It’s time to get back into the groove. You remember how this works right? It’s time for a breakdown of my Wednesday. Here we go.

Breakfast

Overnight Chia Bowl made with:

  • Fage 0% fat Greek yogurt
  • Silk unsweetened vanilla almond milk
  • chia seeds
  • stevia
  • blueberries
  • strawberries

I let all of the ingredients except the strawberries mingle together over night, and topped the bowl with fresh strawberries in the morning.

Lunch

Curry turkey salad over a bed of lettuce. I wrote down the recipe for this one but haven’t decided if I want to share or not because I wasn’t over the top thrilled by it. It was good though don’t get me wrong.

In the mix: celery, onions, turkey breast, grapes, Greek yogurt, and spices.

Dinner

I stopped at mom and dad’s after work to hang out with them before heading over to meet with some girl friends for So You Think You Can Dance? I munched on some trail mix while relaxing, and then made my way to the table for dinner.

I had a very random, yet delicious dinner: spinach, green beans, and tomato…

And a half of a banana with peanut butter for some protein which went unphotographed so I used an old photo instead. Perfect!

The rest of the evening was spent with my girlfriends Amanda, Jules, and Sara. We girl-talked it up, watched SYTYCD, and ate M & M’s (BTW I have been over-doing it on the chocolate lately) while lounging on the couch. I had a great time with them, and always do. Kate, we missed you!

U.C. Update

I was going to end this post with a recipe, but decided to wait on that and give you an update on my Ulcerative Colitis instead. It has now been 3 months that I have been sick and unfortunately, I have to report that I’m still not feeling well. Certain symptoms have subsided such as bloating, which I can mostly attribute to removing gluten from my diet, but other symptoms (which I’ll spare you the details of) are still not under control.

I go through peaks and valleys where I am feeling fairly well for a few days, and then something happens whether it’s stress or a busy weekend, and I am thrown off again.

I am finding my energy level to be very low, so much as I am not working out nearly as much as I used to and it’s becoming less and less of a priority. Sleeping has become the priority, and I am truly trying to honor my body’s request for it.

I am seeing the doctor regularly, eating a very healthy diet, taking my medications as prescribed, sleeping, being active when I can, but the one thing I know need to work on is rest. With the summer being so busy, it is hard to rest. Maybe I should give myself a prescription to rest, then maybe I’ll do it? I’ll work on that. I think this is something that most of us could probably work on, am I right?

My mom reminds me that in the big picture of life, this time in my life is just a small little nick in the frame. With that being said, I must remind myself that not working out is not a big deal right now, and that rest is okay and saying no to invites is okay and that friends will understand. It’s hard to remember that when you are so used to the opposite.

I don’t mean to be a downer but I really wanted you all to get an update because it’s been a little while since I’ve given you one. I continue to try to stay positive, but this is really taking a toll on me. I won’t be sick forever, I can promise you that. I was just hoping to have fought this off already. I’m still me, just a more delicate me. I can’t wait for the day when I can tell you I am in remission and feeling fabulous. Let’s hope it’s soon.

Harvard Square

Both Shannon and I had later flights on Sunday, so we took advantage of our extra time by walking to Harvard and admiring their beautiful campus and the surrounding area.

It looks a little different from good old Minnesota State University, Mankato! It is a breathtaking campus.

We oogled the fresh goods at a local farmer’s market and bought flavored nuts from Q’s Nuts, a local company, and I bought a sweet apple for the airport.

A cupcake truck to tempt us on our walk home…we denied it after much contemplation.

Back at the hotel, we had 45 minutes to shower, pack, and be down in the lobby to catch a cab back to the airport. In case you’re wondering, yes I did have to sit on my suitcase in order to close it, thanks to all of the great swag! My bag weighed in at 48.5 lbs on the way home.

At the airport I polished off a small sample of Q’s nuts, my large farmer’s market apple, and then decided I needed some greenery, so wandered around until I found myself a nice little side salad. My first flight was from Boston to Chicago.

A layover in Chicago (for 3.5 hours) led me to buy more food. Another salad…

After about 45 minutes I decided that a bowl of vanilla Fro Yo was just what I wanted.  Those apples look pretty tasty though don’t they? I walk by them every time I am at the Chicago airport and drool by the window.

Fro Yo two days in a row. That needs to stop now. Have you noticed I am quite the indecisive person? It’s not something I’m proud of. Smile with tongue out

Next flight, Chicago to Minneapolis. I munched on a box of Wild Harvest Organic Raisins from the conference and then tried to sleep (with no such luck). I arrived in Minneapolis around 12:30, and crawled into bed around 1 am. It was a LOOONNGG day of traveling and I was so happy to be home.

The main message I took from the conference is, be true to you and remember why you started your blog. I started B.N. to share my love for food and fitness in hope to inspire others (and motivate myself) to live a healthy lifestyle. What you read on my blog is all me. I write how I talk, and am real with you every day. Not every day is a great day, but I do try and find the positives in every situation and keep my blog uplifting and light. I hope you all enjoy reading it as much as I enjoy writing it.

To the great friends I met over the weekend: you are all such incredible, inspirational people. I learned something from each and every one of you. I look forward to staying in touch over the years and hopefully meeting up with you all again!

I am so glad I made the decision to attend HLS12. I attained so much valuable information and am now finally starting to digest and process it all. I am in the process of putting some of what I learned to work! Expect great changes to Beautifully Nutty in the future.

I will be back to normal posts again. The recipes are piling up and I have some major catching up to do. I hope you’re excited!

Shake Out the Nerves: HLS Day 1

Hi friends! I am home sweet home from my trip out to Cambridge, MA for the Healthy Living Summit 2012. I have A LOT to tell you. I was going to try to do a recap of this weekend in one post, but there is absolutely no way I would be able to do that without writing you a novel. So, I’m going to break it down day by day. Bear with me.

Last time I left you I had recapped my day with Dana in Boston. Moving on to Friday….

Friday morning, I was one lazy lady. I slept in, eventually rolled out of bed (I do literally roll out of bed), made myself a cup of joe, and plopped myself in front of the computer for a couple of hours. It felt phenomenal to just sit and relax.

I even ate breakfast in my room. I picked up a vanilla bean non-fat Greek yogurt from Trader Joe’s the night before and enjoyed (a few too many) cinnamon almonds from TJ’s as well.

Then came the activity

I decided to make something of myself around 11:00, so I jumped into my workout clothes, laced up the ol’ Asics, and made my way to the river. I used MapMyRun to track me through 4 miles. I jogged and walked while enjoying the beautiful views of Cambridge.

Back at the hotel, I had my first mini mingle with some of the HLS ladies. A fellow blogger Aundra, led a group of us in an outdoor Zumba class. She scoped out a nice shady spot for us just outside of our hotel, and there was a nice breeze to keep us cool as we broke it down.

She got me sweatin’ and was the cutest, happiest, Zumba instructor I’ve had yet. Such a fun time!

After Zumba, I showered up and headed to the HLS registration tables to pick up my bag-o-swag, and then sat in on a presentation and discussion led by Derek of the blog Greatist.

Derek emphasized the importance of being your best self, and staying true to who you are in life, and in your blog. His presentation was a great way to kick off the conference, and was a great opportunity to mingle with other bloggers, and discuss ideas with one another.

Holy cow I was a little girl on Christmas when I got this bag. Thanks to wonderful sponsors and donations, the gift bag that each attendee received was overflowing with great products from workout headbands and a t-shirt from Five Bamboo, to Organic Granola from Cascadian Farms, Odwalla bars, SoyJoy, and many other great products.

We were also loaded up with coupons for products from Almond Breeze, Wild Harvest ( a HUGE sponsor for this event), Laughing Cow, Stonyfield, and more. Such generous donations and swag bags!

After scrounging through the goodies, it was time to meet up for another “mini mingle” which was a photo walk around Cambridge. We walked our way to the very famous Fenway Park. Unfortunately we couldn’t look inside, but it was still neat to see the outside of it, and more importantly I had a chance to chat with so many sweet ladies.

That marked my third sweat session of the day.

Once we got back I was drained, but knew I needed to gather up some last bits of energy because I had a cocktail partAY to attend to.

I neglected to really take any photos of the cocktail party, except for this awkward one which was taken in my room beforehand…

I was all nerves walking into the cocktail party as I did not know a soul except for a few people I had spoken with throughout the day. When I am placed in situations where I don’t know anyone, I tend to get shy. It forces me out of my comfort zone and I realize that sometimes this is the only way a person can grow and get over the uncomfortable feeling. It’s good for me.

I approached the first friendly welcoming person I could find, and within minutes I was engaging in conversations left and right with fellow healthy living enthusiasts. Being that we all have so much in common, it was very easy to keep conversation flowing. I was meeting so many great people with interesting things to say!

The only thing weighing me down was that my energy level was at a 3 out of 10. My body was working over time to keep me going. I wanted to enjoy the moment though so I kept pulling through. 

At around 9:00, I managed to spill my glass of red wine all down the front of my tan skirt. I was that girl. Womp wooooommmmp. I used my clutch to cover it up as I quickly made my way up to my room. Embarrassing.

A little cold water and white bar soap, and I worked that stain right out.

So here I am in my hotel room at 9:00 pm, the party is still going on downstairs, I’m debating what to wear if I go back down to the party, I’m feeling very cozy in my gorgeous Hyatt room, and little Ms. Melanie is completely spent.

I made an executive decision right then and there that I was going to stay in the rest of the night. I took the wine on my skirt as a sign that my body was ready to call it a night. After all, I had a very busy day ahead of me, and wanted to be in good shape for it.

I snuggled into bed, and slept sound. I had survived day one, which is the most nerve-racking of them all. SO much more to come. Please stay tuned!

Nutty Gluten-Free Bread

Happy Wednesday!  Are we really already half way through the week? Thank goodness, it has been an exhausting one.

Not that I like to wish time by, but I am seriously so excited because… I leave for the Healthy Living Summit tomorrow! I can’t believe it’s here already. The agenda looks AMAZING and I am so looking forward to meeting everyone and having a fun weekend with a bunch of new friends! I will be snapping mega photos and taking notes so that I can keep you well-informed of my adventure.

Monday

I didn’t get to blog yesterday, and really only have one photo from Monday I want to share. I earned the best wife award for Monday night because I made hubby a beef pot roast in the crock pot.

In the morning I placed 4-5 medium carrots, chopped, into the crock pot, along with 5 mini onions from our garden, beef roast which I believe was a “round” cut but now I don’t remember, a packet of Lipton’s Onion Soup mix, and 3/4 cup water. I set the crock pot on low for 10 hours and it was ready to go at the end of the day!

Being that I’m not much of a meat lover, this actually tasted pretty darn good, and my body could probably use the extra protein and iron these days.

Tuesday

On Tuesday morning, Dana and I set out on a 4-mile run. I haven’t fully run this distance in quite some time due to the UC, and during the run, I remembered why.

My body is working in overdrive right now to fight and heal the inflammation happening inside, therefore I become fatigued fairly easily. I try so hard to push myself because I want to be able to endure activities at the level I was at before when I wasn’t sick, but it’s just not in the cards right now.

With the motivation of Dana at my side, I was able to pull through 4 miles, but I could feel my body grumbling at me as I ran. I am very proud to say that I accomplished that run now.

I have noticed that some days are better than others when it comes to my stamina and activities. Friday for instance, I ran 3 miles and it seemed to be a much more enjoyable run. My body wasn’t fighting back like it was yesterday, but  I still felt fatigued though towards the end.

I not only feel this way with running, I feel it with any type of activity: weights, elliptical, and even every day tasks. I find myself becoming very tired quickly. The docs are investigating my situation full force to make sure I am doing alright and doing their best to “fix” me when they can.

I will continue to keep you posted as I learn more. I know my limits and am doing my best to stay within those limits and not push my body further than it can go right now. I have open communication with my body and we keep each other in the loop. 😉 I listen to it when it says cool it, and it listens to me when I say keep it comin’.

Breakfast

For breakfast, I turned to another old favorite, overnight chia seed yogurt bowl! We were running very low on yogurt so I had to use a little more almond milk than usual but it still turned our great, just a smaller bowl of goodness than I would have liked. I added heaps of blueberries and strawberries to add to the volume.

I think this is the perfect opportunity to share with you a gluten-free bread recipe I have been making for Dana and I since we began the SCD/Paleo diets.

I experimented with a few different recipes over time, made my adjustments, and have come up with my favorite version of the bread. It uses Greek yogurt so doesn’t fall perfectly into the SCD or Paleo diets, so I will go ahead and just call it Gluten-Free.

Nutty Gluten-Free Bread (makes 2 loaves)

Ingredients

  • 5 cups almond flour
  • 2 tsp. baking soda
  • 3/4 tsp. salt
  • 2 tsp. apple cider vinegar
  • 2 cups non-fat Greek yogurt
  • 4 eggs
  • 1 egg white

Directions

  1. Preheat oven to 350°.
  2. Mix together all ingredients (I use a hand-mixer).
  3. Pour into two lightly greased bread loaf pans.
  4. Bake for 50-55 minutes. Bread is done when toothpick inserted into center of loaf comes out clean.

This bread is dense but not crumbly like some of the other recipes that use SCD homemade yogurt. The Greek yogurt really helps to make it stable. It cuts perfectly, and tastes great toasted with some nut butter! Dana has also used his for turkey deli sandwiches, or as a base for a couple of over-easy eggs.

Aw Shucks

Well hi there. Did everyone have a wonderful weekend? I surely did. It was fairly low key which was just what I needed.

As you’ve probably noticed, I usually recap the previous day’s endeavors in my posts rather than on the day of. With that being said, I will now be recapping Sunday for you. Here we go!

Breakfast

It was time to experiment with an old favorite, the Greek yogurt fruit bowl. A breakfast that I seriously ate day after day for a good month or two before moving on to my next obsession which I believe was the overnight chia seed bowl.

The good news, is that this sat perfectly well in my belly.

After breakfast we did our usual Sunday gig with coupons and grocery stores. When we got home at 11:00, I was ready for lunch. I made myself a strawberry salad with avocado, black beans, feta cheese, and honey mustard dressing.

I loved every bit of it as usual.

As I was making my lunch, Dana was busy experimenting with a SCD tortilla so that he could make himself a burrito. I found a recipe a while ago and have wanted to try it but haven’t gotten around to it. He got to work on making the SCD tortilla which was actually pretty easy. It took a total of about 17 minutes.

The recipe was:

  • 1/3 cup almond flour
  • 1 egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon cumin
  • 3 Tablespoons water

Basically you just mix all the ingredients together and bake in a well-greased pan for 15 minutes at 300°.

Here was his burrito. Not too shabby!

In the afternoon we cleaned the house, I did some food prep, and we ran a handful or errands in record time. Then we headed to my in-laws to visit with them for a bit.

Dinner

By the time we got home it was nearly time for dinner, so once again I found myself in the kitchen (I really do enjoy food prep btw so this isn’t a big deal usually; only when I feel like I’m LIVING in the kitchen is when I get bothered by it).

On the menu was a very simple meal of grilled corn on the cob and bison burgers. When we went to the Farmer’s Market a couple of weeks ago we bought a pound of farm fresh ground bison and have had it in the freezer since then. It was time to give it a taste.

I got to shucking the corn. Is that not the best word? Shucking.

We seasoned the bison burgers simply with Worcestershire sauce, onion powder, salt and pepper.

Dinner was so easy and so delicious. This was my first corn on the cob this summer because it was not allowed on the SCD, but since I have modified the diet, I am allowing myself to enjoy it, and that I did.

Something happened after dinner…two Dairy Queen blizzards just showed up at our house and it just so happens that we both LOVE DQ. I wasn’t going to let this summery treat go to waste. 😉 I loved every bite of this double fudge cookie dough blizzard.

I will be cooling it again on the ice cream front, hopefully. It is just so refreshing and lovable in the summer I can’t help myself! 

Did everyone watch the Olympic’s closing ceremony last night? I turned into my 12 year old self as soon as Spice Girls hit the stage. Spice up your life! Loved it.

Now we all know it’s Monday, and in lieu of Monday, I have another terrible joke for you courtesy of this site.

Vegetarian Mexican Lasagna

Another awesome Saturday to go down in the books. It started off with a mango, banana, and almond milk smoothie.

Dana and I sipped our coffee on the deck while tossing the ball to Moose. It was a very relaxing morning.

During the middle of the day we headed to celebrate our friend’s son, Leo’s 1 year birthday.

We mingled outside, hopped in the blow up hopper, watched as 5 kids opened up Leo’s gifts for him, and ate some awesome food. I didn’t snap a photo but I had a plate full of pulled turkey, Ramen salad, some sort of pesto pasta salad (maybe?), fruit, a peanut butter cup chocolate chip cookie and a piece of birthday cake. OMG everything was fabulous and so much fun. Leo is such a cutie and handled all of the extra attention so well.

After the party we stopped at Gertens Greenhouse and Garden Center to look for some plants for our front yard.

We had a $50 gift card from our wedding and we did a great job of spending as close as we could to that amount. With a water thrown in our total came out to $49.66. Not bad, huh?

We bought three Barberry plants and one Sedum. I’m excited to see how they look in the front! Thanks Brian and Amanda!

We stopped home to drop off the plants and pick up the pooch. We took off for a nearby little lake for a walk. Moose was not on his best behavior but it was still a nice walk. He wanted to get into everything and kept cutting us off and pulling more so than usual. He has his good days and bad days just like me.

Dinner

For dinner I got creative with the zucchini once again, this time in the form of lasagna. The zucchini is popping up in our garden here and there and you better believe it’s going to get eaten. 

To start, I cut my zucchini into thin lasagna-like noodles. I sprinkled them with salt in a colander, and let them sit in the sink for 10-15 minutes. Then, I removed them from the sink and patted them dry with a paper towel.

Next, I combined 1 cup of cooked black beans, 1/4 cup diced red onion, 3/4 cup corn, 1/4 cup diced tomatoes, 2 teaspoons of chili powder, and a dash of salt.

Next I began the layering process starting with salsa on the bottom, then a sprinkle of bean mixture, zucchini, salsa, bean mixture, zucchini, salsa, bean mixture, and topped with cheddar cheese.

Into the oven it went for 45 minutes at 400°. Then I flipped the oven to broil and broiled for 2 minutes to crisp the top.

I let it sit a few minutes before slicing and plated it up.

Vegetarian Mexican Lasagna

Ingredients

  • 1 medium zucchini
  • 1 cup black beans, cooked
  • 3/4 cup corn
  • 1/4 red onion, diced
  • 1/4 cup tomatoes, diced
  • 2 tsp. chili powder
  • pinch of salt
  • 1 cup salsa
  • 1 cup cheddar cheese, shredded

Directions

  1. Preheat oven to 400°. Lightly grease bread loaf pan with cooking spray. Set aside.
  2. Cut zucchini into lasagna-like strips. In a strainer in the sink, sprinkle with salt. Let sit for 10-15 minutes, then drain and pat dry with paper towel.
  3. In medium bowl combine beans, corn, onion, tomatoes, chili powder and salt.
  4. Begin layering: 1/3 cup salsa, 1/3 of bean mixture, zucchini, 1/3 cup salsa, 1/3 bean mixture, zucchini, last of the bean mixture, last of the salsa, finish with the cheese.
  5. Bake for 45 minutes then switch oven to broil. Broil for 2 minutes.
  6. Remove from oven and let cool for 5 minutes. Cut carefully and serve. Finish with a few sprigs of cilantro.

Such a great spin on lasagna. I hope you’re not getting tired of all of the zucchini recipes! Pretty soon there will be a bunch of tomato recipes once they start turning red in the garden.

Black Bean Quinoa Burgers

Happy Hump Day! Hope everyone is doing well on this mid-week day .

Breakfast

Breakfast yesterday was a smoothie-on-the-go packed with strawberries, blueberries, banana and unsweetened vanilla almond milk. I love how the vanilla almond milk tastes in the smoothie.

Lunch

A seriously rockin’ salad. Mixed greens with mango, blueberries, strawberries, avocado, almonds, feta cheese, and Newman’s Own Lite Raspberry Walnut vinaigrette.

Honestly this salad rocked my socks.

I worked a half day yesterday, so afterwards I headed to mom and dad’s. I ate dessert when I got there (I always raid the cupboards upon arrival), which was peanut butter and chocolate chips while I said hi to Abbie (mom and dad’s sweet little Yorkie-poo who I adore).

Then I changed into my workout gear, laced up the ol’ sneakers, and hit the pavement. I jogged/walked their neighborhood and covered 4.5 miles. It was mid-80’s and sunny while I was out and I have determined I am a weenie when it comes to running in the heat. I melted and ended up running 70% of the time and walking 30% of the time, and that may be a little generous even on the running side.

After the “wun” (walk/run), I headed to the basement to cool off. I still had some mojo left, so I hopped on their elliptical for 10 minutes while watching Giada at Home. Finally, I finished with the bench press.

I gave Abbie one last kiss and headed out the door back home to my own big puppy and hubby.

Snack

For an afternoon snack I had a bowl of cooked carrots with cinnamon and sugar.

Dinner

Not long after my snack, both Dana and I were getting super hungry, so I figured I may as well start dinner instead of more snacking.

For dinner I made Black Bean Quinoa Burgers.

To the food processor I added 2 cups of cooked black beans, 1/4 cup diced onion, 1 minced garlic glove, 1/2 cup quinoa, 1 tablespoon of cilantro, 1/2 teaspoon cumin, 1/4 cup salsa, 2 tablespoons egg whites, salt and pepper, and a miniature pinch of red pepper flakes.

I pulsed these ingredients until combined, leaving it slightly chunky and making sure not to let it turn into a hummus paste.

I chilled the mixture for about 5 minutes. We got too impatient to wait any longer, plus the mixture was still cold from using cold ingredients so it was easy to handle.

I formed the mixture into 7 patties and placed them on a lightly sprayed piece of aluminum foil. Before they hit the grill I sprinkled them with garlic and onion powder.

We grilled them over medium-low heat for 20 minutes; flipping halfway through.

I topped my burger with salsa and avocado, and served it alongside a simple green salad with cheddar cheese and Western dressing.

Talk about a great meatless meal and perfect for the summer because I didn’t have to use the oven at all. Niiiiiiice.

Black Bean Quinoa Burgers

Ingredients

  • 2 cups black beans, cooked
  • 1/4 cup onion, diced
  • 1 garlic clove, minced
  • 1/2 cup quinoa
  • 1/2 tsp. cumin
  • salt and pepper
  • a dash of chili pepper flakes
  • 1/4 cup salsa, heaping
  • 2 Tbsp. egg white

Directions

  1. Preheat grill to medium-low.
  2. In food processor, lightly pulse all ingredients and keep chunky.
  3. Form into patties and place on lightly sprayed aluminum foil. Place on grill.
  4. Grill for 20 minutes; flipping on foil halfway.

Dessert

While watching the Olympics, we whipped up a wonderfully creamy dessert that I have grown to LOVE. Cocoa banana soft serve baby; cocoa powder, unsweetened vanilla almond milk, and frozen bananas.

A Joke for Monday

The weekend isn’t really over, is it? I feel like it never happened it flew by so fast. As always.

It was a wonderful weekend. I didn’t do much on the side of cooking and didn’t  develop any new exciting recipes over the weekend, but I surely enjoyed relaxing at home and with friends.

Saturday

Breakfast was a cup of coffee with stevia, and a piece of almond bread toast with PB2 and cinnamon.

The fam bam and I headed out for a 3.35 mile run around the neighborhood. The weather was PERFECT. It is finally starting to cool down around here and the temperature was high 60’s with a light sprinkle which felt great.

We switched up our grocery shopping day to Saturday instead of Sunday since we both had fun plans for Sunday and wouldn’t be able to go on our usual day.

When we were at Costco we stumbled upon a super large pet bed for Moose for only $20! Seriously you don’t find that price anywhere on pet beds. His other bed had seen better days and he was definitely ready for a new one; a big boy bed.

I think he likes it. Actually what’s funny is that we had to force him onto the bed for this photo. I think he likes it? Smile with tongue out

Lunch was very random. I had grabbed a sample or two at Costco, and when I got home, I wasn’t sure what I was hungry for so I made it a small snack type of lunch.

I started with cooked carrots with cinnamon.

Then oven roasted turkey breast with cheese.

And then I think I moved on to a couple of bites of peanut butter and then called it a day, but I’m not for sure.

In the afternoon, I relaxed and laid out on the deck. It was wonderful and much needed. I have been exhausted.

Dinner was Roasted Butternut Squash Soup that I made a while ago and stored in the freezer. I love having homemade soups in the freezer for days like Saturday night, where I had no inclination to cook or make anything. All we had to do was grab a couple of bags of soup from the freezer, pop them in a bowl in the microwave, and top them with some chives.

Sunday

On Sunday I headed to Mankato to meet up with a couple of my girlfriends from college. Being that we were all dietetics majors, there is always food involved at our get-togethers.

I brought apples, mango, cherries and yogurt dip, Terra sweets and carrots chips (which are amazing btw), and to the left unpictured is a giant bag of trail mix which I dominated.

We also had pretzel chips and hummus, carrots, and lettuce wraps. Pretty healthy, right?!

I loved loved catching up with the girls. They both have beautiful little baby girls so I got lots of quality baby time. I love baby time, and girl time, so it was a great Sunday.

When I got home, Dana, Moose, and I went for a leisurely walk around the neighborhood, then I got ready for the week ahead.

Monday Joke

So, I was thinking…since I tend to have a hard time dealing with Mondays, with going back into work week and all, how about I try to throw you all a joke on Mondays when I remember? I know I am not the only one out there who struggles with this day, so we can all benefit from it. I’m not guaranteeing any quality jokes, but if they can at least make you smile, or give you the slightest chuckle, I will feel like I’ve done my job.

Q: How do you turn a soup into gold?

A: Add twenty four carrots!

Chocolate Chip Cookies Paleo Style

Good day to you all! I hope everyone’s weekend is off to a great start. I’m pretty sure I have deemed Friday as my favorite day of the week. At the end of the work day it’s so nice knowing that I have the whole weekend ahead of me to do as I please.

My Friday

I started my day with a banana pancake topped with honey and PB2. I made it the night before so that all I had to do in the morning was pop it in the microwave and add some toppings. I’m all about anything that make early mornings easier for me.

I am attempting to wean back on the nut butter a bit because I was seriously getting out of hand and eating it by the spoonfuls. I think it was a combination of factors: I may have felt slightly deprived from the diet, I don’t love meat, and I felt like it was something that actually satisfied my belly. Now that I am starting to incorporate more of my favorite proteins again, quinoa, beans, and eggs, I am able to cut back on the nut butter. I will not be cutting it out however! There are so many options to learn paleo cooking these days.

For lunch I ate the same awesome Greek-inspired salad as yesterday.

After work, I headed straight to the gym yet again. I hit the elliptical for 20 minutes, then moved to the treadmill for a mile run all while watching the Olympic women’s 10,000 meter race. Holy cow those ladies are speedy! It was great motivation to keep me moving. After cardio, I moved to the free weights to pound out a chest and tricep workout. I finished with some core work. Strength training two days in a row! It has been a while since that has happened.

For dinner I made a taco salad.

In the mix:

  • mixed greens
  • cilantro
  • black beans
  • cheddar cheese
  • tomatoes
  • onions
  • and ranch dressing

I debated whether or not to top the salad with salsa, but have found in the past that I am usually disappointed if I use salsa as my dressing, so I opted for one I knew I would like.

After dinner I wanted dessert. I found a Paleo chocolate chip cookie recipe from Delighted Momma and decided to give it a whirl. But I was kinda looking for cookies that are keto, for my weight wasn’t going unnoticed.

I made a few changes though of course as I always do. Instead of the coconut oil, I used organic applesauce and instead of using 4 whole eggs, I used 3 eggs plus 1 egg white. For the chocolate chip part, I bought carob chips from the natural food store in town. I have never used them before but know they can be substituted for chocolate chips and are a healthier option. The ones I bought were dairy free.

Chocolate Chip Cookies Paleo Style

Ingredients

  • 1/2 cup organic applesauce
  • 3 Tbsp. honey
  • 3 eggs
  • 1 egg white
  • 1/2 tsp. vanilla
  • 1/8 tsp. sea salt
  • 1 cup coconut flour
  • 1/2 cup finely shredded unsweetened coconut
  • 3/4 cup carob chips

Directions

  1. Preheat oven to 375°.
  2. In mixing bowl beat together applesauce, honey, eggs, egg white, vanilla, and salt until well combined.
  3. Next, stir in coconut flour, coconut, and carob chips.
  4. Roll into balls and flatten slightly*; place on parchment paper or non-stick baking mat.
  5. Bake for 15 minutes.

*The cookies do not change their shape from pre-cooked to post-cooking so flattening them makes them more cookie like.

Thank you Delighted Mama for the inspiration! I loved these cookies. They have a coconutty chocolatey flavor, a soft texture, and are slightly addicting.

The Return of Oatless Oats

Happy Friday!

So you know when you have those nights where you just want to eat and eat and eat, and it doesn’t matter how much you stuff your face you still want to keep eating? Well, I had one of those nights last night, (says the dietitian). Hey, I’m only human!

While getting dinner ready, I munched on some unsalted roasted almonds and a few raspberries. This was my appetizer.

For dinner I sautéed zucchini and green beans (both from our garden), onion (farmer’s market), mushrooms, and a small amount of black beans. I wanted to test out the black beans and see how my body reacted in relation to the U.C. because I have really been missing my beans. The bean verdict: in small amounts I can handle them just fine as long as they are very well cooked and soft.

I sprinkled the veggie sauté with garlic powder, cumin, chili powder, and salt and pepper. Two minutes before the veggies were done, I got to work cooking up an over-easy egg.

Once the egg was done, I plated up my veggies, next went the egg, fresh tomatoes (from the garden too), cilantro, and Wild Harvest’s mango salsa.

I so love veggies with a runny egg on top.

After dinner, I then made myself a big bite of PB2 with honey, followed by a couple of pieces of chocolate. I wanted more but was realizing that I didn’t need more, so I walked away. I turned Wheel of Fortune on, grabbed a couple of hand weights, and started walking in place while working the arms. This took my mind off of food and finally my body realized I didn’t need a-n-y-m-o-r-e. Reminder to myself: mindful eating.

Lunch

I jumped ahead here, so let us back-pedal it now. I am very proud of my lunch today. It was seriously awesome.

I made a Greek-inspired chicken salad which included:

  • pulled chicken breast
  • zucchini
  • grape tomatoes
  • green olives
  • feta cheese
  • balsamic basil dressing

I loved this flavor combo so much that I made if for my lunch again today. I also had a banana, clementine, and believe it or not some cooked carrots. 😉 Cooked carrots every day keeps the doctor away? Not in my case I guess, but maybe!?

Now to breakfast.

It has been a long time since I made this one: oatless oatmeal. In the mix: 1/4 cup egg whites, 1/2 banana, somewhere between 1/4 and a 1/2 cup of almond milk, and a sprinkle of cinnamon.

Blend all ingredients together. Pour onto non-stick pan and cook over medium heat. Use spatula to stir and mix while the mixture begins to bubble and thicken. This process only takes about 3 minutes, so keep an eye on it and keep stirring.

The mixture will have a runny oatmeal like consistency when done. Pour into your bowl, top with a drizzle of honey if you wish, and a spoonful of peanut butter. This was such a nice change of pace, AND it’s SCD friendly too! It’s the return of the oatless oats. I hope to remember this one more often.

I did make it to the gym yesterday. I headed straight there after work because I knew if I came home first, I would never make it there. I warmed up with a mile run on the treadmill then made my way to the weights to workout my back and biceps. I also did some core work.
