Happy Day to the Men

Happy Father’s Day to dads of all kinds…Granddads, dads with grown kids, young kids, expecting daddies, puppy dads, cat dads. How about ‘Happy Day to the Men.’ I like that. They sure have to put up with a lot from us females, and they all deserve a day to celebrate.

Yesterday we spent the afternoon with my family to celebrate Father’s Day with my wonderful dad who makes me laugh constantly…

Knows how to seriously man the grill…

Knows how to present a good-looking plate and loves himself a big juicy steak…

Who cooks a mean marinated chicken breast for his not-as-much-red-meat-lovin’ daughter and wife…

And always has room for dessert (just like his daughter). Lemon Blueberry Bar recipe coming soon!

We spent the evening relaxing, opening gifts, eating a delicious meal put on by mom and dad, and cuddling with our favorite little girl.

Gosh, just a little love for that doggy, huh?

Happy Father’s Day to my incredible papa. Thanks for always finding the corniest, funniest jokes to cheer me up with when I’m feeling down and for all you do for me and the family. I love you so so much. Love, your baby girl.

Unattractive Food Photos

Happy Tuesday friends.

I’m going to start off by saying that yesterday’s day of eats was flat-out U.G.L.Y. I ain’t got no alibi, it’s ugly, yea yea it’s ugly.

To begin with the series of unattractive food photos, we’ll begin at breakfast. I decided to try something new for breakfast: sweet potato with peanut butter. I have been loving this combo for lunch so I figure hey why not try it in the morning? As much as I enjoy my boring old bowl of Cream of Wheat each morning, I thought it would be fun for all of us if I jazzed it up a bit. Enter: the ugliest food photo I think I have ever taken.

The verdict?  I don’t know if it was just the particular day that I wasn’t feeling this combo for breakfast, or if the texture was too much for me to handle in the morning, or what it was; all I know is that I wasn’t havin it. Not one bit. I ate a few bites before pitching it. That was me trying to eat outside the box in the morning. Outside the cereal box that is.

Speaking of cereal box, on to breakfast #2. After my first failed breakfast attempt, I wasn’t feeling very motivated to get creative, plus I was running out of time before work, so I poured myself a bowl of Rice Chex with almond milk and a little sugar. Very boring but simple and tasty, and just what I wanted.

I’m not giving up on the whole sweet potato in the morning bit just yet, but I will go another route next time; maybe puree them and add them into pancakes? We’ll see.

I met up with my mama and miss Abbie for lunch yesterday for a picnic during my break. I packed a Greek inspired low-fiber dish consisting of white rice, chicken, hummus, feta, and avocado. I sprinkled the whole thing with lemon juice and a touch of salt.

Absolutely delicious. I also ate a banana and some nummy Aussie licorice bites mom brought for dessert. I loved spending my lunch break with mom. We ate outside at a nearby park and enjoyed the sun and a cool breeze. I wish we could do that more often!

I mentioned yesterday that I was wanting and needing to get back on the workout wagon. It’s been a little difficult for me lately since I haven’t been feeling very well due to the colitis, and I am finding that lower impact exercises like yoga, walking, and the elliptical are agreeing with me better than higher impact activities like long runs. If I do want to run, it has to be right away in the morning when I don’t have much food in my system yet, and this just hasn’t been happening lately. My body has been favoring sleep and I have really been trying to listen to my body. If that is what it needs right now to heal me faster, that is what it is going to get. I do want to keep moving and I will keep moving, I will just be switching up my activities a bit for now.

With that being said, I headed to the gym after work. I started off with 20 minutes on the elliptical, followed by 10 minutes on the stair stepper, and finish off with 10 minutes walking at an incline on the treadmill. I didn’t have any new magazines to read so instead I watched The Real Housewives of Orange County. Some chick was getting married and it kept me entertained for the duration of the workouts. I finished off with my favorite core move on the bosou ball. I really need to get back on my game in the strength training department too. I so easily fall off the wagon on this one.

I headed home to the boys and began contemplating dinner.  While I pondered, I snacked on Special K Sea Salt Cracker Chips with hummus.

When planning meals, I often try and decide on the protein source first, and then build off of that. Last night our main protein source was going to be eggs.

In a pan on the stove top, I sautéed diced mushrooms, added cooked spinach,  and low-sodium deli turkey. In a separate bowl I whisked together two eggs and about 1/2 cup egg whites for Dana and I. Once the mix-ins were finished sautéeing, I poured the eggs onto the pan and began the scramble. During the last minute of cooking I sprinkled in about 1/4 cup of shredded cheddar cheese until it was gooey and melted into the eggs.

I plated them up and sprinkled the dish with salt and pepper and a little squirt of ketchup and enjoyed a proton packed dinner that came together in just minutes.

I told ya it was an ugly day of eats. I guess this one isn’t too bad. Besides my first shot at breakfast, the meals were all very tasty which goes to show that you can’t judge a book by it’s cover. I especially enjoyed our scrambled egg dinner.

The rest of the evening was spent watching the drama unfold on the bachelorette.

I loved that Emily told one of the guys off after finding out he was referring to her daughter as baggage and saying some other cruel things about her. What a jerk! He was a nasty one. I’m glad he’s gone. My favorite is still Sean; has been since the beginning. He is sweet, smart, kind, and very handsome. If it were up to me, Emily would choose him. Why do I get sucked in to watching this show every season? Why?

 Later I needed a little snack so I made myself a small bowl of Fage Non-fat Greek yogurt with frozen blueberries and honey.

I also stumbled upon two Milano cookie melts that I saved from an airplane snack during one of our last vacations. For being a packaged cookie, they were pretty darn good. I still prefer homemade of course.

FroYo Sunday and Frittata Recipe

It’s Monday, my most favorite day of the week. You all know I’m kidding, but I will do my best to stay positive if you promise to try and do the same. I am meeting my mom and possibly dad for lunch during my break from work, so that is something fun I get to look forward to!

Yesterday…

Dana and I carried out our normal Sunday morning routine which consisted of coupon cutting while eating breakfast, and then going grocery shopping. We already had quite a few groceries but still needed a few things like PEANUT BUTTER!

We then got busy on tackling two of the worst house cleaning jobs: bathroom and kitchen. We decided we’d spruce up and de-clutter both of these rooms. And much to my relief, I came across unclutterer, and got some ideas on how to begin. We divided and conquered with Dana taking the bathroom (bless is heart) and I took the kitchen. We have stainless steel appliances in the kitchen and although they are beautiful to look at, they are a pain in the neck to keep clean. But nevertheless, they are clean right now, so we will enjoy it for a short while. It feels real good to have both of those rooms cleaned.

Mid-morning, I snacked on a bunch of Special K Sea Salt Cracker Chips and then I made myself a PB2 and jelly open face sandwich on spelt bread.

Then we were out the door to visit with mom and dad. I also snacked on some chips there, but that time it was Harvest Cheddar Sun Chips. After mom and dad’s we headed to Dana’s parent’s place to visit over there for a while, and then we made our way home.

I was starving when we got home so I made myself a light (early) dinner at 4:50. Lower sodium turkey deli meat wrapped around mozzarella string cheese.

Plus some more Special K chips (I am LOVING chips today apparently) and hummus.

I ended with a bowl of cooked carrots with a little sugar.

At least I thought that was the end, but no. Dana and I made our way to a local frozen yogurt shop for a special Sunday treat. Come to think of it, we had frozen yogurt last Sunday too. This could be a nice little tradition we have started. 🙂 FroYo Sunday.

I chose cookie monster frozen yogurt with brownie pieces, cookie dough, snickers, sprinkles, and whipped cream. What a great way to end the weekend.

I had a few requests for the frittata recipe that I had made the other day with my first frittata ever. I thought I would share it with everybody in case anyone else was interested. I used this recipe as a guide since it was my first time. I wanted to make sure I got the proportions and baking time right and such. I did make some adjustments to the recipe and put my own spin on it. I can now consider it my frittata recipe.

Melanie’s First Frittata: Serves 2-4 people

Ingredients

  • 1 Tbsp olive oil
  • 1/2 cup yellow onion, diced
  • 2 cups mushrooms, sliced
  • 1-10 oz package frozen spinach, thawed and drained well
  • 2 large eggs
  • 4 large egg whites
  • 1 Tbsp nutritional yeast
  • 1/4 cup cheddar cheese, shredded
  • Salt and Pepper
  • Cilantro or other fresh herbs (optional)

Directions

  1. Preheat oven to 350°
  2. In an oven-safe skillet, heat olive oil over medium heat on the stove top
  3. Add onion; allow to cook down for 2 minutes
  4. Add mushrooms; allow to cook for 1 minute; lastly add spinach
  5. In a medium bowl, combine eggs, egg whites, nutritional yeast, and salt and pepper; mix well
  6. Remove skillet from heat and add spinach mixture into egg bowl
  7. Pour entire mixture back into skillet, sprinkle with cheese, and place in oven; bake for 25 minutes*
  8. Remove frittata from pan carefully and cut into 4 triangles. Garnish with fresh herbs and salsa or your favorite egg accompaniment (I love ketchup) and enjoy

*Baking time may vary. Keep an eye on the skillet and watch for melty cheese and a firm egg bake.

Dana and I finished this off ourselves for dinner, but it could be split between four people and served with a big fruit salad and some fresh-baked whole grain rolls for a more well-rounded meal. I enjoyed making my first ever frittata. It was actually extremely easy and turned out great.

Baby Love

Hello world! How was everyone’s Saturday? Mine was seriously awesome.

My morning started out with a bowl of my very standard cinnamon Cream of Wheat with stevia and a little brown sugar, but to switch it up a bit I added some leftover white rice which added a different texture to the dish. I also added a few bites of banana.

After breakfast we headed to the city of our alma mater, Mankato, to visit a good friend of mine who recently had a baby girl. Their beautiful baby was born less than two weeks ago and she is such a doll. Dana and I had such a good time visiting with our friends and oogling over their precious miracle.

I love babies!

Since we were in Mankato, we just HAD to go visit our old campus. We headed over to Minnesota State University, Mankato to cruise the campus, notice renovations and reminisce.

I asked Dana to snap a picture of me in front of the library since I spent a whole lot of time there in my day (nerd-alert). Dana on the contrary, said he hardly spent any time in there. The difference between us though is that I need complete silence when I study, whereas he prefers noise whether in the form of television or other people.

It was good to be back. We also drove by our old houses, apartments, favorite bars and hangouts, and the Mankato Mall. Seriously so many memories packed into one city.

While we cruised, we ate our packed lunches: Peanut butter and grape jelly, veggie chips, and a banana.

On our way home we stopped at the Medford outlet mall so I could hit up the Nike Outlet Store since it was on our way home. I really like Nike workout apparel. They have such fun colors and their clothes are very comfortable which is the most important thing I look for when buying workout clothes. First, comfort, second for cuteness. I controlled myself and just bought one pair of workout shorts. These particular pair are a brownish gray color with pink and white details on the sides. Cute and comfy and at discount price. Score!

When we got home, we pumped some air into our bike tires and biked to the store to return our redbox movie from last night. Then it was time to give some major attention to our large furry baby. Into the car we went. Destination dog park.

Look at the excitement in his eyes peering over the back seat.

He went crazy sniffing every square inch of the dog park, making sure to leave his scents along the way.

He found the other dogs and immediately tried making friends with them all. Unfortunately for Moose, many of the dogs steer the other way when they see him coming. Poor guy. Is it because he’s so big?

It’s okay, he still had plenty of fun.

He did manage to steal the heart of this young lady.

But it was short lived. We wore Mooser out at the dog park. We loaded him back up in the car and headed home.

It was a warm one around here yesterday at about 92° or so, but there was a nice breeze which made for a really pleasant day. We dragged out the doggie pool and filled her up. Talk about spoiling this guy today. If only he liked the water. We had to pretty much force him in the water for this picture. He warmed up to it after a while, probably after the water warmed up a bit.

Such a big baby, but I love him.

For dinner we fired up the grill to cook up a random combo of shrimp, mushrooms, and green beans. We seasoned simply with salt and pepper and let the grill add the rest of the flavor.

Num! After dinner we threw the ball to Moose to really wear him out, and enjoyed the beautiful night. What an AWESOME day.

Wait, Wait, Good Boy

Thursday was an eventful day at our household….

I’ll give you a hint.

It was garage sale day at our house! We finally went through a million boxes that were piled up in our basement, got our business together, and set up for a one day sale. We had little expectations as to how well we would do.

We had a little rain in the morning that pretty much soaked all of our stuff, but besides that, the day was beautiful and it actually turned out to be quite productive. We didn’t have too much stuff leftover at the end of the day which was of course the goal. We boxed up the unsold items, and plan on bringing them into Salvation Army. What a great feeling to have so much stuff cleared out of our house. It’s like a breath of fresh air. I can’t believe how much junk accumulates over time.

For lunch, I made myself a sweet potato (did not eat the skin) with peanut butter. This is actually an old photo because the picture I took today looked extraordinarily unappetizing. Let’s just say the dollop of peanut butter didn’t look like a dollop of peanut butter.  I thought I would spare you.

After the sale, we took Mooser out for a long walk around the neighborhood. I was wishing I had brought my camera with me because there were so many beautiful flowers along the way. Oh well, next time.

For dinner we grilled up a couple of boneless skinless chicken breasts seasoned simply with salt, pepper, and onion powder. To top the chicken, I made a small batch of guacamole with ingredients I had on hand: 1 1/2 avocados, 1 small handful of chopped cilantro, a little salt, pepper, onion powder, garlic powder, and dash of lemon juice. I served my chicken on top of a small salad and Dana made his into a killer sandwich.

While we ate dinner, Moose did too. But first, he had to “wait.”

“Wait.”

“Good boy.”

That is what happens each time we feed Moose. If we don’t say “good boy,” he will just sit there and stare at his food. Our family learned that the hard way when we were out of town, and they were taking care of the dog.  We forgot to leave them the magic words and he wouldn’t eat well for them. Whoops! Now they know the secret words and will probably never ever forget. 🙂

Chocolate Banana PB2 Cookies

Good morning/afternoon/evening/night….depending on what time you read this post and what time zone you’re in. 🙂

Yesterday was another good restful day for me. I was feeling extremely sore, particularly in my back, but still managed to get some things done around the house and ran a couple of errands.

For lunch, I continued with my experimental diet, and made a big salad full of mixed greens, blueberries, strawberries, pineapple, avocado, almonds, and strawberry basil balsamic vinegar with a spot of olive oil.

The salad was pretty darn good, but how about my stomach? Not too bad, but not too peachy either. I am getting to the point where I don’t even know what I “should or should not eat” anymore with this current flare. When I was following the low-fiber diet, I felt okay, but felt nutritionally deprived. My body craved my usual salads, fresh fruits, beans, etc. So, I slowly began incorporating some salads back into my diet to experiment with and to note how my body reacted.  As of now I am concluding that I can have salads in the evening, but am not ready for them during the day based on how I felt yesterday after eating a salad at lunch time.

Later in the afternoon my beautiful cousin/bestie/maid of honor, Betsy, stopped by to visit. I do not see that girl nearly as much as I wish I could and cherish every second I get with her.

Prior to Betsy coming over, I had begun a cookie experiment. I had a large urge to bake, but really struggled with deciding what to make. I know it’s weird that I hard time making a decision (sense the sarcasm). That never happens. I knew that whatever I was going to make was going to have to come from ingredients we had already on hand, because I wasn’t going to go make a special trip just for this particular urge.

So, I began the cupboard raid. I found PB2, cocoa powder, oatmeal, and other baking necessities. I pulled out my bowls and my hand mixer and started mixing and measuring. I still wasn’t 100% sure what I was making as I was starting the process, but I knew I would pull something together. Here is what I came up with folks.

Chocolate Banana PB2 Cookies

Makes approximately 2 dozen cookies

Ingredients

  • 1/2 cup brown sugar
  • 1 1/2 tsp stevia
  • 1/4 cup egg whites
  • 1 tsp vanilla
  • 2 Tbsp honey
  • 1/4 cup water
  • 1 cup PB2
  • 2 Tbsp cocoa powder
  • 1 small ripe banana
  • 1/2 cup whole wheat flour
  • 1 cup oats
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2 Tbsp chopped dark chocolate (I used Dove Dark Chocolate)
Directions
  1. In a large mixing bowl, cream together sugars, egg whites, vanilla, honey, water, PB2, and cocoa powder.
  2. Add banana.
  3. In a separate small bowl, mix together flour, baking soda, salt, and oats. Mix into wet ingredients.
  4. Stir in chocolate pieces.
  5. Place dough in refrigerator for at least 30 minutes so that dough is easier to work with.
  6. Preheat oven to 350°. Remove dough from fridge and roll into 1 inch balls (or larger if you wish). Place on baking pan sprayed with cooking spray and press down on cookie to flatten slightly keeping about an inch in between each.
  7. Bake for 9-11 minutes.

And there you have it. A healthy version of such an amazingly awesome cookie!

These cookies are so gooey, chocolatey and nummy, and they’re low-fat too! You wouldn’t even know it because there is no sacrifice in flavor. That equals a success. I LOVE creating healthier version of sweet treats. It’s such a passion of mine. Someday, this may be my job. A girl can dream, right?

However, I would need to learn to have better constraint when it comes to the “taste-testing” part of recipe creation. I ate a few too many bites of dough, and a one too many of the cookies, and managed to completely ruin my appetite for dinner. Whoops. I should say I know this skill, I just chose not to use this skill yesterday. I truly enjoyed every bite of these chocolate goodies.

I had planned on making a spinach and mushroom fritatta for dinner last night, but it was going to have to wait for another night. Maybe tonight? I ended up having some snacks a couple of hours later: sugar snap peas and carrots with hummus, a small salad (really craving the greens today), and a rice cake with a light swiss Laughing Cow wedge.

Carrot Soup Take Two

Happy Friday and Happy 8 Month Anniversary to my honey!

Recap of yesterday coming right up.

After my morning run yesterday, I whipped up a bowl of Cream of Wheat. This is a recycled photo from a few days ago as my breakfast yesterday was completely the same except it was in “to-go” form (plus I forgot to take a picture). I had a meeting yesterday morning and was running late, so I heated my bowl of cereal right before I left the house, and it was still fairly hot when I got there.

For lunch I made rice with soy sauce, leftover chicken breast with teriyaki sauce, and green beans. Mmm, salty.

And for dessert….I couple bites of banana with peanut butter. This is a very common dessert for me but I always forget to snap a photo.

Dinner was a real easy one last night. I took a batch of carrot soup I had made a while back, out of the freezer, and began the defrosting process.

In the meantime, I sliced three bread-butts from the freezer (I save the butts of the breads for croutons) into bite-size squares, sprinkled them with garlic powder and a little salt, and set them under the broiler. Voila. Homemade croutons to go on top of the soup; healthy and simple.

I also cut up some fresh cilantro and fresh chives. Reminder to self: I need to dry the chives this weekend before they go bad.

So what do you get when you take your carrot pumpkin soup, add croutons, and fresh herbs? THIS!

This morning I woke up not feeling so hot. My tummy feels pretty nasty. I am wondering if I ate a little too much salt yesterday? It’s a possibility that I am just feeling über dehydrated. I hope it goes away soon.

Every BODY is Different

Happy Memorial Day!

This weekend has been extremely productive. It has been nice to spend a weekend at home to catch up on things around the house.

How about a recap from yesterday?

Breakfast: Cream of Wheat with maple syrup, cinnamon, and brown sugar. On the side, some cinnamon apple decaf tea.

We did our usual Sunday morning gig of browsing through the newspaper, but unfortunately we didn’t get to cut any coupons because there were no coupons in the paper yesterday! I was incredibly bummed. I love coupon cutting on Sunday mornings. We then went to the grocery store and then home to work on the yard.

It was finally time to plant our vegetable garden. This year we planted: zucchini, 4 different varieties of tomato including 1 grape tomato plant, bell peppers, onions, jalapeno, green beans, and kale.

We decided to buy the pre-grown tomato plants this year because our tomato plants were extraordinarily late last year. When all of my co-workers were bringing in tomatoes to share, mine still didn’t come up for at least another month after that. We are hoping these work out better. We also moved them to a different area in the garden, so we’ll see what happens.

On the deck in separate containers we planted a few herbs: Basil, Dill, and Mint. I have a strong desire to make mojitos this summer if we get our mint to come up!

We worked on the yard all afternoon; trimming bushes, trees, cleaning the gutters, etc. It was a hot and steamy day here in MN at about mid 90’s and very humid, so I was a sweaty mess.

I snapped a couple of photos of some beauties in the yard.

For dinner we bought very lean pork tenderloin which I had marinated in the fridge using this lovely Lawry’s Hawaiian sauce.

The description: “An enticing combination of pure honey, soy sauce and ginger blends with tangy pineapple, papaya and a touch of mango to unlock the flavor secrets of the islands.” I was sold.The pineapple from the marinade also serves as a natural meat tenderizer. I would definitely recommend this sauce.

Nutrition per tablespoon: 20 calories, 0 fat, 250 mg sodium, 5 g sugar. Although I prefer making my own sauces and spices whenever possible, I think it’s okay to “cheat” every once and a while too.

For those of you who have been following my blog recently, what you see on my plate in this next photo may surprise you due to my current health situation and low-fiber, low-residue diet that I had said I was going to try to follow. Enter: greenery.

Alongside my (awesome) grilled pork tenderloin, I made myself an experimental small side salad. No toppings except for a little of my fav Newman’s Own Lite Honey Mustard. I wanted to see how my body would feel after eating one of the most missed components of my normal diet.

Lately, I have been following the low-fiber diet, but the truth is, I am feeling totally crummy and it’s not just from the colitis. My body is craving green veggies and I am getting burnt out of canned green beans real fast. I have been thinking that if I feed my body a little bit of the foods that make me feel good normally, and the food my body is craving (greens), that maybe this will help me heal (as long as I don’t get too extreme about adding fiber back in). I don’t plan to slam down the raw broccoli, beans, and cabbage, but slowly incorporating some side salads and other greens may possibly be the best medicine for me. There is no significant evidence that proves that any particular diet really helps people with U.C., so why not experiment and see how my own body reacts?

I wanted to see how I felt this morning after my salad experiment and guess what? I feel no different, and that’s a good thing. Like, I said, I’m not condoning a veggie smack down by any means, but I am going to continue to experiment and learn how my body reacts to different options. Every BODY is different. I will be very careful and also continue to be cared for by medical professionals.

I am off to make a potato and chive salad (thanks for the chives, Nicole!) for a get together with some of my family and some of Dana’s family later this afternoon. I’ll let you know how it turns out. Have a great day!

Keep it in Perspective

After yesterday’s post about low-residue diet, limiting the “roughage,” etc., I thought I might dive a little further into the subject. I personally needed to brush up on it as it’s been a little while since I learned about it in school, and I thought some of you all might be interested in learning about it too.

What Is a Low-Residue Diet?

According to WebMD, “A low-residue diet is a diet in which fiber and other foods that are harder for your body to digest are restricted. Fiber is made up of plant material that cannot be completely digested by the body. High-fiber foods include whole-grain breads and cereals, nuts, seeds, and raw or dried fruits.

 Residue refers to undigested foods, including fiber, that make up stool. If intestinal walls are inflamed or damaged, digestion and absorption of nutrients and water may be impaired, depending on the location of disease activity.”

What can you eat while on a low-residue diet?

Grains:

  • Cold cereals that aren’t high fiber (Corn Flakes, Chex, etc.)
  • Enriched white bread
  • Cream of Wheat, grits, and I seem to tolerate oatmeal well
  • White rice, pasta

Veggies:

  • Cooked veggies such as mushrooms, green beans, carrots
  • Potatoes (no skin)
  • Canned vegetables
  • =(

Fruits:

  • Bananas
  • Melon
  • Canned fruit
  • Cooked fruit
  • Avocado

Dairy:

  • Dependent on the person and their lactose tolerance.
    • I don’t handle lactose well, so I avoid it even when I am fully well. I usually drink almond milk or soy milk instead. Small amounts of this kind of milk doesn’t seem to bother me much.
    • This goes for cheeses and yogurt as well. It is very dependent on the person and varies case by case.

Protein/Meat:

  • Most meat is fine to eat as long as it’s fairly lean.
  • Eggs are fine

Snacks and Sweets:

  • Cookies
  • Pretzels
  • Rice crackers
  • Pudding

To Avoid:

  • Nuts, seeds, peanut butter (this one I may not completely follow)
  • Dried fruits
  • Raw vegetables
  • Whole grains
  • Certain cooked vegetables (broccoli, brussels sprouts, cauliflower, etc.)
  • Beans, lentils
  • Popcorn
  • Caffeine

For those of you who read my blog regularly, you will notice that the foods listed in the “To Avoid” column, are the ones that I eat most regularly.

I have not completely handed over my diet to low-residue, but I am going to follow a majority of it for now, reminding myself that this is only temporary. I have been dealing with Irritable Bowel Disease (IBD) since I was 12. The symptoms come and go, and now that I am older and know my body well, I am hoping that I can fight this current bout quickly. Staying positive will help me to feel better sooner too! I am constantly reminded of how lucky I am to be as healthy as I am, and that there are a lot of people out there who are faced with more serious health problems than mine. That being said, I will be fine. This too shall pass. I will continue to keep it all in perspective.

This subject matter isn’t necessarily the easiest thing for me to talk about. It’s a little embarrassing, but I figure if I can help even one person out there who might be dealing with the same issues, it is worth it to share. So, here I am! An open book.

My food photos will look a little different for the time being, but I promise to return to the veggie packed diet that I love so much before too long.

On a more fun note, mom and dad brought Abbie over last night and the two dogs ran around in the yard. I snapped some pretty cute photos.

That last one is my favorite. Needless to say, Abbie is a little nervous around Moose who outweighs her by approximately 80 lbs. Who can blame her. Someday they will be best friends.

Food Photos Vacation Style

Happy Friday! Yay!

As you may know, I love food and I enjoy taking photos of my food. I decided to round up the rest of my food photos from my recent vaca to show some more of my eats while I was away.

Starting with our in flight breakfast of steel cut oats, fresh berries, and a bagel with jam.

In flight lunch…not my favorite chicken, not my favorite noodle dish, cooked veggies, an awesome greek salad, whole wheat roll, and cheesecake. I really enjoyed the salad and the bread, which ironically ended up being the theme the rest of the trip.

I didn’t take photos of all of my meals and realize I neglected to take one photo of my four pasta meals I had while I was there. Not very authentic I am aware, but they had a build your own pasta bar nearly every night and I thoroughly enjoyed it. Mmmm carbs. My body had to have been so confused with the changes in my diet. I loved every second of it.

That wraps up most of my vacation talk. Now that it has been almost a week since we came home, it’s back to reality! I need to start getting creative in the kitchen. I’ve been slackin’.
