-flops!

So I was thinking, in lieu of Throwback Thursday, and due to the fact that I am dreaming of warm and sunny weather, I am putting together a post of some of warm weather memories. Let them take you to a warm sunny place in your head (if you’re in the cold climate like I am still) and dream of days soon ahead full of sunshine. Some are from last summer, some are from warm vacations.

Warm sand between my toes, refreshing clear blue water, stand-up paddle boards, and lounge chairs.

Miami!

Bienvenido a Miami! I always find it so amazing that I can take a three-hour plane ride which brings me to such warmth and sunshine. I love Miami!

Eating desserts outside and getting free wine with two of my favorite blends!

Camping and hiking

I have a love/dislike relationship with camping. I love it when the weather is perfect, I dislike it when it monsoons on us and a moat forms around our tent.

Spring weather will be here soon!

What are you most excited to do in the warm weather?

I can’t wait for summer because…

Happy first day of spring! This one is always tough for me because it never actually looks like the first day of spring around here. The 3-4 inches of snow we got two days ago really put a damper on the thought. BUT….I do know nicer weather is on the way and for that I am extremely excited.

I’m joining in on a fun link-up that I found from Running Bun who got it from Helene in Between.

The subject: I can’t wait for summer because…

1. We can grill outside and actually hang out outside while we grill.

2. We don’t need to wear ten layers when going outside.

3. Warm sunshine on my skin and Vitamin D!

4. Walks.

5. Hanging out at the lakes. I didn’t get to do much of this last summer but I think this summer will be different!
