The Easiest Cinnamon Applesauce

This morning the thermometer says 38° F. The fall weather is officially here which gives me such a cozy feeling and has me grabbing for my sweatshirts. When I think of Fall I think colorful leaves falling, pumpkins, sweaters, football, chili, cinnamon, cool long walks, and fresh delicious apples. On Sunday I dove into Fall mode.

I pulled out a bag of apples and got to working on some homemade applesauce. I used the Jazz variety because they happened to be on sale but you can use whatever apple you prefer really. I began by peeling 6 medium apples, cored them and sliced them.

Apple peels remind me of childhood because when my mom would make apple crisp or baked apple slices, I would stand by her side and watch as she peeled the apples, and she would let me eat the peel. I loved the crispy treat.The simple pleasures.

I threw the apples into a large crock pot, sprinkled them with a large dose of cinnamon and a healthy drizzle of honey. If you don’t LOVE cinnamon you can go for a more conservative amount, but I really do love it. I’ve been using it like crazy lately. Good thing we bought a ginormous container of it at Costco.

Cover that bad boy and set it on high for 4-5 hours. Stir occasionally.

And here’s what you get!

I chose to keep mine chunky style but if you wish you could scoop this into a food processor and smooth it out. Chunky style doesn’t make for the prettiest photo ever but I promise you once you taste it, it won’t matter.

It tastes wonderful just as is, but I’ve also discovered that it tastes awesome on top of a piece of zucchini bread. It’s kind of like apple butter but chunky style.

I actually didn’t measure the ingredients (whoopsie) but I will do my best to give you the approximate amounts. Feel free to experiment with it on your own too!

Easiest Cinnamon Applesauce Crock Pot Style (recipe adapted from SkinnyTaste)

Ingredients

  • 6 medium apples
  • ~1 Tbsp. cinnamon
  • ~2 Tbsp. honey
  • 1 lemon wedge

Directions

  1. Peel, core, and slice apples.
  2. Place apples in crock pot, sprinkle with cinnamon and honey.
  3. Squeeze the lemon wedge into the pot before adding it to pot.
  4. Cover with lid and set on high for 4-5 hours, stirring occasionally.

It’s as easy as that. Yes, really. And it’s SCD-friendly. Go make your home smell like Fall. I am out to take on the day. I hope you all have a great Tuesday.

Zucchini Bread & Adjustments for Health

Goood morning to you all. Hope everyone’s week is off to a great start.

I have some news to share. After my colon “procedure” vaguely mentioned a couple of weeks ago here, I have not been feeling well on the U.C. front. My body is having a hard time recovering from the invasiveness of the procedure and I feel like my progress in feeling better was set back about a month. Besides that, I have deviated further than had planned from the SCD and/or Paleo diet, specifically on the added sugar part.

After Friday’s absolutely amazing date night, I woke up Saturday morning feeling pretty darn sick. I felt awful all day. My body was not happy with me.

It’s time for change folks. I am regaining control and made a decision Saturday morning that I was going back to the Specific Carbohydrate Diet. I am not starting at day 1 and beginning the whole thing from scratch, I will beginning somewhere around 1 month in. My body is used to the significant amounts of fruits and veggies. The biggest part I will be focusing on is watching the added sugars and starchy ingredients on food labels.

For any new readers, I tried giving the SCD a try a couple of months ago. You can read about some of it here and here. I did my very best to stick with it, but then decided to go the gluten-free route instead because I felt like I wasn’t seeing the progress I had hoped for especially given all of the effort I was putting into it.

This diet involves A LOT of food prep, and I think with all the activities of summer, wanting to be outside all of the time (versus in the kitchen), and the immediate stress of beginning the diet, I just couldn’t keep up with it.

I am going into it this time with a different mindset. I already know what I “can and cannot eat,” I am aware that more time will be spent in the kitchen, I learned last time that I need to make large batches of foods and freeze them to cut down on future kitchen time, and mostly, I need to remember WHY I’m doing this. I want to be healthy again. This flare has lasted way too long.

This time around I will not be so hard on myself if I slip once and a while. I’m not perfect and it’s bound to happen. I also am going to be aware that this diet may not work for me, and if it doesn’t, then that’s okay, I will continue to adjust my diet so that I figure it out one day. I sure hope it works though!

Prior to the colon procedure a couple of weeks ago, I was feeling so much better. At that time I was following a mostly SCD and slightly Paleo diet, the only thing I was slipping up on was the chocolate. I was eating it daily. It’s one of my favorite treats and I’m hoping in the future I will be able to incorporate it into my diet again.

So that’s what’s happening over in my Beautifully Nutty home. Basically I spent a lot of time in the kitchen Saturday and Sunday.

Saturday

On Saturday Dana and I went grocery shopping, went to the Farmer’s Market, got the car washed, did laundry, and cleaned all of the windows in our house inside and out. It was a busy active “rest” day. I also made some “fauxmeal” raisin cookie bites. Num.

Breakfast: 1 egg and egg white omelette with sautéed bell peppers, onions, tomatoes, and mushrooms, topped with avocado, cilantro, and salsa.

Lunch: Sugar snap peas, an apple, and homemade zucchini bread (SCD) with homemade cashew butter and honey…recipe at bottom of post!

Dinner: almond crackers that I burnt to a crisp(!) and tomato and olive bruschetta topping that we bought from Target a while back. All ingredients on the label are SCD friendly.

Sunday

Breakfast on Sunday looked like Saturday’s with another piece of zucchini bread with cashew butter and honey.

I made my way to the gym (haven’t been there much lately) and jogged for 35 minutes on the elliptical then hit the weights for a back and bicep workout. I managed 6 hands and toes push ups yesterday! Just 4 more to go to reach my goal of 10 normal (non-knee) push ups before the end of the month!

Lunch: Apple carrot salad with a homemade rosemary honey mustard vinaigrette. Then a large spoonful of cashew butter.

While I ate my salad I got to working on making some homemade apple sauce. This was so incredibly easy and I will share the recipe with you soon.

In the afternoon I brought up the fall stuff from the basement and realized I have about 5 fall items to decorate my house with. Lame. I just may need to hit up the craft store with my coupons and get some more??!

I took the pup for a 3 mile walk around our neighborhood in the afternoon.

Dinner:

For dinner I headed over to mom and dad’s which is always such a nice treat. Mom and dad made pork chops, asparagus, and summer squash. I made myself a honey mustard topping for my pork chop.

It was a really amazing weekend once again. I have the day off work today and plan to do some more food prep, hopefully relax a bit so I can HEAL, and run a couple of errands. I had planned on running today but am going to keep that tentative and see how I feel. I need to learn how to RELAX.

Here is the SCD Zucchini Bread Recipe!!

Gluten-Free Zucchini Bread (SCD Legal): Makes 2 Loaves

Ingredients

  • 3 cups almond flour
  • 1 Tbsp. + 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/4 tsp. all spice
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 4 eggs
  • 2 egg whites
  • 2 cups zucchini, shredded and drained of liquid
  • 2 over ripe bananas
  • 1/4 cup honey
  • 1 tsp. vanilla

Directions

  1. Preheat oven to 350°. Lightly grease two standard bread loaf pans; set aside.
  2. In medium bowl combine dry ingredients.
  3. In large bowl, beat eggs until frothy. Add remaining wet ingredients; mix until well combined.
  4. Gradually add dry ingredients into wet ingredients.
  5. Divide batter into each prepared pan.
  6. Bake for 55-60 minutes until toothpick inserted into center of loaf comes out clean and top of bread begins to brown.

The bread tastes great toasted, plain, with cashew butter, peanut butter, butter, apple butter…get creative!

September Push-Up Challenge

Happy Labor Day! How was everyone’s weekend? Mine flew by as it always does but it was so relaxing which was just what I needed. This post is slightly random, but let’s get’er started.

In preparation for some fun colon excitement to come, I needed to be on a low-fiber diet starting Saturday afternoon, and all day Sunday.

So, here is my low fiber day yesterday…

Breakfast: gluten-free almond bread with smooth creamy peanut butter and honey, a bite of banana, and a cup of coffee. I ate breakfast while looking through the Sunday paper of course. Bummer, no coupons yesterday, but a nummy breakfast at least.

Lunch: chicken breast with hummus and feta cheese, avocado, and canned green beans. It doesn’t look very appetizing, but it actually was pretty good. I finished lunch off with a little bite of peanut butter.

Dinner: grilled turkey burgers with cheese, avocado, mustard and ketchup, and a side of green beans.

For dessert, Dana and I whipped up a batch of chocolate fudge Jello (sugar-free) that we made with almond milk and we also ate some of our first candy corn of the season!

Now Back Track

Back track to just after lunch; Dana and I geared up for a hike. There is a trail alongside a major highway about ten minutes from our house that we have been wanting to explore for the longest time, so we decided that yesterday was the day to do it.

I grabbed the fuel belt and loaded it up with water, Dana grabbed the waist leash for Moose, and Moose grabbed his portable foldable water bowl, and we hit the trails.

It was pretty warm out yesterday so we called it quits after about 2.6 miles. I was really impressed with the area though. It was gorgeous. I can’t believe I’ve never been there before. Dana and I decided that it would be a perfect place for a morning run. We will be going back for sure.

Sangria Deliciousness

On Friday night before we left for Adam and Allison’s wedding, I invited Dana to join me in a happy hour in our kitchen so that we could try out a bottle of sangria I had been given to sample. I am a HUGE sangria fan, so I was pretty darn excited about this one.

The product is called Eppa Superfruit Sangria.

Eppa’s sangria is certified organic and is made up of antioxidant rich fruits including pomegranate, blueberry, blood orange, and acai. One glass of their wine has twice the amount of antioxidants than a standard glass of wine.

The taste test verdict? Loved it. It is smooth, fruity, and refreshing. The perfect happy hour beverage, out on the boat beverage, or just “in need of a glass of wine after a stressful day” perfect beverage.

September Push-Up Challenge

On with my day….I have a few things to do around the house, some errands to run, and possibly a workout on the agenda.

Which reminds me, I almost forgot to mention that for the month of September, I have made the commitment to doing at least 10 push ups everyday. If I’m feeling more ambitious certain days, I will do more but every day I will complete at least 10. My push-ups are knee style, but I am hoping to build strength again to do normal ones again. Baby steps.

Garden Fresh Veggies

Hi there! I’m diving right in…

Lunch

I’m still not quite sure how I felt about yesterday’s lunch. The night before, I sautéed zucchini and mushrooms seasoned with cumin and salt and pepper. I then added cooked carrots and diced turkey. Once the veggies were cooled, I topped them with green olives, feta cheese, and balsamic basil dressing. I packaged the dish up and brought it with me to work.

I ended up eating the carrots solo, not in combination with any of the other items in this dish. They just didn’t belong, poor guys. Would I make this combo again? Probably not, but I didn’t HATE it, it just wasn’t as good as my other Greek-inspired dish from the other day. I prefer the fresh raw veggies versus the cooked any day.

Either way I still enjoyed my lunch outside in the sun and then went for a quick 15 minute walk before heading back to work for the afternoon.

Gym

After work I made my way to the gym after sitting in traffic for what seemed like forever. I wasn’t feeling super energized so I grabbed my newest Rachael Ray magazine and rode the elliptical for 35 minutes. It was pretty darn hot in the gym yesterday and I ended up getting sweatier than I felt worthy of. I wasn’t hitting it too hard but the sweat made me feel like I was!

Dinner

For some strange reason, once normal dinner time rolled around, I was not hungry. I hadn’t eaten copious amounts of food throughout the day or anything, so this was weird for me. This doesn’t happen to me hardly ever.

I waited and waited for the hunger feelings to come around, and they were only starting to barely creep up when I decided I would just make myself a little somethin’-somethin’.

I made a salad with mixed greens, a half of a grilled pork tenderloin marinated in Lawry’s Hawaiian dressing, avocado, mango, and honey mustard dressing.

About 45 minutes after I got done eating the salad, my appetite kicked in. I ate my second dinner which was a few small handfuls of trail mix…

And a piece of almond bread. Dana said this was by far the best batch of almond bread I have made so far, and I would have to agree. I used Greek yogurt instead of homemade SCD yogurt, and cut the eggs down a little bit and incorporated some egg whites. It made for a more bread-like texture with less crumbling and more stability.

I should probably post this recipe soon, huh?

As I was out checking out the garden last night, looking around for any fresh veggies to pick, I thought it would be fun to give you guys a glimpse of the jungle our garden has turned out to be.

I snapped this photo below back at the end of May when we planted zucchini, tomato, bell peppers, jalapeño, kale, green beans, and onions.

Now check it out! Mind you there’s an abundance of weeds in there, but you see on the right side in the front? Those are all tomato plants and they are coming in full swing! They are mostly green still but there are LOTS of green ones. I can’t wait to be bombarded with tomatoes. Fresh salsa will be coming out my ears. I am thinking of getting something to help me rid of the pesky weeds in my garden. Luckily sites like https://bestofmachinery.com provide reviews and guides on the best garden tools and products to help me with my purchase.-

The zucchini have had a rough summer. We have gotten a few so far, but not like last year. I think the weather has teased them a bit. I’m still hoping we get more.

We didn’t get any peppers unfortunately which I am pretty bummed about. The onions are probably ready to be plucked from the ground, but I haven’t touched them yet.

I most definitely do not have a green thumb, but we are producing some veggies which makes me oh so happy.

A Joke for Monday

The weekend isn’t really over, is it? I feel like it never happened it flew by so fast. As always.

It was a wonderful weekend. I didn’t do much on the side of cooking and didn’t  develop any new exciting recipes over the weekend, but I surely enjoyed relaxing at home and with friends.

Saturday

Breakfast was a cup of coffee with stevia, and a piece of almond bread toast with PB2 and cinnamon.

The fam bam and I headed out for a 3.35 mile run around the neighborhood. The weather was PERFECT. It is finally starting to cool down around here and the temperature was high 60’s with a light sprinkle which felt great.

We switched up our grocery shopping day to Saturday instead of Sunday since we both had fun plans for Sunday and wouldn’t be able to go on our usual day.

When we were at Costco we stumbled upon a super large pet bed for Moose for only $20! Seriously you don’t find that price anywhere on pet beds. His other bed had seen better days and he was definitely ready for a new one; a big boy bed.

I think he likes it. Actually what’s funny is that we had to force him onto the bed for this photo. I think he likes it? Smile with tongue out

Lunch was very random. I had grabbed a sample or two at Costco, and when I got home, I wasn’t sure what I was hungry for so I made it a small snack type of lunch.

I started with cooked carrots with cinnamon.

Then oven roasted turkey breast with cheese.

And then I think I moved on to a couple of bites of peanut butter and then called it a day, but I’m not for sure.

In the afternoon, I relaxed and laid out on the deck. It was wonderful and much needed. I have been exhausted.

Dinner was Roasted Butternut Squash Soup that I made a while ago and stored in the freezer. I love having homemade soups in the freezer for days like Saturday night, where I had no inclination to cook or make anything. All we had to do was grab a couple of bags of soup from the freezer, pop them in a bowl in the microwave, and top them with some chives.

Sunday

On Sunday I headed to Mankato to meet up with a couple of my girlfriends from college. Being that we were all dietetics majors, there is always food involved at our get-togethers.

I brought apples, mango, cherries and yogurt dip, Terra sweets and carrots chips (which are amazing btw), and to the left unpictured is a giant bag of trail mix which I dominated.

We also had pretzel chips and hummus, carrots, and lettuce wraps. Pretty healthy, right?!

I loved loved catching up with the girls. They both have beautiful little baby girls so I got lots of quality baby time. I love baby time, and girl time, so it was a great Sunday.

When I got home, Dana, Moose, and I went for a leisurely walk around the neighborhood, then I got ready for the week ahead.

Monday Joke

So, I was thinking…since I tend to have a hard time dealing with Mondays, with going back into work week and all, how about I try to throw you all a joke on Mondays when I remember? I know I am not the only one out there who struggles with this day, so we can all benefit from it. I’m not guaranteeing any quality jokes, but if they can at least make you smile, or give you the slightest chuckle, I will feel like I’ve done my job.

Q: How do you turn a soup into gold?

A: Add twenty four carrots!

Day 2 of SCD Intro Diet

Hi friends! I hope everyone’s week is off to a great start. Can you believe tomorrow is July 4th already? I can’t! For those of you who missed yesterday’s post, you may want to check it out here. Otherwise you are going to look at my diet for the day and wonder what has gotten into me.

Monday

Yesterday was day two of the introductory diet on the Specific Carbohydrate Diet. The morning began with a slice of SCD cheesecake which looks pretty good right? I wish I could say it tasted as good as it looked, but it didn’t. You have to use this special dry curd cottage cheese aka Farmer’s Cheese in the recipe, and I despise it. It leaves the world’s worst after taste in my mouth that makes me nauseated.

I also drank a glass of pineapple juice to try and wash out the flavor. No such luck.

After breakfast I was working on my blog when Dana comes rushing in with Moose saying something about how he thinks Moose broke is toe. Holy cow, okay, wasn’t expecting that, what do I do? I ran over to Moose to see that his dewclaw is completely bent to the side and dripping blood. I ran and got a towel to try and catch the blood and Moose howled from pain. We loaded him into the car immediately and headed to the Animal Hospital.

When we got there they weighed Moose (90 lbs–he lost weight!) and headed back to the clinic room to wait for the doctor. I caught this photo of him for the very brief moment that he was sitting. He was so incredibly anxious and wouldn’t sit still. He knows this place…

They ended up numbing the area, and had to tear the dewclaw off which they said is the pain equivalent to us ripping our nail off. That news made me cringe. They sent us home with a laundry list of meds and a cone head to keep him from licking his bandage. Our poor baby. I feel so bad for him. We hate to have to have him wear that thing because he is miserable in it, but we don’t want him licking his bandage or gnawing at it while we are gone.. He can’t relax so he just sits there with his head lifted the entire time.

We gave it a rest after a little while because we were going to be home with him. He was fairly sedated at this point and konked out for the majority of the day.

That was a lot of excitement before 10 am! When I got home I was hungry again, so I snacked on a hard-boiled egg.

Lunch time rolled around and since my options were pretty slim due to the restrictive two-day intro diet, I sipped on a cup of chicken carrot soup.

And some pineapple jello.

I hit the road to go meet my mom during her lunch break and visit with her. I brought a picnic blanket and we sat under a nice shady tree and chatted for a good 45 minutes. Loved it! Dana and I hit the gym in the afternoon. I wasn’t feeling very energetic, so I brought a magazine along and hit the elliptical for an easy 30 minute workout.

For dinner, I made myself scrambled eggs with salt and pepper.

Bearing the 100° heat, I wanted to whip up a batch of SCD allowable bread so that Dana could have something to make a sandwich with. It was super easy and the bread looks awesome. I’ll try to remember to get Dana’s report back so I can let you know what he thought.

And yes, our house was a sauna after this got done baking!

SCD Bread (Recipe from this site)

Ingredients

  • 3 1/2 cups almond flour
  • 3 eggs
  • 3 Tbsp butter, melted
  • 1 tsp baking soda
  • 1 cup homemade yogurt
  • 1/4 tsp salt
Directions
  1. Mix all ingredients in food processor
  2. Bake for 55-60 minutes at 350°
**Note: this bread is not meant to be eaten during the introductory phase of SCD. I made this in preparation for the stages to follow.

I spent the rest of the night cleaning up the kitchen, I seriously cannot tell you how many dishes are involved with this SCD. I also watched DVR’ed Bachelorette which I have decided is my preferred way of watching the show. Some of the conversations can become pretty darn boring, so I fast-forward and get to the good stuff. In case you haven’t watched it yet, I won’t say who went home. I will say I was very happy with her decision, but I don’t know how she is ever going to pick between the last three guys. They are all great!

I am in a very good mood today because I have moved past the introductory diet and moving on to incorporating more fruits and vegetables today. I hope everyone has a wonderful day and I will catch up with you soon.

Specific Carbohydrate Diet

Well, hello there. I have a lot to share with you so I am going to get right to it. Today’s post is somewhat of a short novel. I apologize.

For those of you who follow my blog regularly, you know that I am combatting some health issues. Anyone just reading for the first time, I was diagnosed with Ulcerative Colitis at the age of 12 and since then have lived with flare-up, remission, flare-up, remission, etc. etc.

I was healthy for over two years without any bouts until about 2 months ago when I started having symptoms again. Now, as a Registered Dietitian my first thought was to try to help the healing process through diet. The diet is something you can control. I began a low-residue, low-fiber diet to try and give my intestines a little time to rest. Think chicken, potatoes with out skin, apples without skin, Cream of Wheat, bananas, etc.

Along with the low-fiber diet, I also consulted my gastroenterologist who started me on medications right away. As time progressed, my symptoms only got worse. I went back to the doc who then switched my meds again. At this point, I was so frustrated with the low-fiber diet and not being able to eat the foods I love (especially raw veggies) that I kind of let loose on the whole diet thing. For breakfast and lunch I would eat low-fiber but then at dinner I was oftentimes making myself a small salad just to fulfill my cravings. Nothing was working, and I was tired of it.

Long story shorter, I was ready to try something different. Dana bought this book for me, and ironically my mom has the same one from when I was younger.

My mom tried EVERYTHING with me when I was sick as a child, but so many of these diets are incredibly hard to follow because you do have to be strict. As a teen, you weren’t going to stop me from going out with my friends and having pizza or other fun snacks. I would eat the pizza and then feel completely miserable afterwards. I wasn’t able to make smart decisions because I didn’t want to risk missing out on social moments. I will never be able to thank my mom enough for all of the time, research, money, love, and support she gave me and still does. Now that I am older though, I have a better understanding of my priorities. 🙂 Also, I know that I can still be social and have fun, I just need to be careful what goes into this delicate body of mine.

So, Dana brings me this book and starts telling me about the concepts involved. I was definitely skeptical at first, but continued on to read the whole book. Here is what I learned…

“The Specific Carbohydrate Diet™ has helped many thousands of people with various forms of bowel disease and other ailments vastly improve their quality of life. In many cases, people consider themselves cured. It is a diet intended mainly for Crohn’s disease, ulcerative colitis, celiac disease, diverticulitis, cystic fibrosis and chronic diarrhea. However it is a very healthy, balanced and safe diet that has health benefits for everyone. 
 
The foods that are allowed on the SCD are based on the chemical structure of these foods. Carbohydrates are classified by their molecular structure. The allowed carbohydrates are monosaccharides and have a single molecule structure that allow them to be easily absorbed by the intestinal wall. Complex carbohydrates which are disaccharides and polysaccharides are not allowed. They are not easily digested and feed harmful bacteria in our intestines causing them to overgrow. This produces by products and inflames the intestinal wall. The diet works by starving out these bacteria and restoring the balance of bacteria in our gut. The SCD is biologically correct because it is species appropriate. The allowed foods are mainly those that early man ate before agriculture began. The diet we evolved to eat over millions of years was predominately one of meat, fish, eggs, vegetables, nuts, and low-sugar fruits.

I have forever had issues digesting complex carbohydrates. I always joke about how I love bagels but bagels don’t love me. Sometimes I can eat them and feel fine, but oftentimes I eat them and regret it a few hours later when my stomach begins to bloat like a balloon. In my teen years, mom brought me to a holistic doctor. I remember him waving a bunch of scents under my nose while testing my body’s resistance at the same time—pressing on my arm and asking me to push against it, etc. I remember I was slightly intolerant to lactose and gluten. To this day I am still the same way. I am a true believer in holistic health and healing. I also know, that western medicine is a necessity in a lot of cases.

As a dietitian, this diet does make sense to me and it does sound completely legitimate. The book explains the science behind our bodies digestion process and goes on to explain that our bodies have a difficult time digesting these complex carbohydrates and we are not able to get rid of all of the sugars involved. These sugars therefore sit in our intestine and begin to ferment, which can cause a lot of gas and can cause inflammation as well. As a gal with ulcerative colitis, the last thing I need is EXTRA uncomfortable symptoms. After reading this book and talking it over with the hubs and madre, I have decided I am going to give it a whirl.

The diet begins with a 2-5 day introduction diet. You can eat as much as you want of the following foods (directly from their site and the book):

Breakfast:
Dry curd cottage cheese (moisten with homemade yogurt)
Eggs (boiled, poached, or scrambled)
Pressed apple cider or grape juice mixed 1/2 and 1/2 with water. See, SCD™ Legal / Illegal List for more information about allowable juices.
Homemade gelatin made with juice, unflavored gelatin, and sweetener (honey or saccharine)

Lunch:
Homemade chicken soup
Broiled beef patty or broiled fish
Cheesecake
Homemade gelatin made with juice, unflavored gelatin, and sweetener (honey or saccharine)

Dinner: Variations of above

I started this intro diet yesterday and bless Dana’s heart, he is doing it with me. Because my symptoms are no longer severe, we will only be doing the introductory diet for two days before moving into the next stage (which looks and sounds WAY better). To prepare for these two days we made a big batch of hard-boiled eggs, lean beef patties, 100% grape juice gelatin, homemade yogurt, “legal” cheesecake made from homemade yogurt and dry curd cheese, and allowed chicken soup from scratch. We also stocked up on Dole 100% pineapple juice. The prep is pretty tedious but if this diet works like it says, then it’s worth it.

This was my first time ever making homemade yogurt. Getting the temperatures just right was the hardest part, but I think we got it down now, and next time we make it will be a lot easier.

Homemade Yogurt: following the directions to a T is very important as you are making sure to rid the product of all lactose remains.

Instructions:

  1. Bring 1/2 gallon of 1% milk to simmer; stirring often. Remove from heat.
  2. Cover and cool until milk has reached room temperature (64-77°F).
  3.  Remove 1 cup cooled milk and make a paste with 1/2 cup good quality commercial yogurt*.
  4. Mix the paste with the remainder of the cooled milk and stir thoroughly.
  5. Cover pot and place on a hot plate heated to 100-110°F; let stand on hot plate for at least 24 hours.
  6. Remove from heat and place in fridge to cool.
*The yogurt should be unflavored and unsweetened. Buy one containing only milk or milk solids and bacterial culture. Recommended cultures are Lactobacillus bulgaricus, L. acidophilus, and S. thermophilus.
I will not lie to you, I am hating these first two days. No fruits or veggies besides those from fruit juice? I am not a meat or fish lover, and I can only take eggs in small amounts. The Farmer’s Cheese, aka Dry Curd Cheese gives me the worst after taste in my mouth. Blech. The chicken carrot soup is OK, but very bland. I tried making the cheesecake this morning hoping that would be something that I would enjoy but no, because of the cheesy aftertaste I’m not a fan. I am loving the 100% grape juice gelatin however, so I have been eating an insane amount of that. The homemade yogurt I believe needs to wait until tomorrow before I can really incorporate more of it. It felt good to complain for that brief moment. I am trying to remain positive. Tomorrow, we move on to the next phase which is slowly introducing fruits, veggies, nuts, and proteins. Considering I am not a huge complex carb eater in general, the next phase will be very similar to my pre-flare diet with tons of fruits and veggies and beans too!!
My symptoms are already improving drastically and it’s only been a couple of days. On Friday I ate low-carb all day, the only thing I ate that “wasn’t allowed” on the SCD was corn. Then yesterday of course I followed to the very strict intro diet, along with today. I have had zero bloating. You read that right. ZERO. I am utterly amazed at the progress already. I am continuing to take my medications as prescribed by my doctor as well as implementing this diet. Also, the book emphasizes the importance of supplementing with vitamins during this time. If you are thinking about starting this diet, please consult with your physician first. They will make sure this diet is okay for you and help you determine what supplements you  may need to take.
I am so excited to be sharing this journey with you all. Besides from these first two days, this will not be a major lifestyle change for me. Sure, there will be some changes: a lot of food preparation to ensure that there are no complex carbs, a lot of dishes, making smart choices when out with friends, etc. I will do my best to adapt to these modifications. The book recommends you stay on this diet for a year to increase your chances of curing the disease completely. They don’t recommend that you “give it a try” for a month and then quit even if your conditions improve. But, I am only human and although I will continue a very low-carb diet in the future, this is a diet that I will not stay on forever.
As I progress through the stages of this diet, I will continue to keep you posted and update you on the changes. There will be some seriously awesome veggie-packed recipes coming your way soon, that anyone will enjoy, even if you’re not following the SCD.

Lunch 

I was at a conference for work, and they served an impressive taco bar. I didn’t take a photo unfortunately but I can tell ya it looked and tasted great. I loaded my plate with chicken, lettuce, cilantro, tomato, corn, black beans, onions, and salsa. For dessert I ate a small serving of sweet compote with blackberries, strawberries, and blueberries.

In the afternoon we ran a few errands and I munched on sugar snap peas and almonds. I am really anxious to tell you about the “Breaking the Vicious Cycle” book I mentioned to you yesterday. Melanie is going to be cleaning her gut, in a very healthy way. More to come so soon!

Dinner

Sweet and Savory Turkey Burgers (I didn’t measure exactly)—recipe idea from this site.

  • lean ground turkey*
  • 1 small apple peeled, cored and grated
  • 1/4 cup or less onion, grated
  • celery seed
  • dried sage
  • chives
  • black pepper
*You can substitute lean ground beef or ground chicken

I crunched on some watermelon before dinner. Note my fashionista outfit I’m sporting. You can usually find me in something of these sorts while I am home. I am all about the comfies.

I assembled the burgers, and Dana cooked them to perfection on the grill.

Such a great team. I plated my burger up with a small salad with olives and honey mustard, and two slices of cheddar cheese. Look, it’s a Christmas tree!

The rest of the night was spent getting ready for the Warrior Dash, painting my toe nails, and playing with the pooch.

Ruby Red Jewels on My Salad

Wednesday Yoga and Breakfast

What better way to start the day yesterday than a gentle yoga session. I turned on Gentle Yoga On Demand and completed the calming routine. I have found that I appreciate the gentle yoga versus the more intense yoga first thing in the morning. It gets me stretched out and really allows me to focus on my breathing and tackle my day. I love the more intense yoga in the afternoons though once I’m more awake.

Breakfast was an easy to digest, old favorite: the Cream of Wheat bowl. In the mix was the usual cereal, cinnamon, and brown sugar. Although it was stinking hot yesterday, this warm breakfast still tasted great.

I headed off to work for a while then came home for a super speedy lunch. I had prepped everything in the morning for a protein smoothie so that all I had to do was toss it into the blender, whip it good, and enjoy in minutes. I included tofu in this smoothie along with protein powder because I needed extra staying power to hold me through the afternoon.

I finished lunch with a couple of animal crackers and peanut butter, and two dark chocolate squares.

Lunch completely held me over until dinner. Mission accomplished.

When I got home from work ,my neighbor greeted me in between our yards. She was telling me that their raspberry bush in the corner of our two yards has completely flourished over the years and is plummeting well into our yard and into our bushes. She wanted to make sure I was aware that there were fresh raspberries up in our yard so I wasn’t missing out. I thought it was sweet of her to tell me that. I was very aware of the amazing raspberry bush in the corner of our yard, and actually thought it was our bush all along. Now technically it is partly ours since it is our yard too. Yes!

Raspberries are by far one I my favorite fruits. I went ahead and popped a few in my mouth and then decided they needed to go into dinner somehow. Since I am experimenting with adding salads back into my diet, I made plans to incorporate the ruby red jewels into a nice refreshing salad.

In the salad: Mixed greens, raspberries, watermelon, avocado, feta, and Newman’s Own Lite Raspberry and Walnut dressing. Holy cow the freshness on this salad was for sure a Melanie pleaser. This is a summer salad if I’ve ever seen one. Check out the colors. Awesome.

I also had a few mushrooms with hummus (photo from Tuesday).

And a caramel rice cake.

It was so incredibly hot here today, and I think pretty much all across the country, so I didn’t feel like being outside, but I wanted to get some light exercise in still. My favorite show, SYTYCD  was on tonight so I laced up the sneaks and headed down to the treadmill to watch my show in a cool basement.

This sounds pretty identical to last week actually with the walking and watching the show bit. I am really not one to sit down and watch an entire show because I either feel guilty sitting there sedentary for so long, or I feel like I should be doing something else productive. Walking on the treadmill while watching my show makes me feel WAY better about watching TV, not that I condone watching a ton of it. I only have two, well really three, shows that I truly enjoy watching these days: Bachelorette, SYTYCD, and always Wheel of Fortune. I would never cancel plans to watch these shows, but I usually either DVR them, or watch them when they’re on when I can. Who cares anyway;  sorry that was a pointless rant about TV.

Italian Dunkers in 5 Minutes

Happy Thursday, friends!

Do you know what makes my day? Receiving packages in the mail or at my doorstep. Especially ones like the one I got from Wild Harvest Organic yesterday. Wild Harvest is sponsoring a recipe contest in collaboration with the Healthy Living Summit 2012 and you better believed I signed up to be a part of that. Let’s just say as soon as I laid eyes on the contents of the box, my brain began whirling a mile a minute. Recipe creation is my passion. I am thrilled to be able to participate in this fun event. More to come on that!

After work I came home and I was not feeling very motivated to make dinner. You all know by  now that I love to cook, try new recipes, create new recipes, and have fun in the kitchen. But I am only human, and today I was just not feeling the gusto.

I was hungry though, so I was going to have to figure it out. What I really wanted was to dive into the raw broccoli and hummus, BUT I refrained because that is a no-no right now. I scanned through the cupboard, the fridge, and the freezer. Then I spied the nummy leftover Bolognese sauce from Sunday evening. Then I spotted the spelt bread, then mozzarella cheese, and my mind was made up. It was Italian Dunker time, baby.

I preheated the oven to broil, then defrosted the sauce in the microwave, and toasted up a piece of spelt bread in the toaster. Once the bread was toasted, I sprinkled it with garlic powder and topped it with a small handful of mozzarella cheese. I placed it on a piece of aluminum foil and set it under the broiler for about 3 minutes (making sure to watch carefully so it didn’t burn into a crisp). Once the cheese was melty and starting to brown slightly, I removed the dunkers from the oven, sliced them into three strips with a scissors, plated them up alongside the reheated Bolognese sauce, and got dunkin’!

I swear the sauce was even better this time around.

Oh the high school memories that come along with this meal. I remember how excited everyone would get in anticipation for Italian Dunker day. They would use thick french bread, loads of butter I’m sure, garlic, tons of melty cheese, and served them along with some simple marinara sauce, and usually a small side salad.

I wasn’t much of a hot lunch gal, I would often veer more towards the salad bar or bring my own bag lunch, but Italian Dunker days were a different story. The lunch line went on for a mile and if you were a senior, you didn’t have to wait, you got to budge to the front (according to the seniors at least). I was a little too nice and too much of a wiener for that though, so I would usually wait in line like the rest of the younger kiddos. What can I say? I believe in liberty and justice for all. 🙂 They were always worth the wait but remember feeling a little sick in the afternoon from all of the grease. Anywho…

After dinner, I laced up the sneakers and headed down to the treadmill. It has been raining like crazy lately around here and I have felt very fortunate to have a treadmill right in the comfort of my own basement. I especially love that we have a TV hooked up to cable down there too.

I started walking while watching Wheel of Fortune, and then got carried away into watching my favorite show, “So You Think You Can Dance.” I ended up walking for an hour. Chalk that up with a morning yoga session, and I’d say I had a nice day of low-impact activity.

The rest of the night was spent relaxing and sleeping.
