Easter Celebration #1

I am really enjoying myself this relaxing Sunday. I’m going to keep this short and sweet because I want to continue this day of relaxation, but I wanted to give you a quick update from last night.

We had plans over at Dana’s parent’s house to celebrate belated birthdays for both Dana and his mom, Sue, and also to celebrate Easter a little early.

As always, there was LOTS of delicious food! We started with some appetizers: veggies, almond crackers, and an avocado/edamame/pesto dip which was excellent!

veggie app

For our main course we had a chicken, shrimp, and artichoke sauté alongside tabouli and homemade almond biscuits (I brought the biscuits). Holy moly everything was so good!

Next up, dessert of course. We were celebrating two birthdays AND Easter afterall. Sue picked up a cake from Wuolett’s Bakery in Edina. To those of you who have never experienced this cake, let me tell you, it is fantastic!

The one she bought was called Princess Torte and it was raspberry and Bavarian cream layered with genoise (egg-rich golden cake) and wrapped in pastel almond marzipan.

It was very refreshing and light tasting.

It was such a nice evening and now we can say Dana’s birthday celebrations are officially over and Easter celebration #1 was a success!

I hope you are all enjoying your Sunday. Catch up with you later!

Fajita Salad and a Fun Surprise at Mall of America

There’s nothing like starting your day off with a veggie and fruit packed smoothie. Yesterday I whipped together a smoothie made with frozen banana, kale, kefir, aloe vera juice, peanut butter, and chocolate egg white protein powder and it was delicious.

smoothie

I hit the living room for an arm workout, and then ended with a 30 minute incline walk on the treadmill. I’m slowly but surely getting back into more of a routine with the workouts again.

Then I was off to run a few errands and spend some quality girl time with my Betsy.

betsy and melanie

We both had the day off of work and we haven’t hung out since our lobster feast a month ago which is WAY too long if you ask me, so we planned a little get together. We were cozy and warm at my aunt and uncle’s house and we chatted away as Despicable Me played on the TV in the background. It was such a relaxing afternoon and I loved every second of it.

In the afternoon Dana and I did some shopping—we are looking for new countertops for our kitchen! Once dinner time rolled around, I was not in any mood to do any cooking and it just so happened that we had a gift card for Baja Sol that we needed to use. You may remember a couple of months ago when we tried to use this gift card but ended up going out for Thai food instead. Yup, it’s that same card, but we actually used it this time!

We went to the Baja Sol located in the food court at Mall of America. We made it up to the third floor and started walking towards the food court. Inevitably we parked on the opposite side of where we needed to be, but I was happy because it felt good to move my legs. Anyway, as we approached the rotunda we started hearing some music playing. When we got close I saw the sign (…and it opened up my eyes…), I got SUPER excited. Gloriana was playing at MOA! Maurices was sponsoring their performance. How cool, right? We didn’t stick around for long because there were so many people and I really couldn’t see them too well, but I was happy to even get the one glimpse that I did.

gloriana moa

At Baja Sol I ordered the veggie fajita salad. This monster was piled high with lettuce, sautéed onions and bell peppers, tomatoes, fresh onions, cheese, black beans, and a heaping spoonful of guacamole (I shared some of the gauc with Dana because I am a very sweet wife).

baja sol baja sol baja sol

I didn’t touch the shell because I’m still trying to stick to gluten-free and it was a flour tortilla, but I managed to chow down a good majority of the salad! It tasted really good and probably even more so since I didn’t have to put it together myself. It was a perfect Friday night treat.

Now I am off to run with Dana and the pooch around the neighborhood before heading out for a day full of friends and family. It should be a good one! Catch up with you all later gators.

Frozen Yogurt Cake & Almond Cookies

The snow is coming down here in MN this morning. I can’t say I’m thrilled about it after all, spring begins on Thursday. BUT, I am thinking positively that this is our last snow of the season.

I’m pretty sure Moose is even bummed about the snow and he LOVES snow.

moose

I have a little catching up to do from the past couple of days. On Saturday evening we headed over to my mom and dad’s to celebrate Dana’s birthday. Kev met us there too and the five of us had a Greek feast of a dinner thanks to mom and dad.

kabobs

They even had Mediterranean-like music playing when we got there. Yes, they’re that cute.

I said I would bring the birthday dessert and Dana had decided he wanted an ice cream cake. He’s talking a homemade creation which really couldn’t be much easier.

At the store I had him pick out what kind of ice cream he wanted and then what cookie. He picked a Moose Track Frozen Yogurt and Oreo Birthday Cake Cookies

How to make ice cream or frozen yogurt cake

Birthday Frozen Yogurt Cake

Ingredients

  • 1 tub of favorite ice cream or frozen yogurt
  • 1 package of favorite cookie (try choosing a cookie that would taste good with the ice cream selection)
  • 1 Tbsp butter, melted

Directions

  1. Remove frozen yogurt from freezer.
  2. Line a bread pan with plastic wrap; set aside.
  3. In a food processor combine half of the package or Oreos with 1 1/2 tsp butter. Process until it reaches texture of coarse sand.
  4. Pour crumbs onto bottom of prepared pan and use fingers to press them down into the pan forming the first layer.
  5. Next, scoop all of the frozen yogurt onto the crumb layer; use fingers to pat it down.
  6. In the food processor, add the rest of the Oreos and the remaining butter. Process again, but this time leave it a bit more chunky.
  7. Top the ice cream layer with the last layer of crumbs. Garnish if you like. Place in freezer to set and VOILA you have homemade ice cream cake in about an hour!

**If I were to do it again, I would have probably added fun colored sprinkles to the top.

oreo birthday cake

I topped everyone’s cake with some Cool Whip to really add that extra wow factor.

oreo birthday cake

I am still passing on the extra sugars at this point, but everyone else gave this cake rave reviews! It is such a fun cake idea for anyone, because they get to choose exactly what goes into it! I made this other Oreo ice cream cake a while back—feel free to check it out!

After dinner we all just relaxed and chatted, and Abbie could hardly keep her eyes open. She was exhausted from all of the socializing!

Sunday

Happy St. Patty’s Day just one day late! We got real crazy…we slept in until 8:30 and read the paper, cut coupons, went grocery shopping, and get this, we even went to Petco for dog food. Talk about a CRAZY morning! 😉

Sunday mornings are my absolute favorite.

After restocking our fridge I threw myself together a spectacular salad with mixed greens, peas, avocado, chicken, sunflower seeds, olives, olive oil, and a piece of cheese and a Claussen pickle (my favorite pickle) on the side.

It’s green!

salad

We had another family birthday party to celebrate in the afternoon so we got all prettied up and threw on our Get Lucky 7k sweatshirts—mine was from last year and his from this year. How embarrassing if we would have worn the SAME one. 😉

st. patricks day 2013

For dinner there were MORE veggies on the menu in the form of Veggie Hash or I like to call it Kitchen Sink Hash. We threw all of the veggies we had into a pan which included zucchini, green bell pepper, onion, broccoli, kale, and black beans. We gave these veggies a good sauté. Then we plated them up with some chopped tomato, avocado, cilantro, cheddar cheese, and topped it off with an over-easy egg.

veggie hash

Once again, this dinner never seizes to please me. It’s always good!

Since I am still watching my sugar intake until I am 100% healed from the UC, I made myself a little treat to help satisfy my slight sweet craving I had last night. I found a recipe off Pinterest for Easy Almond Cookies and were they ever! You can check out the recipe here. The only changes I made were I used honey instead of stevia, and vanilla extract instead of almond. If I HAD almond extract in the house I absolutely would have used that.

simple almond cookies

These cute little guys turned out well, and best of all they were so easy! Only 5 ingredients. They satisfied my sweet tooth which was what I was hoping for.

I suppose I should get this little lady ready for the day. I’m hoping the roads aren’t too terrible. Chances are they will be fine, it’s the drivers I usually worry about more.

Keep your head up and Happy Monday!

A Relaxing Sunday & One of My Favorite Soups

This weekend flew by just as fast as last weekend if you ask me. We had a very low-key weekend and I loved every second of it.

Sunday

I was feeling incredibly energetic Sunday morning and just in an overall good mood. That was most likely due to the excitement of our upcoming vacation and a good night’s sleep. I was feeling good.

For some reason my appetite has been a little “off” lately. I’m thinking this may be because of the Specific Carbohydrate Diet. I was hungry for breakfast but couldn’t decide on anything that sounded good so I put myself together a combo that I know is easy on my tummy and usually pretty appealing : peanut butter and banana of course.

banana peanut butter

We went about our standard Sunday errands, came back home and put groceries away, and by 11:00 I was hungry again. I was hungry but again, nothing sounded good to me and my highly energetic self from the morning was starting to take a nose dive.

I pulled out a bowl of homemade turkey veggie soup from the freezer.

turkey veggie soup

It was simple and comforting to my belly. I also had a microwaved apple…

apples

Later in the afternoon I had a banana, a bite of peanut butter, and some pistachios.

I have been in a bit of a workout rut this past week. I just haven’t had the highest amount of energy. I was full of energy yesterday morning but once the afternoon hit I was definitely losing it.

I wanted to at least move a little bit, so I headed down to the treadmill for a half hour walk. I  did do a few other strength exercises, but I really wasn’t feeling up to it, so I stopped.

Maybe I just needed it to be a low-key day.

Later in the afternoon I headed over to mom and dad’s for dinner. I got my cuddle time in with the little one which always does a great job of boosting my mood.

melanie and abbie

Dinner was one of my all-time favs: French Onion Soup.

french onion soup

I went with the SCD version without the bagel chips and cheese and it was STILL outrageously delicious. I had two bowls and asked if I could take one home for leftovers this week! I swear I could try and make this duplicate recipe at home and it wouldn’t taste the same. Mom has to make it. 😉

french onion soup

After dinner we got cozy on the couch and sipped on hot water with ginger and honey while we watched the Oscars, and then later called it a night. I really like the hot water with ginger and honey, like REALLY liked it. Could this be due to the fact that my dad made it for me? It really is true that food tastes better when someone else makes it for you.

It was a very relaxing Sunday and I feel like more Sundays should be like this one.

Now we are onto Monday and I have a list of things to do as tall as the Eiffel tower, SO I better get a move on!

Happy Monday to all!

Question of the day: Do you think food tastes better when someone else makes it for you?!

A Weekend of Cozy Restaurants

Well hello there my friends! I am having quite the fabulous weekend. How about you? This post is a quick little recap from the weekend so far. ENJOY!

Saturday

On Saturday morning Dana and I met up with my parents and my grandpa at the Copper Dome in St. Paul. Copper Dome is one of my favorite places to go to breakfast with my grandpa. Growing up I would always order from their lengthy pancake menu, and enjoy a cozy ambiance with my family.

copper dome

Fun fact: President Obama ate at Copper Dome one time when he was visiting Minnesota! Kind of neat. 🙂 Who knows, maybe he sat right where we sat?

family at copper dome

I hadn’t been there in years, and this time around I decided to go a different route for breakfast instead of the usual pancakes. I chose a platter with two eggs cooked however you like, hash browns, and turkey bacon. It was definitely a protein-packed breakfast that held me over for a long time!

copper dome

I had a lot of fun being back there with my family!

Across the street I couldn’t help but notice a second-hand store called Elite Repeat and watched many ladies walking out of there with very cute dresses in their hands. I had to go take a peak for myself. I was looking for a new swimsuit cover up for vacation after all.elite repeat

What do you know?! I just happened to find one that I loved. It had never been worn and was $16. I’d call that a deal. Plus it’s animal print. So cute. Win.

Alright, a little less talk and more photos…

Dinner was a veggie-packed salad.

Fast-forward to Sunday Lunch…

We met up with Dana’s parents at a restaurant called Porter Creek Hardwood Grill. They have a huge wood burning stove that they use for flatbread pizzas, and they also specialize in rotisserie chicken. Num.

porter creek

I had a seriously hard time deciding what I wanted. It was between the chicken chowder soup with a side caesar salad, or the Toasted Quinoa Chicken Salad. I went with the quinoa salad.

quinoa salad porter creek

Unfortunately my cold decided to act up right around lunchtime, and I wasn’t able to taste any of my lunch. I’m pretty sure it was amazing though. 😉 I saved half of it to bring home so I could enjoy it once my senses came back around.

quinoa salad porter creek

I really enjoyed this place not only for the food but for the ambiance. The snow was flying down outside, and we were inside this warm and toasty restaurant, with a fire going in the fireplace, the smell of the wood burning stove which smelled like a campfire, italian inspired motif, and we were in a super comfortable booth. It really made me feel all warm and fuzzy.

IMG_1669 IMG_1670It was a great weekend full of family and food. Now, that is all for now. I am going to enjoy the rest of the weekend.

Be on the lookout for a super amazing giveaway tomorrow!!!

How was your weekend? Do anything fun? Have a relaxing weekend in?

A Typical Day of Meals & Snacks From My Childhood

Happy Thursday to you all. I hope everyone is having a good week. I’m still fighting to feel well today. I got nearly 9 hours of sleep last night so that will hopefully help me heal faster. Sleep is so powerful.

Yesterday I went into work, fought through the morning but then felt so miserable that I ended up going home in the afternoon. I planted myself on the couch and that is where I stayed all afternoon and evening minus getting up to get food and drink.

I hesitate to even share my eats yesterday because they are not the most appealing or exciting, but I’ll do it anyway.

Breakfast was an old favorite of Parkers Farm peanut butter, banana, cinnamon, and a light drizzle of honey.

Lunch was seasoned bone broth with chicken and carrots, applesauce, and raw carrots.

bone broth

Snacks: Cashews, raisins, and almonds…

nuts and fruit

And dates with peanut butter which is my latest obsession…

I spent the afternoon trying to nap which was turned out to be an unsuccessful attempt  (why is it so hard for me to nap?!), watching Food Network, reading, and catching up on blogs. Pretty much I sat on my rear all afternoon and rested.

When dinner rolled around I was very hungry, but had no clue what I wanted. Eventually, with the help of Dana, he made up a plate of roasted broccoli with parmesan with a piece of cooked turkey deli meat with an egg on top. It was very random but it ended up being a nummy combo.

roasted broccoli with turkey and egg

I spent the rest of the evening watching an episode of Glee that I had recorded, Whitney, and Modern Family. I love those shows oh so much.

**************

Switching gears now…

After reading a post from the blog A Dash of Meg, who wrote a post about what a typical day of meals and snacks looked like for her growing up, I thought it would be fun to walk down memory lane as well. Shall we?

A Typical Day of Meals & Snacks From My Childhood

Breakfast

In the morning I would stumble down to the kitchen and pour myself a bowl of cereal with  milk or make a warm bowl of Cream of Wheat. Mom always had the cupboard stocked full of good cereals, but some of my favorites were Cinnamon Life and Honey Nut Cheerios. Num! Many times I would sit next to my mom while she read the paper and crunch away at my bowl.

honey nut cheerios

A bowl of cereal now with no additional protein on the side (besides the small amount of milk on the cereal) definitely wouldn’t tide me over very long any more these days, but cereal does make a great snack or you could pair a bowl of cereal and banana slices with a protein rich egg on the side and call it a more well-rounded meal.

I don’t recall snacking very often between breakfast and lunch, so when lunch time rolled around, I was always very hungry. Sometimes I would buy a juice from the soda machine, but not too often.

Lunch

Most of the time I preferred to bring a bagged lunch aside from those random days when I chose to have the taco salad bar or italian dunkers. It’s funny how I always seemed to have a tummy ache after eating the white bread and cheese loaded italian dunkers. I have learned so much about my body and health since then!

Mom made my lunch for the longest time which I am so thankful for, and my usual comfy tummy lunch was peanut butter and jelly on whole grain bread, baby carrots, an apple or a banana, and then usually one little treat like a cookie or fruit snacks or pudding.

pb j

Snacks

After school I was always ready for a snack. Often I would go over to my aunt’s house (Betsy’s mom and dad) and hang out there for a while. Betsy and I would practice our dance steps, and then we would have a snack. My favorite afternoon snacks at her house were freshly popped popcorn and graham crackers with peanut butter and mini chocolate chips!

superbowl parmesan popcorn

graham crackers

At home, my favorite snacks were probably another mini bowl of cereal or pretzels. I was quite the carb loader back then. 🙂

Dinner

Later in the evening I would either go to dance and then come home and eat dinner, or eat dinner and then go to dance. As I got older I had more and more classes. Mom did a great job of having dinner ready for all of us, even though we were all going out the door here and there to practices, classes, study groups, etc. If someone wasn’t home for dinner, mom or dad would always plate up a serving and put it in the fridge for when they got home.

Some of my favorites were taco night, spaghetti, fajitas, and lasagna.

8006_ground_beef_soft_tacos

spaghetti with meatballs

But truly, I loved everything my mom made. I was never a picky eater and still am not to this day!

In the evening on special occasions, mom would whip us up a batch of orange julius which I believe was made with orange juice concentrate, milk, vanilla, and ice. I’m pretty sure that was it but don’t quote me on that.

orange julius

It was such a tasty treat and I always got so excited about them. I may need to try to recreate that bad boy.

So, there you have it! I was definitely a carb queen. I needed a lot of energy and brain fuel to get me through the activities of the day, and still do of course, I just get it in different forms now.

I remember many “tummy aches” growing up. I wonder if they can be attributed to dairy products and gluten? It is quite possible I guess. I remember having to plug my nose in order to finish my milk. My mom spent a lot of time researching gastrointestinal problems and we tried many different approaches to get me to feel better. At 12 years old I was diagnosed with Ulcerative Colitis.

It’s all very interesting to me. I am learning more and more about myself every day and I continue to be amazed by the human body. It’s a good thing I decided to become a dietitian! Now my mom (who went to school for nutrition as well) and I really have good nutrition conversations.

Alright, time to go get ready for the day. I hope you had as much fun strolling down memory lane as I did.

What did you eat growing up?

You Can’t Always Win

Yesterday I mentioned I was fighting off some sort of cold bug and I had big plans of squashing it before it made its way any further into my body, but I’m afraid it has won.

I did everything in my power to ward it off. I took all of my vitamins as I always do, I wash my hands, I got plenty of sleep, I made myself a fruit and veggie packed smoothie for breakfast…

smoothie

I sipped on warm water with lemon and honey, tea, and water all day, crammed fruits and veggies like it was my job, and even attempted to get a workout in to get the blood circulating and move this thing out…

  • February Fitness Challenge: I completed this ab workout along with 45 minute run/walk on the treadmill. My strength focus was on the core yesterday.

I was lovingly greeted/interrupted while doing the ab workout by this needy face…

moose moose

Maybe he was trying to tell me about the spider crawling on the floor that I noticed shortly after he left while holding my plank-a-day? If so, that was sweet of him.

In the evening, my mom, dad and brother Kevin came over to join Dana and me for tacos. Abbie and Moose have yet to become buddies, so Abbie made her way over to her little roost where she overlooked the situation.

abbie

I used the chicken I had used for my bone broth for the chicken tacos. I diced the chicken meat, added it into my pan on the stove top, added bone broth, cumin, chili powder, garlic powder, onion powder, paprika, and salt and pepper. I let it all simmer together until the liquid evaporated.

I also made refried beans with black beans which I cooked on the stove, again with cumin, chili powder, garlic powder, onion powder, salt and pepper (no paprika), salsa, cilantro, and some diced tomato. I added a touch of bone broth as well to get it moving along and let it simmer for a short while.

I got all of the fixings together and then dinner was ready. Tacos are so easy to make and always so darn good. I ate my tacos in lettuce cups but we also had corn tortillas for everyone.

chicken tacos

After dinner, we all hung out and I played beauty shoppe with mom. I’ve never been too good with hair but I like to try being creative every once and a while, and mom is the perfect client. Her hair is the perfect texture that holds well to styling, and I’m pretty sure she is okay with the free head massage. Who doesn’t like getting their hair fanangled? I know I do.

mom

I also thought a little TLC from the family may help fight this thing off, but unfortunately this morning I woke up feeling worse than yesterday. The darn cold definitely got me much to my dismay. You can’t always win as hard as you may try. 🙂

Let’s just hope I feel better as the day progresses. Even though it got me, I won’t let it stick around for long. Okay, enough of my belly aching. I hope you all are feeling well, staying active, eating healthy nourishing foods, and getting plenty of sleep. Take care!

Birthday Bash at Comedy Sports

I don’t know about you guys but I had a pretty great Friday. Not only was it the best day of the week but I also got to celebrate my Betsy’s birthday. Last year we went to Betsy’s place and hung out, played games, and I made these insanely amazing Oreo Bars. This year we celebrated at Comedy Sports in Calhoun Square in Minneapolis.

Before I get into that, one brief back track. For dinner I made meatloaf burgers.

I mixed lean ground turkey with chopped olives, onion, a dash of garlic powder, and cracked black pepper. I formed them into patties and cooked them on the stove top. I topped mine with mozzarella cheese and served it with sautéed mushrooms. Delicious.

turkey burger

Okay, now back to the birthday celebration. We met the birthday group at Republic Bar in Calhoun Square. As someone who doesn’t visit that area very often I have to say I was blown away at how nice it was. Not only Calhoun Square, but Republic as well. I felt like I was in Chicago or New York. I loved the feeling of it.

The beautiful birthday girl and me, and NO we didn’t plan on matching. 🙂

betsy and melanie

Right across the hallway from the Republic was Comedy Sports. So after a little mingling and libations, we headed across the hall.

comedy sports

Comedy Sports is an improvisational comedy show played like a game. There are two teams of three comedians who compete for the most laughs. There is a referee who calls the shots, names the games, and interacts with the audience taking suggestions for objects in the skits. If you’ve ever seen ‘Whose Line is it Anyway?’, then you know exactly what I’m talking about.

I was fascinated by the quick wits of these comedians. There are given a topic and within seconds are asked to perform it. My brain does not work like that at all. It takes me a little while to conjure my thoughts. I guess that’s why I’m not an improv comedian or a politician or a lawyer, among others. 🙂

I thought the show was very funny. I thought they would pick on the birthday girl but they didn’t, and I think she was more than happy about that. Tickets were only $12, actually $11 because we got a group discount. I think that’s quite the deal when you consider that is pretty much the same as going to a movie. Right? I haven’t been to a movie in a good year or two but last I remember it was $10 or so. It is a great way to spend a Friday evening.

I can’t decide though if I enjoy improv comedy or stand-up comedy like we saw at the Joke Joint more. They both make me laugh which is a healthy wonderful thing.

comedy sports

After dinner we made a stop at one more bar before calling it a night.

dana and melanie

I had so much fun celebrating last night with my little snarky. I love that lovely lady more than I could ever say.

Enjoy your Saturday my friends. I am off to get a workout in, take down Christmas decorations, and RELAX.

Question: Have you ever been to a comedy show? What did you think?

5 Slow Sweaty Miles With No Boredom!

Thank you all for the sweet and supportive comments yesterday! It’s definitely an exciting milestone!

It’s time to catch you up on the rest of the weekend.

Saturday

We were out of bananas so I couldn’t have my typical pb and b breakfast, but settled for a piece of almond bread with peanut butter instead.

Eventually I made my way downstairs to the treadmill where I got warped into Dance Moms and ran a slow pace for 5 miles. It felt great to get sweaty and was one of those runs where I felt like I could just keep going, going, going. I didn’t experience the treadmill boredom one bit that day. I can’t believe I just admitted I was watched Dance Moms.

Lunch was completely random—it started with a fail of a smoothie. I tried adding broccoli and I just couldn’t get past the flavor and texture it added, so I had to dump it. I hate wasting food so you know it had to be pretty bad. Next I made a simple protein drink with almond milk and Jay Robb’s chocolate egg white protein powder. I gave it a mix and drank it up. It was okay but nothing was tasting great.

So I made lunch a snacky deal. It involved an apple, some veggies, almonds, peanut butter, dates…you name it and I probably snacked on it. 😉

Moose got a belated Christmas gift from us (clearance right now at Petco) which he absolutely adores.

moose

For dinner we had plans with Dana’s family. For Christmas we told them we wanted to buy them dinner from one of our favorite restaurants (and also the restaurant we had our groom’s dinner), Mediterranean Cruise Cafe, and bring it over to their house and watch our wedding video with them.

It was a feast and it was so incredibly delicious and veggie-packed. We had tabouli, hummus, baba ghanoush, kabobs, gyros, greek salad, falafel, and more! med cruise cafe

After dinner we cozied up by the fire and watched our wedding video. It is SO fun to relive the wedding.

Sunday

Sunday was pretty lazy but we did manage to get to the grocery shopping and totally stock up on produce. It’s hard to see in the photo but we now have: baby cucumbers, carrots, celery, broccoli, mini bell peppers, lettuce, blackberries, apples, avocados, oranges, lemons, limes…

fridge

…mushrooms, black beans, onions, bananas, and that’s not to mention what’s in the freezer! I think we are set for a while.

fridge

Dinner was BBQ crock pot chicken. I placed two large chicken breasts into the small crock pot, slathered in BBQ sauce, a sprinkle of garlic powder and ground mustard, set it on low and covered for about 4 hours and voila. Dinner was ready!

This is one of my favorite homemade salads and I am always reminded of Famous Dave’s  pulled pork salad when I try to make this: mixed greens, corn, avocado, pickles, cheddar cheese, and pulled BBQ chicken. Seriously num.

I’m making this post nice and short and sweet for ya’ll today. I have a few things to do this morning and I gotta get ready. Have a great Monday friends!

Surround Yourself with Positive People

Can I get a “whoop whoop” for Saturday?! It was so nice not waking up to an alarm clock this morning (sigh). I am feelin’ completely rested and ready to go.

I had a fantastic day yesterday. In the morning I had an appointment and then made my way to the gym for a quick sweat sesh. Then off I went to meet up with my friend Courtney at Whole Foods.

Courtney and I were both completed our Dietetic Internships at Viterbo University in La Crosse, WI. When we were first accepted into the program, we were sent a list of information of all the other interns. Ironically, Courtney lived about 15 minutes from my parent’s place. We met up one time before we moved out to Wisconsin so that we could both have the comfort of knowing at least one person out there. We had the immediate bond of being “Twin City Girls.”

courtney and melanie

Throughout the 11 month internship, our friendship continued to grow. We shared many emotions together and many memories both good and bad. Courtney was my saving grace when I was running a 105°F fever. She picked me up in no time and rushed me to the Urgent Care without hesitation.

We related on so many levels; both having such love for our families and being home. We struggled through the emotions of being away from home and the stress of the internship. We both traveled home quite a bit on the weekends. We shared our dreams, studied vocab terms, and sang at the top of our lungs as we carpooled home.

I don’t know what I would have done if she hadn’t been there. We got through it together and grew as individuals on so many levels throughout the process.

I am so lucky to have her in my life. She is one of the most positive, genuine, selfless people I know. One of my unofficial new year resolutions is to surround myself with more people like her. People who look for the good in others, who imagine positive outcomes, and pour their hearts out for those they love. These are the people that make the world a better place.

We will continue to follow our hearts and reach for our dreams.

I don’t know how to transition into food smoothly after that, so I’m just going to go for it. Lunch was from the Whole Foods salad bar which is a glimpse of heaven for me. The veggie packed salad bars basically having me drooling just thinking about them.

  whole foods

I tempted myself by walking through the frozen treats aisle. I mean seriously they have everything I could ever want: Coconut Bliss, Frozen Kefir, Soy Ice Cream…I wanted to try them all! Can you believe I walked out of there without purchasing one? That’s because I forgot.  whole foods
In the afternoon I completed another session of the 30 Day Abs Challenge. Here is what week 2 workout looks like:
week 2 ab challenge
For dinner I headed over to my brother Kevin’s place for spaghetti with mom and dad.
I had a gluten-free version with spaghetti squash. The sauce was amazing; full of italian sausage, ground turkey, veggies….YUM. Mom also made her Italian salad which tops Olive Garden salad if you ask me.
SO stinkin’ good and so nice to be with my beautiful fam bam, who are also such positive, genuine, beautiful people.
Being that I forgot to buy a frozen treat for Dana and myself at Whole Foods, I thought it would be a good idea to stop by Cherry Berry on the way home to fulfill my frozen yogurt wishes.
I went easy on the toppings (for once). I chose the non-fat vanilla yogurt with marshmallow sauce, sprinkles, and one mini Reese’s peanut butter cup.

It was a delicious, warm-hearted, lovely day. I can’t wait to make today just the same. Embrace the day. Spread the love. Surround yourself with positive people. Xoxo.
