Five Things I’m Loving Tuesday

1. Long Walks!

With friends, loved ones, Moose or by myself. The weather has been perfect for walks not to mention the stress relief it brings and with the health benefits! Although I will admit I do miss running and I am doing some very light jogging on some of my walks. But still, I love walking!

2. Quinoa

It’s the whole grain that keeps on giving: it’s a complete protein, a good source of iron and fiber, not to mention it tastes wonderful. It can be used in savory or sweet dishes. When I talk to clients about how to use quinoa I will usually recommend starting off using it like you would brown rice; for example with a stir fry. As you get more comfortable with the taste of quinoa you can start to use it more creatively!

3. Almond Butter

Whether it’s homemade or store bought (yes I buy it sometimes at Costco if I’m feeling lazy) I have been loving it mixed into my go-to smoothie, on brown rice cakes, on dates, on top of fruit, mixed into homemade chocolate, or off of a spoon. Do I miss peanut butter still? Sure I do. But I am really liking the almond butter these days too!

4. My Family and Friends

I can’t get enough of them lately! Love them so much.

5. Pandora Internet Radio

I love playing pandora when I’m cleaning the house, hanging out, or out for a walk. I have about 15 different radio stations I have set up so I can always find one to fit my mood! Feel like dancing? I play Pop and Hip Hop or Britney Spears Radio. Feeling more mellow? I turn on Jack Johnson or Hotel California. Feeling random? Glee Cast radio. I am all over the place in my taste for music!

Weekend Snapshots

I am coming off of what was one epic weekend. It was an absolute blast having my brother and Ana around all weekend. Our family was able to spend a lot of time together this weekend which of course I just love.

Since it’s Monday and since a good majority of us including myself may be a little tired today, I’m going to keep the rest of this post real simple.

Here are some weekend snapshots!

Thursday night we hosted a small BBQ for our special Colombian guests.

Friday I grabbed lunch with the lovely Katie and Becky at Crave at Mall of America. Love love these girls.

I ordered the salmon salad which came with mixed greens, salmon, mandarin oranges, goat cheese and pistachios (I think). Honestly it wasn’t anything to write home about but it tasted good still. I think I was so absorbed in conversation that I hardly remember eating it. Yikes!

Friday afternoon Dana and I enjoyed a short and hilly bike ride through the neighborhood. I am hoping to do a post this week about my casual approach to training for the duathlon.

Saturday morning started off with banana with almond butter and no-sugar added dried cranberries.

Then we ran a bunch of errands including a trip to the local farmers market where I picked up these beauts for my mom and dad.

And later in the evening we had a Mexican fiesta with the family.

On Sunday Dana and I took our bikes to St. Paul and biked 10 miles bike along the Mississippi. I LOVE this area. It is beautiful.

I finished the weekend off with a homemade Mediterranean dinner complete with kabobs, grilled chicken, mixed green salad, and yellow quinoa (recipe to come for the yellow quinoa).

Inspired by Runners

I’m a little belated on this weekend recap but I needed yesterday to unwind and stepped away from the computer and the phone for a good majority of the day, so I’m bringing it to you today.

My weekend was spent up in Duluth, MN for the Grandma’s Marathon and Garry Bjorklund Half-Marathon. I went to be a cheerleader for a bunch of my friends running in the half, and my brother Kevin, who was running his first ever marathon.

My mom and dad were also up there to help cheer everyone on, so Dana and I met up with them once we arrived in Duluth. We grabbed lunch, walked around Duluth, and took in the beauty of the city.

It was extremely foggy the whole time we were there and the air was cool and humid. It’s always unbelievable to me that there can be that drastic of a weather difference just 2 1/2 hours north of where I live. It was a 30°F difference!

We walked by the finish line of the race and that really set-off my excitement for race day. Even though I wasn’t running in the race the next day, I felt like I was.

I slept terribly the night before the race. It was a combination of being in a new place (it always takes me a day to adjust), the excitement of the weekend and the race, and me feeling like I was going to be running in the race.

On race day, the runners all headed out very early to get to their start points, and the rest of us spectators geared up with our warm layers, rain coats, and umbrellas. The weather was in the 50’s, super foggy, misty, and some very light rain spattered in here and there. If I were a runner, I would have been extremely happy with this weather.

Dana and I were little mad mice throughout the day. We watched our friends running in the half-marathon run by at mile seven, and then drove closer to the finish line, parked, and ran our little legs off to the finish line to watch them finish.

And Brendan, Jasen, Jessie, Annie and Casey and of course all of you other amazing runners out there too! I was so proud of each and every runner and am really itching to get out there next year and run the half.

After we watched our friends finish the half, we made our way over to mile 17 of the full marathon that Kevin was running. Grandma’s had this neat system set up so that you could get text updates of certain runners so that you knew when the reached different mile markers. This helped us gage when we needed to get over to mile 19 to see Kev go by. Since the weather wasn’t super peachy, it was nice to have this luxury so we didn’t have to be out in the rain all day.

We anxiously awaited his arrival, and screamed and cheered as he came by!

He was looking great and feeling pretty good. He said his stamina was fine, but his legs were starting to get tired. Go figure, he just ran 19 miles right? He gave the legs a little stretch while we gave our motivational words of wisdom. At this point he only had 7.2 miles to go. I say “only” as if it were just a short little run around the neighborhood. I can’t remember the last time I ran 7.2 miles. I guess it was probably last summer.

Anyway…after some stretching and hugs, he went back on his way towards the finish line. My mom, dad, Dana, and I did our drive and park and get to the finish bit again.

We weaseled our way into a fence spot and again anxiously awaited Kevin’s arrival. My brother Scott and his girlfriend Nicole came in to town to watch him finish too, and got there just in the nick of time. It was so great to see them!

We spotted Kev in his black pants and black top coming down the finish lane. We screamed and cheered to let him know we were there and got his attention. This time not all smiles like at mile 19, but he still managed to give us a smirk as he conjured up every last bit of energy he had to cross that finish line.

My emotions took over me. My heart was probably pounding so hard and beating so fast at the excitement of seeing him run towards the finish line. I can only imagine what 26.2 miles feels like. He finished his first marathon in excellent time and is already talking about doing another one. I am the proudest baby sister.

All of this spectating really inspired me to want to take on another half-marathon myself. My first one (and only one) was last summer and it was really rough, so I’d like to prove to myself that I can do it again and I’d like to be able to enjoy it a little more next time. I know my body needs its rest at this point in my life so it won’t be any time soon, but someday, I will be running another half and it’s going to be great.

Congratulations to all of the runners that ran in the Grandma’s Marathon and Garry Bjorklund Half-Marathon this past weekend. I am proud of all of you and can’t wait to join you soon!

Father’s Day Everyday

Today I am celebrating Father’s Day with my family. Although the official “Father’s Day” was nearly a week ago, like many of us, I believe Father’s Day should be celebrated throughout the entire year. Here is my tribute to my absolutely incredible dad.

To My Friends & Family…

As many of you already know, I am a very sentimental person with lots of love to share. I feel I am so lucky and fortunate to have so many wonderful friends and family, and my heart bursts thinking about all of the incredible people in my life.

We support and love each other unconditionally.

We help each other to stay positive when life gets rough and together we roll through the good and the bad times in our lives.

We celebrate our victories.

We talk about our dreams. We encourage each other to reach towards our dreams.

We learn more about ourselves more and more each day and develop into the people we were meant to be. We begin to learn that we shape our own destiny and that the only person holding us back from our dreams is ourselves and our own self-doubt.

When distance keeps us apart and we are able to reconnect, we act like no time has passed and pick up right where we left off.

We laugh.

We cry.

We push each other outside of our comfort zones to help each other grow.

We watch The Bachelorette “together” but in separate houses and some of us in different time zones and call it a girls’ night so that we can feel like we are hanging out together.

We remind ourselves that everything happens for a reason when life doesn’t go as planned and that it will all work out in the end.

The bonds of friendship are extremely strong. They hold up to life’s demands, distance, and time. I know no matter what life brings me, I will be able to get through it with the help of friends and family, and I feel so lucky to be able to say that.

I am not one to be shy about saying “I Love You.” If I feel it, I will say it. You never know which day will be your last, so make sure you tell the people you love just how much you love them.

Gluten-Free Hippie Loaf

As I mentioned at the beginning of the week, I didn’t really plan on too many meals for the week. It was a busy week and Dana and I were both gone quite a bit so the only meal I really planned was for a recipe I got from a friend called Hippie Loaf. The recipe is from the Happy Herbivore and it is a vegan meatloaf made with loads of veggies obviously, quinoa, and a little ketchup and soy sauce.

I followed her recipe pretty closely except for I forgot the 3 Tablespoons of brown rice flour (I was going  to use almond flour because that is what I had on hand) so I completely omitted it. It turned out great without it!

Here is her recipe!

Happy Herbivore’s Hippie Loaf

  • 1 15-oz can black beans, drained and rinsed (I used cooked black beans from dried)
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 large carrot, shredded
  • 2 celery stalks, shredded
  • 1 cup mushrooms, coarsely chopped
  • 1 cup cooked quinoa
  • 1 Tbsp Italian seasoning
  • salt and pepper (this was not in the recipe)
  • 3 Tbsp brown rice flour  (I omitted)
  • 2 Tbsp soy sauce (I used low-sodium)
  • 2 Tbsp ketchup (Ya’ll know my love for ketchup—I used about 2 Tbsp in the loaf, and then slathered it on top of the loaf as well. I used homemade ketchup).
  1. Preheat oven to 350 degrees F.
  2. Grease a standard 8-inch loaf pan and set aside.
  3. Mash black beans in large bowl and combine all ingredients until evenly combined.
  4. Transfer to prepared pan and pat down firmly using hands.
  5. Bake for 45-60 minutes until firm and brown on the outside.
  6. Allow loaf to cool for 5-10 minutes before slicing and serving.

I really didn’t have any idea what to expect before taking my first bite. The loaf smelled fantastic as it baked in the oven, but that doesn’t always mean it’s going to taste great.

Once I took my first bite though I was very impressed. I believe my first words were, “I could be a vegan” because this loaf was stellar. I don’t necessarily want to be a vegan, but I was just saying it probably wouldn’t be the end of the world for me since I don’t love meats or cheese or milk, however I would miss eggs quite a bit. I respect vegans entirely, it’s just not something I am interested in at this point in my life.

The seasonings and ingredients in this loaf were simple and the dish was so flavorful. That’s what I love: simplicity.

It didn’t hold up quite as well as a standard meatloaf when I went to plating it, and this could have been because 1. I didn’t wait long enough for it to cool before cutting and serving it, or 2. I forgot the flour, or 3. A combination of the two factors. But it didn’t matter! I enjoyed it just as well!

There are a couple of tweaks I would like to make to this loaf recipe to better suit my taste buds and to make it “my own”, but all-in-all I thoroughly enjoyed it and would recommend this recipe to all.  I can’t wait to make my own version of Hippie Loaf!

Switching gears…to catch you up quickly on the rest of my week. On Wednesday I stopped over at mom and dad’s for dinner. Mom coaxed me over for her French Onion Soup. Kidding, like it takes any coaxing to get me over there. 🙂

I’ve said it before and I’ll say it again, her French Onion Soup is my FAVORITE soup! I’ve ordered this soup at many-a-restaurants in my time, and I have never ever found one that compares to hers. And what’s ironic about that is that my mom uses the simplest recipe for this soup. No wonder I like it! I’m a simple gal.

The soup was everything I hoped for and more and even better, I enjoyed it in the company of my wonderful parents.

I am in a GREAT mood today. I am hopeful that the sun is going to shine for a little while today. My plants need some serious sun, and I could really use a touch of Vitamin D myself! I hope you all have a glorious Friday! Keep on smiling my friends!

Sweet Orange Chicken

Well this weekend just like every other weekend, flew by very quickly, but it was packed with a lot of productivity and relaxation too!

A little change-up to my standard pb and banana breakfast. I made bananas with strawberries with a spoonful of homemade almond butter. This batch of almond butter turned out perfectly and I am so diggin’ it.

Throughout the course of the weekend I munched on a couple of these ALT bars by LARABAR which they so kindly sent me last week. This is their new protein bar made from pea protein that has 10 grams of protein. These bars are absolutely delicious and satisfying. So far I’ve had the peanut butter cookie (obviously I chose that one first) and the lemon pound cake. I let Dana taste test too and we both gave them two thumbs up.

Oh the joy of finding a package of these bars on your front step when you aren’t expecting it! I don’t think I could ever get tired of it.

Dana and I actually sat down and watched a movie on Friday night. We have been wanting to see Silver Linings Playbook for quite some time, and by chance I checked out our local RedBox and it was actually there!

Holy cow, have you seen this movie? If you haven’t seen it, please do. It was a little dark but there was humor throughout the entire movie which lightened it, and the ending made me happy. I seriously loved it. And I love Bradley Cooper and Jennifer Lawrence.

This weekend we worked on the yard: we pulled weeds, cut the grass, planted flowers in the window boxes, mulched around one of our front trees, painted the exterior trim that needed touching up, planted herbs in pots, and hung up a decorative piece above our garage door. It felt great to be so productive and the house is really shaping up!

This weekend we celebrated my father-in-law’s birthday. The weather was beautiful that evening. We grilled burgers and sat outside for a while and soaked up the sun. It felt like a summer evening finally! We finished off the birthday celebration with Dairy Queen ice cream cake which I thoroughly enjoyed.

To end the weekend, I threw together a sweet and tasty dinner in the wok…

Sweet Orange Chicken!

In the wok I cooked one large chicken breast in a touch of sesame oil. I then added the veggies, some orange juice, coconut aminos, ground ginger, garlic, rice wine vinegar, honey, and salt and pepper. I let it all cook through for a while (more detailed recipe below) and then served it up!

I was going to chop up some iceberg lettuce and have that as a base under the orange chicken but I completely forgot. You could serve this just as I did, or with cooked quinoa or  brown rice.

It was sweet with a little hint of salty which is a flavor combination I adore.

Sweet Orange Chicken
Print
Serves: 2
Ingredients
  • 1 tsp sesame oil
  • 1 large boneless skinless chicken breast, or 2 small, cut into chunks
  • 1 cup onion, diced
  • 2 garlic cloves, minced
  • ¾ cup carrot, diced
  • 1 cup sugar snap peas, chopped
  • 1½ cups broccoli
  • ½ cup red bell pepper, chopped
  • sprinkle of dried ground ginger
  • 2 Tbsp coconut aminos (or soy sauce)
  • 1-2 Tbsp rice wine vinegar
  • ½ cup orange juice
  • 2 Tbsp honey
  • salt and pepper
  • 1 Tbsp orange zest
Instructions
  1. In a wok or large sauce pan, heat sesame oil. Add chicken and cook for about 6-7 minutes until almost completely cooked through.
  2. Add vegetables and cook for 2-3 minutes, stirring occasionally.
  3. Add in remaining ingredients; let cook and boil for 4-5 minutes.
  4. Turn off heat, use microplane to grate 1 tablespoon of orange zest over the chicken and veggies. Serve warm with brown rice, quinoa, or enjoy by itself!

 

You can use up whatever veggies you have on hand for this recipe. It is truly so easy (like the majority of my recipes) and it was something fun and different from your standard stir-fry!

The New Kitchen

Hoowddddy, howdy, howdy, how. I just finished my morning cup of joe and I am feeling fantastic! I would feel fantastic either way but it really gives me that extra little boost some days.

How was everybody’s weekend? Mine was full of family time so in my book that means it was a great weekend. We celebrated Dana’s grandma’s birthday, my dad’s birthday, and had an early Mother’s Day celebration with Dana’s family. So many wonderful people to celebrate and celebrate with. The fun continues over the next couple of weeks with Mother’s Day and a few more birthdays to come! Wooo!! I love it.

I’m starting to adapt to this whole giving the camera a rest on the weekend bit, so again, I didn’t snap too many photos. Here’s a few that I did get…

Isn’t it beautiful?! I really don’t think it would be possible for me to be more excited about these countertops. They are exactly what I was hoping for. We were able to pick our the exact slab of granite that would go into our home. It’s hard to imagine what it will look like in your kitchen until it is actually in your kitchen and then there is no turning back. I was thrilled at the outcome. I feel like we have a brand new kitchen. It motivates me to do more baking and cooking too!

So there you have it. You can finally sleep tonight now that you have seen the official reveal. 😉

A Weekend Full of Great Company

Well, hello hello! It’s Monday and it’s gloomy BUT I am going to stay positive for all of us and say it is going to be a GREAT day.

I “disconnected” myself yesterday from the phone and blog. I say that in “quotations” because I still had my phone on me at all times and browsed Twitter, Facebook, Instagram, etc., but I gave the photo snapping a rest for the most part. By the way are you following me on:

Anyway, I do have some catching up to do from Saturday! It was a super fun day!

Saturday Morning

The rain held off and Dana, Moose, and I were able to hit the pavement for our Saturday run. We mapped out five miles around the neighborhood and they were five hilly miles. We live in a very hilly neighborhood which is both a blessing and a curse at the same time. It’s great for training but sometimes you just want an easy flat run, and we can’t get that around here.

Moose’s paws held up just fine this time around. Last week they got a little scraped up and were bleeding. He is toughening up quickly again now that spring is here. Yay!

Saturday Afternoon

In the afternoon I headed out to Minneapolis to meet up with a handful of other Minnesota bloggers for our first ever MN blogger meet up. Katie from Running4Cupcakes and Becky from Olives’n’Wine (remember that awesome cupcake guest post she wrote for me in March?!) organized this get together and I am SO happy they did.

We met at Sebastian Joe’s (the one off of Franklin) which I must say has some spectacular sorbet. As you know I adore ice cream but I had plans to go out to dinner that evening so I didn’t want to risk an upset stomach, which is why I stuck with the dairy-free sorbet. Any other day, you know I would choose ice cream, let’s be real.

I went with the Strawberry-Basil Sorbet and it did not fail. It was incredible; so fresh, with huge hunks of strawberries, and a hint of basil. It was very refreshing.

Your mouth watered didn’t it?

I surprisingly wasn’t too nervous to meet up with these girls. In the blog world you kind of feel like you know each other from reading each other’s blogs and commenting back and forth.

We all said it was kind of weird at first only because we already “knew” the little tidbits about each other that most people would use to start-up conversation, so our conversations hedged a little further right away.

We chatted about our lives, blogging, social media, etc. We all got along very well and the hour and a half we were there seriously flew by so fast. The conversation was great! We are planning another meet up in the next month or two so if there are any other MN bloggers out there who are interested in meeting up, throw an email my way! We are hoping to make the next meet-up a bit more active—like a walk around the lakes or something.

Such a great group of ladies! I’m so happy I had the chance to meet you all! Thanks again Katie and Becky for organizing this, you rockstars.

Saturday Evening

In the evening we had a dinner date with my parents and Dana’s parents. We met at Axel’s Bonfire which is a cozy and warm restaurant that specializes in wood fire cooking.

I ordered the Barbacoa Tacos which had seasoned beef with pineapple relish and chipotle cream. I asked if they could prepare them in lettuce cups instead of flour tortillas and they said of course. Never hesitate to ask for modifications to your meal. Remember you are paying for it, you may as well get it how you want it and 9 times out of 10 they will be able to make the modification for you.

Check out these beauts! I had to pick off some of the peppers on there because they were  making my mouth feel like fire, but this dish was very tasty.

It came with beans and rice so I ended up scooping the beans onto my taco as well as the pico de gallo on top of the rice.

Besides the food being great, the company was even better. I adore my families and always enjoy spending time with them!

Sunday

Sunday was our usual gig; breakfast, paper, coupons, hanging out with the pup, grocery shopping, lunch.

In the afternoon we headed over to my mom and dad’s house because my brother Scotty and his girlfriend Nicole were in town!

We spent the afternoon and evening hanging out, eating a totally nummy dinner (rotisserie pork loin, brussels sprouts, broccoli, salad, and potatoes), and catching up on life. I was so happy to be with my family again! Ahhh I just love them so much.

We made it home just in time before the sun went down to take Moose for a little stroll around the neighborhood. We watched the Academy of Country Music Awards when we got home and then called it a night. This weekend FLEW by. What the heck?! Haha, it always does though.
