A Lucky Friday the 13th

I had a really great Friday the 13th. It all started off with an out of the ordinary breakfast for me which was scrambled egg whites with a little salt and pepper, topped with mild salsa. I found it impossible to take a good photo of this breakfast so don’t judge what you see below.

Work was work, but lunch break was great. I headed to Patrick’s Bakery and Cafe (I had eaten there once before) for lunch with my coworkers. I ordered the same thing as last time….french onion soup served with a piece of a baguette. I neglected to take a photo of my soup because it would have looked exactly the same as the last time , same tablecloth and all, therefore I just decided to use the old photo.

It was a very dreary day here in MN, and a bowl of soup was just what I needed, and I LOVE french onion soup. It warmed my soul.

After work, I had plans to go for a run, but since it was really nasty cold, misty, and windy outside, I decided to take it downstairs to our treadmill to run in the comfort and warmth of my own home. BTW our electrical was installed downstairs today and it looks great! We had temporary lights up down there before but now we have actually have light switches with dimmers to go along with the lights. Woo! It’s still coming a long!

Anyway, I hit the treadmill for 45 minutes doing a bit of a run/walk combo. I flipped channels between Ellen and Paula Deen and was thoroughly entertained.

Part of the reason my Friday the 13th turned out to be so great is because of this….

It’s kind of hard to read but it says:

I WON! I don’t win anything. Ever. I entered into the sweepstakes a while back thinking I had about a 0.05% chance of actually winning. Holy cow. I feel like the dad in a Christmas Story when he won the Leg Lamp. I was jumping up and down after I read the letter like I just found out I got into college or won a ton of money. I really truly love and enjoy LARABARs so this was a big one for me.

Maybe my luck is changing. One can only hope. I want to win more stuff, this is fun!

I can’t wait to try some of these flavors I have never tried before such as Blueberry Muffin and Chocolate Coconut Chew. Um, yum. Thank YOU LARABAR!

To make my day even brighter, this came in the mail today.

My beautifully bright swimsuit from Victoria’s Secret I ordered. Even better news is it fits. It is countdown time until our vacation now…TWO WEEKS from yesterday!

After all the excitement in the house, Dana and I ran a couple of errands including Home Depot and Target because I needed to get a couple of ingredients for our dinner.

Dinner

I sautéed 1 cup of diced onion on the stove top, then added in 1/4 cup of pre-cooked ground beef (I had cooked it a while back and froze it), 3/4 of a can of black beans, 1/2 cup corn, 1/4 cup water, and 1 Tablespoon of low sodium taco seasoning. I mixed all of the ingredients and let simmer for 2-3 minutes.

Meanwhile, I prepared lettuce cups using a head of boston lettuce. I rinsed the head of lettuce then carefully peeled off layers into cups. I also chopped a Roma tomato, and a half of an avocado (no cuts this time).

Once the filling was done simmering, I spooned 1/4 cup of it into the lettuce cups, topped them with tomato and avocado, and enjoyed a very healthy, easy and flavor-filled dinner.

Looking back on yesterday, I had a day of multiple “wins”:

  • An awesome breakfast that held me over until lunch
  • Electric work done in the basement
  • Great soup with friends for lunch
  • A run while watching fun shows
  • A giant WIN in the LARABAR sweepstakes
  • Swimsuit in the mail, AND it fits
  • Great dinner
  • And lastly, a night to relax with my boys (awwwwwww)

It was a very lucky Friday the 13th for me!

I Went Greek

You will never guess what I had for breakfast yesterday morning. No, it wasn’t overnight chia seed yogurt. Can you believe it? It was pretty close though. I made a bowl of Fage Total 0% Greek Yogurt, blueberries, blackberries, banana, chia seeds, and honey.

I gave it a good ol’ mix and was left with a creamy delicious bowl of sweet perfection. I loved the textures from all of the different fruits.

It was a good change of pace, however I missed not opening the fridge in the morning and having breakfast waiting for me to eat. Which is why this morning I decided to make myself an overnight oat, chia, and fruit bowl. I will spare you the photo because you have seen a kazillion of them lately. I do have to say this was the best overnight bowl I have ever made so far. It was very thick and I’m thinking I may have added some extra chia seeds this time.

Moose posed so nicely for a quick photo with me yesterday before I left for work. Such a good boy (sometimes). Such a cutie pie.

When I was looking at this photo I was taking notice of the background and remembering that I have yet to show you that finished wall behind me. I mentioned this wall project a while back but have been slow to decorate it which is why I have neglected to post a photo thus far. I still haven’t quite finished decorating it, but have placed temporary pieces on the shelves for now. Since I don’t know when I’ll be be completely finished with it, I decided I’d just show you it now.

It’s Moose’s cozy nook where he eats his breakfast and dinner.  Anyone have any ideas on decorating these shelves on a budget? I would love any input.

Workout

After work today I had planned to get a work out in. The whole drive home I was really thinking that it wasn’t in the cards for me because I was pretty pooped. I pulled in the driveway and told Dana I didn’t think I was going. Then the head games began. Come on, Melanie. If you get your workout clothes on, you will most likely go, and you will be so happy you went. Just do it. Go. 

So, I listened to my head and got my workout clothes on, grabbed my music, and headed on the door.

I planned to run a couple of miles, but wound up running three. My head won. I am SO glad I went. The weather was perfect at about 65° with a light breeze. I even challenged myself to a big hill so I can build up my hill-running endurance and muscles. Sometimes it’s good to listen to that voice in your head (when it’s positive talk of course).

Dinner

After Tuesday night’s cauliflower fritters, which involved a lot more effort than I usually give to weeknight dinners, I decided that last night’s dinner was going to be simple. Simple, but there would be no skimping on flavor.

I went Greek(ish):

A whole wheat low carb Lawash Flatbread Brand tortilla, a layer of hummus, feta cheese, diced tomato, avocado slices, and baby kale.

Holy moly this thing was so stinkin’ amazing! The flavors all worked so well together. I want to make it again, like now. It was so easy, fresh, and a perfect weeknight meal.

The wraps were served alongside grilled asparagus and broccoli dipped in hummus (broccoli not pictured).

After dinner, we cleaned up the tiles in the bathroom downstairs so that they are ready to be sealed. Bathroom renovation is quite the process I tell ya. I have decided the bathroom colors are going to be gray/brushed nickel, dark brown, and white. I haven’t bought the accent towels or decorations yet but I am itching to do it! It is going to have a modern and classic look when I’m finished with it. I can’t wait for it to be done so I can show you. So excited!

Looking Good

Yesterday afternoon we went to pick up this handsome lad from the groomer. He is freshly shampoo’ed, conditioned, and brushed thoroughly. We also bought him a new forest green collar. Looking good, looking fresh big man.

He was completely exhausted after his spa day and spent the rest of the evening laying pretty low.

All the while, Dana and I continue to stay busy painting the bathroom downstairs. We decided on the color, “perfect taupe.” I was wanting a gray toned color but also was hedging towards a tan, so this one was the perfect compromise.

We look really happy when we paint, huh? 😉

Dinner came together in about 5 minutes last night thanks to leftover cowboy caviar (altered slightly from last time by adding a half a jar of jarred salsa) and fresh homemade canned beans. Yes, I cheated by using canned refried beans last night. I bought a can of fat-free refried beans in case of an emergency, and this my friends was an emergency. We were both completely drained from the weekend and totally hungry. I emptied the can into a bowl, heated them up and found that my intent for burritos was going to be slightly modified considering we only had one tortilla left. Being the good wife that I am, I sacrificed it for Dana.

Burrito with refried beans, cowboy caviar, lettuce, and pepper jack cheese all rolled into a whole wheat tortilla for Dana.

Refried beans, cowboy caviar, pepper jack cheese, alongside a big green salad for Melanie. Everything ended up getting mixed together on my plate and is was fantastic!

After dinner we finished laundry, made my lunch for today, and I even prepped dinner for tonight! I am super pumped about it too. I hope it turns out. Stay tuned!

Monday Positive Talk

It’s Monday again so that means it’s time for me to say something positive about my day. This Monday, I am so happy that dinner is all ready to go into the oven when I get home from work. Also, it is a dreary day which makes it easier to go to work because I wouldn’t want to be outside right now anyway.

This Monday talk is getting easier and easier for me! How about that. I am rebuilding my relationship. Happy Monday!

A Well-Stocked Fridge

Step right up. Come see the town’s most incredible circus dog! He can leap through hula hoops in a single bound with elegance and grace.

Such simple pleasure we have.

 

I have been feeling pretty good about my reacquaintance with intuitive eating. I have been truly listening to my body’s hunger and satiety cues and have been feeding it with very healthy wholesome foods. I plan on keeping it up!

My Sunday breakfast was simple oatmeal with peanut butter and fresh blackberries on the side (not pictured). Of course, breakfast was accompanied by my beloved cup of coffee and coupon cutting.

We stocked up on the produce while out running errands today and our fridge is full of grape tomatoes, celery, carrots, sugar snap peas, kale, zucchini, apples and more. I have a couple of dinners all planned out in my head for the week ahead, and you can check out more information about the same. I love when the fridge is stocked full of healthy foods. I have a bunch healthy, easy to grab foods at eye level: grape tomatoes on the right, broccoli and celery sticks on the left. In the red bowl on the top shelf is leftover cowboy caviar from a barbecue we went to at a friend’s place last night. I have plans to use that tonight with dinner.

Let’s see how long it takes us to go through all of this food. It is amazing how much we can eat.

Lunch came together in a pinch. Sugar snap peas, grape tomatoes, celery, and cottage cheese (with a little low fat ranch on the side). Not pictured were a handful of Emerald’s Mixed Nuts and a juicy apple.

Our Sunday has been pretty busy and very productive. Our bathroom remodel downstairs is really coming together fast. We have been painting today and just made our 100th trip this weekend to Menards for the baseboards. I can’t wait to show the before and after photos once it is finished!

Next on the agenda is picking up Mooser from the groomer. He had an appointment for a shampoo and conditioner treatment as well as a much needed brush-out. He has been shedding like crazy so this should help a little. I can’t wait to see him, he is going to look so handsome.

After that it will be the fun usual Sunday business of laundry, cleaning up the house, and getting ready for the week ahead taking place at our household. I am hoping for a little R and R later this evening.

Home Improvement and Hula Hoops

This past Monday, we began construction on our bathroom downstairs. Well, we hired someone to do it because it was more than just a little remodeling job. It needed to be completely finished including drainage in the shower and other bits that I can’t quite comprehend. Anyway, there has been much progress and it is really shaping up fast, which means we continue to have to make lots of Menards runs and Home Depot runs, and make a lot of decisions.

After work yesterday, we headed to Menards for a laundry list of items needed including: Sink faucet, shower head, tile, etc. Also, it is coming up close to time to start painting the bathroom –click to find out more, which means have a major decision to make. Although Dana can provide great input, the final decision comes down to my preference for paint color because I am more of the “interior decorator” of the two of us. He would admit this too. Although my skills seriously lack, but I do try and be creative.

We have beige tiles and slightly darker tan tiles to cover the shower walls, shower floor, shower ceiling, and bathroom floor provided by Maverick Windows and we will have white baseboards. Since the bathroom is in the basement with no outdoor window, I didn’t want to choose a color that was too dark. I am leaning towards the gray-tan family. I grabbed a bunch of samples and plan to take them downstairs once our worker bee is done for the day and make a final decision.

I originally wanted to paint the bathroom red but considering we won’t be living in this home forever, my realtor/amazing dad suggested that we don’t paint it red because it is hard to paint over red. What if someone doesn’t like red? They would have a heck of a time getting rid of it! So, I decided I could do red accents instead. However, now that I am glancing around my home, I notice that a lot of my home, the living room, kitchen, and family room, all already have red accents. Maybe I should expand my color horizons. I had to read here on how I could get accents that’d match the appliances and cabinetry in the kitchen, and it has done me well.

K, this ended up being a longer tangent than I was expecting so I apologize to anyone who fell asleep while reading that.

It’s funny what else happened to hop into our cart at Menards. Who snagged the kid’s toy? It wasn’t Dana, so I will give you one more guess as to who thought it would be a good idea to buy a hula hoop. Seriously though, how much fun are these things? They are a great workout too! I just need to keep Moose away while I do it because he inevitably sticks his face right into the hoop as I’m twirling.

When I was at my internship in LaCrosse, WI, I helped teach a health course through the hospital which was geared towards patients with metabolic syndrome, which  means that they have three or more of the following symptoms: high blood pressure, high fasting blood glucose, large waist circumference, and high triglycerides (there are guidelines for each of these symptoms). These symptoms are risk factors for heart disease, stroke and type 2 diabetes. The course was designed to teach heart healthy living.

Part of the class was nutrition education, which I helped with, the other half focused on physical activity, and an exercise physiologist led that portion. We would go for a walk with the participants or head to the exercise room which was full of treadmills, ellipticals, bikes, weights, and my favorite was the weighted hula hoop. I don’t remember how much weight was on it but it was just a heavy hula hoop and it REALLY worked the core when in motion! I debated buying one but never did. I may have to rethink that idea.

That was tangent #2 for the day.

After running to Menards we got home and I cooked up a couple of Morningstar Garden Veggie Patties for a quick dinner. While I waited for the patties to cook, I snacked on some broccoli and homemade hummus.

Once my patty was nice and crispy, I served it alongside a nice green salad complete with tomatoes, more broccoli, and a couple of baby pickles. Not pictured below was one Laughing Cow Light Swiss Wedge.

After dinner we hit the road again. Back to Menards again because while we were finishing eating our bathroom guy told us we had to get the unsanded grout, not sanded. We had debated calling him when we were at Menards because we weren’t 100% sure but nah we’ll just get this sanded kind. Wrong. Who would have thought buying grout would be so difficult. Oh also, there are TONS of colors to choose from. Why can’t they make it easy for people like me who can’t make decisions easily and just have two colors. Seriously.

So, back we went to Menards to get the right grout. Then, we needed to go to Home Depot to buy some end tiles for the shower. Oh, what’s that? They only have 11 tiles in stock and we need 19? Perfect. Well, let’s go to another Home Depot. We got back in the car and headed to another Home Depot and got the remaining 8 tiles. When we got in the car to go home it was already 8:15 and I was exhausted.

Dana and I spent a lot of quality “windshield time” together last night, as he likes to call it. I snacked on some blackberries when we got home as well as some Multi Grain Cheerios Peanut Butter.

Now it is Friday morning. I am sitting here on the couch trying to muster up energy to go run. I ate my pre-run breakfast, had a cup of coffee, and now need to go get into my workout gear so that I am more encouraged to go.

Some TLC for the Big Man

After all of our Sunday errand running yesterday, it was time to give the Mooser a little TLC. We took him out for a nice hilly walk where he sniffed and explored as if he had never seen the outside world before.

That’s 92 plus pounds of lean mean doggy machine.

I worked up an appetite out on our walk and had plans for a killer stir fry for dinner. Before our walk I began marinading Tempeh in soy sauce and garlic powder (I used the other half of the Tempeh a few weeks ago in spaghetti sauce and froze the other half which I used last night).

When we got home I first got the quinoa cooking in the rice cooker: one cup of quinoa to two cups of water. I love how the rice cooker cooks the quinoa. I made a cup because I wanted leftovers.

Next, I began chopping up the veggies. I had leftover asparagus from two days ago that I hadn’t made into asparagus wraps so I chopped that up along with green cabbage, carrots, mushrooms, and red onion.

I poured about a half a tablespoon of garlic olive oil in the wok, heated it up, then added onions. I let the onions cook down for a minute before adding the mushrooms. Next, I added the asparagus and carrots, and then lastly the tempeh and cabbage. I flavored the stir-fry with soy sauce, rice vinegar, garlic powder, and a little ginger.

Once the quinoa was done cooking and the cabbage in the stir-fry had started to wilt ever-so-slightly, I plated everything up, gave it one last splash of soy sauce (because I love sauciness) and chowed down. This was my first time putting cabbage into stir-fry and I’d say it was a winner!

I really enjoyed the tempeh in there too. It had a slight nutty taste which was exciting. 😉

After dinner we watched a couple of episodes of Modern Family, Season 1, then headed out to the backyard to entertain the dog for a little while. Dana threw the ball to Moose using the Chuckit! which is one of the best dog toy inventions in my opinion. You don’t have to touch the nasty slimy tennis balls ever. You grab it with the claw of the Chuckit! and “chuck” the ball, and it does all the dirty work for you. How about that.

I made myself an evening snack of PoPcOrN! I spruced it up with some butter spray and salt and it was the perfect salty snack to conclude my Sunday with.

Now, I am going to get this body moving. Hope everyone is having a tolerable Monday! Oh, I almost forgot. I decided last Monday that every Monday I wanted to write something positive considering I am trying to rekindle my battered relationship with Mondays. So, today I am very happy because I have the day off and my family is coming over for dinner tonight. There.

Laugh a Little

Is it seriously Sunday? Where did this weekend go? Holy cannoli!

My morning started off with a light and healthy breakfast: blueberries, blackberries, and yogurt in my cute new mug.

I wanted to keep breakfast light because I was meeting up with my good friends, Kate and Heidi for lunch in just a couple of hours. We met in Mankato and as always, it was so great to see them and catch up. I didn’t snap a photo of my lunch but I had a cup of chili, a dinner roll, and a side salad with raspberry viniagrette. On the hour drive with Kate, we listened to the 90’s station, danced to the Macarena, and giggled like little girls.

While I was a away at lunch, Dana had been busy cleaning and painting! We bought a decorative ladder shelf from Target on Friday and the wall that we want it up against needed a fresh paint job. We decided to make the wall an accent wall with some leftover paint we had. Dana surprised me when I got home and had the wall all painted already! Now we just need to let it dry and we can attach the ladder to the wall and start filling the shelves! I am pretty psyched about it. I will be sure to snap a photo of it once it’s finished!

Today was also a day of errands, laundry, and I am hoping a little rest and relaxation tonight. I am feeling very sluggish this afternoon. I need to think about meals for the week as well. I have a guest coming over for dinner on Tuesday night and want to make something extra delicious for her! 😉 As for dinner tonight, I have absolutely nothing planned and it will most likely be a do your own thing, night.

Back track to last night, and you will find Dana and I amidst a date night!

We went to see a comedy show by the guys from KFAN radio. I don’t really listen to KFAN but Dana does, so we thought we would give it a go plus tickets were only $10 a piece.I was just hoping they weren’t going to say a lot of KFAN jokes that were only funny to those who listen to the show. I figured no matter what we would get a few chuckles out of it. I was pretty excited anyway.

We tried snapping a photo together before we left for the show but were clearly having some issues with the lighting hence Dana’s half lit face.

Clearly, very excited. Excited enough to walk like an Egyptian.

So, what did we think? We really liked it! They had six “comedians” in the line-up. Some of them were more funny than others, but that’s to be expected. I definitely laughed a lot which felt so good! We had a few people at our table however who must not have had ANY sense of humor because they didn’t crack a smile the whole show. Now come on, laugh a little, it’s good for the soul! At least we thought it was a great way to spend our Saturday night.

Sweet Day & Fun Plans

Hello there! No monkey business I have lots to share as always.

Yesterday we had a potluck lunch at work. It was Valentine’s themed so everyone was supposed to bring food that was red, pink, or purple. My food-minded brain started thinking of tons of different options: pink quinoa with Craisins, nuts, and apples, cupcakes with pink frosting, apple nachos….had a hard time deciding on one. But I did decide to go with the Apple Nachos. I got the idea from Pinterest but changed it up a bit.

It included sliced apples, melted peanut butter drizzled over top, and was topped with almond slices, walnut pieces, Craisins, and chocolate chips. This was a huge hit and it was so simple to make! This would be a huge crowd pleaser with kids as well.

At the meeting there was everything from beet salad, to pb and j sandwiches on pink bread, strawberries, red bell peppers, heart shaped egg salad sandwiches, pink and red M & M’s (which I had WAY too many of), pink cupcakes (also had one of those), meatballs, etc. We go all out at our work meetings. Lunch held me over very well.

I had another meeting from 5:30-7 and didn’t get home until about 7:30. This was waiting for me at home upon my arrival.

My favorite gummy treats, three amazing cards which were all so sweet (from Moose, Dana, and one from my mom too), and the gift in the pink bag was a bathrobe from Target that I have literally been eyeing up for the past year!

On the menu: Lightly pan-fried scallops and fresh Mahi-Mahi that Dana caught earlier today. 🙂 Ha ha, that would be great! Alongside were oven-roasted fennel and artichoke hearts. Everything was unbelievable. I even liked the fennel! It didn’t have much of a licorice taste like I was expecting, it took on a “roasted” flavor and I actually really enjoyed it. I couldn’t finish everything on my plate because I was filling up way too fast and I knew there was some really great dessert yet to come.

Dessert started with these adorable chocolate covered strawberries.

Second course of dessert was cookie dough ice cream and warm, fresh brownies.

The combination of cold ice cream and warm brownies, and the way the ice cream melts into the brownie and creates a fudge like brownie….I can’t even believe how amazing it is. I don’t get this treat very often, but when I do, you better watch out, I will put myself into a brownie and ice cream coma.

This picture does not describe the magnitude of my love for this dish. Once I finished this deliciousness, I felt like I had a boulder sitting in my stomach. I ate enough sugar today to last me through the whole month.

After dinner, we watched a great Valentine’s episode of Glee, and before we knew it it was 9:30 which means time to get ready for bed! I promise I am only 26 years old. I really need my sleep though.

Dana really pulled off an amazing Valentine’s Day. I told him “he won” this year for sure. Not that I really mean it’s a competition but he just put so much time into it and made it so unbelievable. The couple hours that I did have with Dana made up for me having to work until 7 last night.

Now, I have some major gummies to eat before lent begins next week!

One last note. Valentine’s Day holds an extra special place in my heart, because I remember my Grandma K who passed away 8 years ago on this day. She was able to join her husband in heaven on this special day devoted to love. She was an amazing, caring, funny, spitfire of a woman who will always be remembered.

I’m probably forgetting a few things in there! In between those events are birthdays, baby showers, weddings, fun sun time, hopefully a garage sale….and more. It is going to be a great year! I am so pumped for it all! I’m off to get ready for work and maybe going to throw something in the crockpot? We will see. Have a great day! Happy Wednesday.

Lovey Dovey

Good morning! A quick recap from yesterday….

The verdict on the pb banana wrap with turkey bacon? It tastes better without the bacon. I have a feeling a lot of people out there would argue with me and say that EVERYTHING tastes better with bacon, but I would have to disagree. It was fun to give it a shot but I’ll stick with the B.L.A.T. option if I want to get my bacon fix.

After work I hit the gym for a 30 minute elliptical run followed by back and bicep strength training.

  • 3×10 bicep curls
  • 3×10 push-ups
  • 3×10 (back) flies—I’m going to be honest I don’t know if that’s the right termage, but I’m going to go with it.
  • I ended with a 1-minute plank
I am extremely tired today so I called it quits after that and headed home in the SNOW! It’s actually snowing here in Minnesota…finally. I didn’t mind un-MinneSNOWta myself but it is kind of pretty around here with the white fluff on the ground.

Dinner was an old go-to dinner for us that we actually haven’t “gone-to” in a while.
Kitchen Sink Hash. We basically throw whatever vegetables we have on hand in a pan with some garlic powder, salt, and pepper. We saute the vegetables until tender, in the meantime cooking an egg over-easy. Plate up the vegetables, then place the egg, and a little shredded cheese on top. Lastly poke the egg yolk (and quick take a picture) as it disperses over the vegetables. OH yea so good!

The rest of the night was spent relaxing with my men, watching the Bachelor, and finishing up the laundry that I didn’t get around to last night. Also, Dana and I booked a future vacation! We have lots of fun planned in the next year. I will be sharing it all with you very soon!

This morning I started off with a walk/run on the treadmill. It got me moving and a little sweaty. Oh, by the way…

This is my first Valentine’s Day as a married woman! Unfortunately I have to work until 7 pm tonight but that doesn’t mean we aren’t going to celebrate when I get home. Dana is going to make some sort of fresh fish for us (I had originally thought swordfish but now I am contemplating over something else like walleye or grouper), oven roasted fennel and artichoke hearts, and ice cream for dessert! I am excited to try roasted fennel. I have never cooked with it at home. I know it has a slight licorice taste which I generally don’t like, but I am thinking that roasting it might bring out a different flavor. We shall see!

Some people will say that Valentine’s Day is just a “Hallmark” holiday, and that you should tell those you love, that you love them EVERYDAY, not just on February 14th. I agree with this partially, but as a person who DOES tell the ones I love dearly that I love them (sorry this is getting confusing), I DO enjoy celebrating Valentine’s Day. It falls at a great time of year when the big holiday rush has subsided, and the winter is getting a little long. It’s a fun day to express your love even more than you normally do. And to get a little sappy too. 🙂

I am thrilled that it is my first Valentine’s Day as a married woman! I won’t get too mushy on you but I just have to say that I feel like the luckiest woman in the whole world to have Dana as my husband.

He is such a thoughtful, unselfish person, who loves me unconditionally and can put up with me even when I’m having a “crisis”.

He makes me laugh, supports me endlessly, and encourages me to follow my heart.

Telling him I love him doesn’t even begin to explain the way I feel for him. I am so happy I get to spend every single Valentine’s Day with this man forever. I love you Dana. Happy Valentine’s Day.

And Happy Valentine’s Day to all of you as well! I hope that everyone has a great day and can enjoy a little piece of love whether it’s a smile from a friend, a piece of chocolate from a coworker, or even just sitting on the couch with people you enjoy, and watching your favorite show together.

I am a pretty mushy person, but I was able to give you the amended version of my lovey-dovey rant. I LOVE LOVE! What can I say!

Let the Body Rest

I am so happy it’s Thursday!

Today is my Friday off because ever other week I have Friday off and this just so happens to be the one. I look forward to it for many reasons: I get to sleep in, I can stay in my sweats, eat breakfast when I want, eat lunch when I want, leisurely sip my coffee, go to the gym, run errands, clean the house….and the list goes on. Who doesn’t love a day off though, right? I always find that my to-do list is usually pretty lengthy on these days, but so far it’s not too bad. I am definitely a list person. I get satisfaction from writing out tasks I need to complete and then crossing them off with such pleasure once I have accomplished the task. You can say it, I’m a total nerdo.

By the way, yesterday I did take a day off from physical activity. It felt pretty good to have a ‘rest’ day even though I’ll be the first to admit I have a hard time actually giving myself those days. However, I know the importance of letting your body recover, so I do take them once a week (twice if it is a rough week). It is important to listen to your body telling you to slow down sometimes. I will be back in full swing tomorrow!

Breakfast was once again a fruit and yogurt bowl but this time I mixed in some Kashi Berry Blossoms cereal. This was a definite winning combo. I also snagged a half a piece of homemade zucchini bread at work.

At lunch break today, a couple of my coworkers and I braved the weather and went for a walk outside. It really wasn’t too bad once you got moving and the sun was out so that helped. We stuffed our lunches in our pockets and walked for about 40 minutes. I am so glad they pushed me to go for a walk because I felt the endorphins for a good two hours after the walk! I sipped on a couple of decaf Chai teas in the afternoon as I cruised through the rest of the work day.

Now I am home and in the process of cooking up dinner. It’s going to be a good one! I will post it later and you better believe it involves vegetables. Until then, Moose says “keep it real homies.”
