The relationship between sleep, exercise and nutrition

Sleep

600px-Green_equilateral_triangle_point_up.svgExercise                                                             Nutrition

These three words are very much connected to one another speaking in terms of how the body functions. When one of the three components is lacking, the other two often times follow. For example: You were out all night with friends and got little to no sleep. The next day being sleep deprived, chances are good you are going to be more likely to call for pizza delivery and plant yourself on your favorite spot on the couch, versus cooking up a grilled salmon with veggies and hitting the gym with the newest products from Joy ON.

On the contrary, when one is well-rested, chances are better that they will make healthier decisions (if that is their lifestyle) and they will be more inclined to get active.

The reason I bring this up is because this past week I have not been sleeping well. I can hardly go even one day with little sleep much less almost a whole week of very little and poor sleep. I’ve mentioned before I am one of those people who need a good 8 plus hours of sleep to function at my best. Yesterday the lack of sleep finally caught up with me. I felt nauseous and completely exhausted. My body is fighting so hard to stay healthy with all of the flu and illness going around, and it wasn’t responding well to the whole lack of sleep bit. Take a look at the top CBD lotions online that can help you get that good night sleep you are missing.

I spent the day resting.

What did I want to eat yesterday? Well, I wanted everything. First of all I had a crazy appetite, but second I craved low-nutrient dense foods like ice cream, chocolate, and candy. My sleep pattern was off, therefore the two other components of my health were off as well. However badly I wanted those foods, I KNEW my body needed good nutrient packed foods if I were going to stay healthy. I did what I know best, I packed in the fruits and veggies.

Breakfast: banana with peanut butter.

Mid-morning snack: apple

Lunch was a bunch of small snacks: Broccoli salad

broccoli Snacks: Quinoa, dates with peanut butter, mukimame (edamame)

mukimame

Dinner: Hawaiian chicken with pineapple and pan-seared brussels sprouts with parmesan

chicken and brussels sprouts

Dessert: I resisted my urge to go buy ice cream and saved mucho calories and fat by making my own banana soft serve with one banana a dash of almond milk and a sprinkle of cocoa powder.

chocolate softserve

I even “forced” myself to take a very slow walk on the treadmill to increase circulation and to help ward off any illness making its way into my system.

I fought through the cravings throughout the day and did my best to level out each corner of the health triangle, and the good news is I slept SO much better last night. I feel like a new woman today. I’m not saying that the reason I slept better was solely because of eating well, because there are other underlying factors going on, but I do know that keeping a balance of the three components: sleep, nutrition, and exercise, can greatly improve our overall being and health and they have such a huge influence on eachother. (Credit: https://sites.google.com/site/nutrisystemormedifast/)

Do your best to keep these three components at their peak. We will get through this flu season once and for all.

Stay healthy my friends and take good care of your body. It’s the only one you have!

Question: What are your thoughts on this “health triangle?”

30-Day Abs Challenge & Vacation Plans

Howdy! Happy weekend to you all. Did everyone have an enjoyable Friday?

Like many of you, my Fridays at work at “casual.” I wish that meant I could wear sweats to work but it’s not that casual. Jeans will do though!

melanie casual friday

Lunch was not captured in photo but I had a bowl of leftover veggie soup, carrots, an apple, and a piece of dark chocolate from a lovely co-worker. We call dark chocolate our “vitamin” so if one of us was looking for a piece of chocolate we will ask the other for a vitamin. We love our daily dose (moderation, moderation moderation!).

After work I snacked on a handful of blackberries and 2 dates with peanut butter. Then I got movin’. On Sunday, I accepted a physical challenge (this brings me back to the show Double Dare–anyone else?) through Challenge Loop. The challenge is being put on by Jen Morgan and is called….

30 Day Abs Challenge

Each week for the month of January Jen posts a new workout and you must complete the workout 3-4x a week. Here is the first week’s challenge:

jen morgan

On the “off” days she encourages everyone to do a 1-minute plank. Besides the fitness aspect of the challenge, she also promotes the importance of clean eating in reaching your health and fitness goals.

In my entire life I have never had “abs.” When it comes to ab work I tend to get extremely lazy. I’ll do “core” work after some cardio exercises, bust out a few sets of the same move and then be done. I’ve never been consistent enough and have never given it a fair chance to see results. This is why I signed up for the challenge.

It was totally free. The stipulations are you comment on the Challenge Loop site each time you complete one of their workouts and you must post 8 times in order to be entered into a contest to win a copy of Women’s Health Big Book of Abs. The book isn’t my motivation, building confidence in my appearance is.

After 1 month, I shall see my progress. I finished my first set yesterday and I was really struggling through it. I hope I will continue to feel my core strengthening as I progress through the month’s exercises.

What’s REALLY motivating me to get moving and get my body in tip-top shape is knowing that I will be in a bikini in less than two months. Dana and I booked a vacation to Turks and Caicos for the end of February!!!

Turks and Caicos is a little exotic island just north of the Dominican Republic and Haiti and east of Cuba.

turks and caicos

Turks and Caicos Quick Facts (source):

  • Turks and Caicos Islands consist of 40 islands and cays, eight of which are inhabited
  • Turks and Caicos are located in the Atlantic Ocean, not the Caribbean Sea
  • Language – English
  • Currency – The US dollar is the official currency
  • Climate (while we are there) – From November to May the average temperature is 80 to 84 degrees. Water temperature in the winter is about 74 to 78 degrees. A constant trade wind keeps the climate at a very comfortable level. PERFECT!
  • Government – The Turks & Caicos Islands are a British Crown Colony. A Governor is appointed by the Queen and presides over an Executive Council formed by an elected local self-government.

I am literally getting more and more excited by the second as I write this post! We decided on the end of February because that is usually the time that I start to get a mild form of the winter blues. Minnesota winters are very looooonnnnggg so having a wonderful trip like this to look forward to really helps to get you through!

chairs-on-the-beach-turks-and-caicos

Instead of a hotel we are staying in a villa—-so basically our own little home. We decided to go that route because 1. It was about the same cost as staying in a hotel and 2. It is complete with a full kitchen so we can make all of our meals, therefore hopefully keep my tummy feeling semi-normal.

It’s the same story each time we got to an all-inclusive resort, I end up eating way too much food namely desserts. Not that we won’t stay in an all-inclusive again, because we will, but this will be a nice change of pace. We will bring some of our own groceries which are non-perishable, and then purchase fresh fruits, vegetables, and seafood while we are there.

The resort supplies us with 2 stand up paddle boards which I have been so anxious to try!

SUP

The villa is right on the water…

Anyway, I could really go on all day about how thrilled I am about this, but I will stop. I feel very lucky to have the opportunity to go on this trip with Dana. It will be a very relaxing getaway for us. I am planning to pack lots of books, games, and peanut butter!

Back to reality again…dinner’s this past week were all pre-planned. I wrote them all out before we went grocery shopping and stocked up on all necessary ingredients. This made evening meals SO easy. I really need to start planning more often.

Monday: Lobster and crab feast!

Tuesday: Bean burritos—this one was actually spontaneous

Wednesday: Vegetable Soup

Thursday: Buffalo Chicken Salad

Friday: Turkey burgers with grilled onions, brussels sprouts, and broccoli

turkey burger

After dinner we took down our Christmas tree and rearranged our living room back to normal. As much as I LOVE Christmas, it feels good to be moving on now and starting the fresh new year.

I also munched on highly addicting Chex mix that Dana made…

chex mix

Nom nom nom…

Okey dokey, it’s time for me to get on with my day. Happy Saturday my friends!

Question of the day: If you could go on vacation ANYWHERE right now, where would you go?

Low-Fat Vegetable Soup in the Slow Cooker

It’s my favorite day of the week! HAPPY FRIDAY! I have a very low key weekend ahead of me and I am perfectly okay with that.

I have a recipe to share for you that was inspired by Courtney from SweetToothSweetLife. She made a veggie stew which looked spectacular and I wanted to try something similar. I made a few changes and am pretty darn happy with the results!

Into the crockpot on Wednesday morning:

  • carrots
  • parsnips
  • onion
  • garlic
  • green bell pepper
  • celery
  • tomatoes (frozen from garden!)
  • cannelini beans
  • chicken broth
  • italian spices
  • garlic powder
  • salt and pepper

vegetable soup

I set my favorite piece of kitchen equipment, aka the crock pot, on low for 8 hours during the day.

For lunch: Chicken breast with leftover refried beans, melted cheese, salsa, and avocado. This combo was just ‘meh’ to me. I didn’t LOVE it, but I did like that it was protein packed. I’m just more of a bean, Greek yogurt, egg, or peanut butter protein loving kinda gal.

chicken

I also ate a big baggy of carrots and a pear for dessert.

pear

After work I changed into my workout clothes and went to the living room to work my arms and back with the resistance band. My knees were hurting pretty badly after the race so I wanted to keep it low intensity.

Once dinner time rolled around I tested the flavor of the soup, added a touch more salt and pepper, and ladled up two bowls for the hubby and myself.

vegetable soup

I topped the veggie soup with parmesan cheese…

And thoroughly enjoyed this soup. I went back for a second bowl too. It’s warm, hearty, veggie-filled, low-fat, and DELICIOUS.

Mooser is just getting over an outer ear infection which included an antibiotic treatment as well as ointment in his ear daily. He quickly learned to hate the ear drops and got all too smart when it came time for them.

I thought this picture was hysterical and really captured his hate love for it!

So resistant!

Thursday

Thursday was a pretty ordinary day around here. I went to work, went to the gym after work (elliptical, push-ups, and core work), came home, made dinner.

I went the easy route again with dinner: Buffalo chicken salad with green onions, celery, feta cheese, and light ranch dressing.

buffalo chicken salad

So spicaaay! I am realizing that the older I get, the more sensitive I become to spicy foods. Is that weird?

I am debating whether or not to get a workout in at some point today. My knees are still very sore. I’ve been icing them daily but they must not have been too happy with my cold run the other day because they are still aching. I’m pretty sure my body is trying to tell me to rest but I’m having a challenging time listening to it because it’s the new year and I really want to get back into a solid workout regime again. I will see how I am feeling this afternoon and then decide.

I am off to take on my day. I hope you all have a fantastic Friday and I will catch up with you later gators!

xoxo,

M

A Healthy Start to 2013: Polar Dash 10K

I am very excited to recap on my run from yesterday so I am not wasting any time today.

New Year’s Day (yesterday) I got up bright and early to eat my usual banana and peanut butter pre-run breakfast and sip on a half a cup of coffee. I laid out all of my running gear the night before like I always do, I even pinned my number on my shirt and tied in my time chip to my shoe.

My nerves took over temporarily while thinking about the frigid temperatures, and I started to second guess if I had the right amount of clothes and layers on. On the ride over the thermometer read -7°F. The last long run we did outside it was 9°F outside. That’s a big difference! Dana reassured me that what I had on would be just fine and eventually I came to the realization that yes, I would be fine.
IMG_1271

We picked up my brother Kevin and his friend Jeremy (who ran the half-marathon with us in June) and drove to St. Paul. We parked and took the shuttle over to the starting area.

IMG_1274 IMG_1273

We all did the bathroom thing then headed over to the starting line. At this point the temperature had probably crept up to a whopping -4°F. You had to keep moving to keep the circulation flowing so everyone was jumping, running in place, stretching, and trying to stay warm. This was the hardest part of the whole race for me. From the time it took for us to leave our car in the lot and head to the starting line was about 25 minutes, and my toes were just not having it. They were starting to go numb. All I wanted to do was start running! I have never wanted to start running so bad!

Once the race began and our wave took off, the toes were still feeling pretty immobile, but at about mile 2 they were feeling fine. I ran next to Dana, Kevin, and Jeremy the whole race (minus the very end when K and J took off) which made it so much fun. Jeremy wore an afro wig and crazy 80’s shorts with a fanny pack and got all the runners pumped up and was highly entertaining. One girl even came up to him after the race and told him she was keeping an eye on his afro the whole race and PR’ed because of it!

Another form of entertainment was seeing all of the runner’s iced over faces. It was especially hysterical when men had big beards because the ice completely forms around the beard and turns it white. We all looked like we should have been in some sort of Christmas movie.

Here’s my frosty hair:

IMG_1278

Between the entertainment and running with the three boys and keeping each other company, the race flew by. Even though the temperature was sickly cold, there was no wind so the run actually didn’t feel too cold. Dana was right, I had worn the perfect amount of clothes and layers. It’s the same thing I wore on this training run except I wore a wicking  thermal insulated head band instead of a hat.

I felt like it was one of my easiest races actually (albeit not one of my fastest). I finished the run in 1 hour and 37 seconds. I was hoping to get an hour or less, but that’s alright. I’ll blame it on the very slow first mile due to a large mob of runners. 🙂 I am still just very proud I finished a race in sub zero temperatures.

This was definitely one of the most fun races I have done too. I couldn’t believe all of the die hard Minnesotans who were out there running and out there cheering for the runners! I am so proud of my state.

Post-race the wonderful volunteers were handing out waters, goodies bags with bananas, salted nut rolls, and chips, and best of all HOT CHOCOLATE! I don’t mean any ordinary hot chocolate, this was like super chocolatey totally awesome hot chocolate. It tasted like heaven in my mouth. What a fun way to end the race!

IMG_1277

Our amazing team: Team Ice Pack.

IMG_1280

A little different from our group picture post half-marathon in June. Ha ha!

Besides the 10K, there was also a half-marathon and a 5K. The Polar Dash was put on by Team Ortho. I have raved about their races and the organization of the races in the past, and this one gets the same credit. The volunteers are so friendly, there is never a moment when you are unsure of where you need to be, they are right there for you if you need them, and they help you have fun and enjoy your races.

The Polar Dash race on January 1st was the perfect way to kick off a healthy new year! I felt fabulous!

We were all very excited to warm up and “thaw” in the car ride home.

IMG_1281

Immediately after walking in our front door I turned the heat up and hopped in a hot shower. I got into my coziest fleece pants and plopped myself on the couch for the majority of the day. I think the combination of the cold run and my body working hard to regulate my body temperature coupled with the fact that I slept terribly the night before set me up for a super drowsy day.

I did manage to dress the pup up in Polar Dash gear. It’s always good for a laugh or two. What a good sport.

IMG_1284

I was extremely hungry for lunch but had no ambition to make anything, so I snacked on some freeze dried salted edamame for some quick fuel and protein. These babies pack 12 grams of protein in a half a cup. They aren’t out-of-this-world fantastic tasting, but I do enjoy them and they are a healthy snack, and especially a good snack to pack if traveling.

salted edamame

Eventually I rounded up enough energy to make myself a healthy salad. It’s nothing you haven’t seen before but it did taste pretty darn good.

salad

A kajillion snacks happened in the afternoon. I had a bottomless pit of a stomach yesterday. I snacked on almonds, craisins, carrots, a banana, almond crackers, peanut butter. My appetite was insane.

Once dinner rolled around we were both still feeling pretty unmotivated, so we opted for easy. I found a can of refried beans in the cupboard, heated them up with some Parkers Farm salsa. I topped the beans on corn tortillas with shredded cheese, corn, tomatoes, cilantro, and some more salsa.

bean tacos bean tacos

So simple and so delicious.

I did manage to prepare a meal for the crock pot that will be cooking all day today. I hope it turns out! I’ll let you know.

Off to work I go…Happy Wednesday (I keep wanting to say today is Thursday)!

10 Things I Learned in 2012

Happy New Year’s Eve! Did everyone have a good weekend?! Mine ended with a Vikings’ football win. As much as I’ve neglected to watch them all season, I really get into the games especially at the end and if they’re doing well. Yes, I’m a fair weather fan. I’ll admit.

I guess I can rewind backwards from Sunday to Saturday since I started with Sunday night football. Sunday was pretty quiet. We ran our errands and seriously hit up the Target after Christmas clearance aisles. Dana’s already talking about putting the Christmas lights back up next year. 10 1/2 months to go!

target

We cleaned the house just to tidy it up again and then I headed over to mom and dad’s to watch the game and hang out. I stayed until the 3rd quarter or so then finished the game at my house with Dana and his dad. It was a nail-biter!

Saturday

We were feeling ambitious on Saturday. We started off by suitin’ up for a 3 mile outdoor run. This time the thermometer read 13 but said it felt like 3°F. My legs really don’t react well to this cold weather and I’d be lying if I said I wasn’t the tiniest bit nervous about it, but like I said, I need to remind myself….

It doesn’t matter how fast I go, just go. Just finish.

It’s as simple as that. I would really like to enjoy myself too! 🙂

After our run we start tackling our winter project list which included repainting our living room and creating another accent wall with some leftover paint we had from this wall. Over the past two years it got really nicked up from Moose’s toys and bags rubbing against it, etc., and needed a refresher.

DSCN6314 DSCN6315

I know it doesn’t look like much but it FEELS SOOO GOOD. You can sort of tell that the wall with the clock is a cocoa color. It makes the room look larger and more homey. I love it. After our 3 hour paint job, we showered up and got ready for dinner out…

At Roasted Pear. We had bought a Living Social deal for $20 to get $40 worth of food or drink and decided it was the perfect night to use it.

IMG_1241

melanie roasted pear

My dinner order was very non-Melanie-like. I ordered the petite filet with french fries. The chance of me ordering a steak is like 1 in 100 coupled with the choice of french fries over a healthier option….very rare. They both sounded good to me though, and I though what the heck?!

IMG_1245 IMG_1246

And I didn’t regret my decision. It was very good! We finished off our night out with a shared hot fudge sundae with a cherry on top.

IMG_1247

And then went home to our pooch who was waiting to dance with his mama. 😉 Not really, but he was a good sport!

IMG_1252

Since it is the last day of 2012 I wanted to put together some type of recap from the past year. I decided to make a top 10 list of things I have learned in 2012. It can be blog related, life, health, whatever. I just thought it would be fun. So here it goes…

2012

So maybe I didn’t learn all of these things this past year, but I was definitely reminded of the importance of each and every one of those statements. I am so looking forward to a very happy, healthy and “lucky” 2013.

I will be kicking my 2013 off with a 10K run; what better way to start it off! Happy New Year my beautiful friends! I love you all and cannot thank you enough for supporting me and accepting me for who I am.

Question of the day: What is something you learned in 2012?

A Christmas Full of Family, Friends, and Joy

Well hello there my beautiful friends! I hope everyone had a wonderful holiday full of family, friends, and the joy of the season.

I gave the food photos a break this weekend, and really the camera in general as well. I soaked up every moment of the celebrations. I’m feeling a bit groggy today so I will be short-winded, but still wanted to recap the events for you all and relive them for myself.

Sunday: Extended family get together on my mom’s side. There were LOTs of people there (I have like a million cousins). We all hung out, caught up, enjoyed some great food and great company.

These photos weren’t taken at the party but they were still fun to share:

Christmas Eve: Gift wrapping at the Children’s hospital in the morning and then shuffled off to my mom and dad’s for appetizers, gifts, dinner (french onion soup, tortilla soup, oyster stew, bread, and veggies), and 10:00 pm church service. We actually had my whole immediate family home and of course I had to make sure we got a family photo. I’ll be posting it soon—-very special to me!

In the meantime, another family photo…

Kidding, he LOVED it! Plus his auntie Abbie gave him another toy too…

She may not always act like she loves him but I think secretly she does. She’s just playing hard to get.

Next, off to Dana’s parent’s house for a celebration full of gifts, food (ham, beef roast, scalloped potatoes, asparagus, etc.), and again, wonderful company. I did not snap one single photo at Dana’s parents house but I can tell you we had some great food and lots of time to relax.

We got home around 8:30 and after putting away a few gifts, cleaning up the kitchen, and washing my face, I hunkered down on the couch with my new slippers as we watched How the Grinch Stole Christmas and continued planning a future vacation which is yet to be revealed!!

christmas relaxing

I had the most incredible Christmas. I am so very grateful for my amazing family and friends who fill my heart with so much love and whom I love unconditionally. I hope you all had an equally delightful holiday.

Now, it’s time to get back into the clean eating!

I’m off to do about 5 loads of laundry and clean up this house a bit! Happy day to all!

Christmas Survey (my turn)

After yesterday’s more serious post, I was feeling the need for a fun light post. So that’s exactly what it’s going to be today.

This Christmas survey has been floating around the blog community (I got this one from Courtney who got it from someone else and so on). It’s time to relive some Christmas memories! Are you ready?!

1. Favorite Christmas Album/CD/Song? .

The past couple of years I have been really into Glee Christmas on Pandora. Also, my bro got me Lady Antebellem’s On This Winter’s Night CD and I have been listening to that each morning as I get ready for work. I like hearing different versions of Christmas songs versus the originals over and over and over…

2. Run on Christmas morning or take the day off?

Usually I would say no running in the morning, but this year since we are training for a 10K on January 1st, and Christmas falls on a Tuesday (our 3 mile run day), and since we don’t have plans until later in the day, I think Dana and I will be running a Christmas morning 5K together around the neighborhood. I may have to wear something festive or maybe carry bells? 🙂

3. What do you usually eat on Christmas morning?

Growing up mom would always make cinnamon rolls on Christmas morning and I loved them. I’d always try and pick out the one with the most frosting. Mmmmm…

4. Favorite holiday or Christmas tradition?

I keep trying to decide if I want to answer these in the present moment or from the past. I think I will go with the past to relive the memories…On Christmas Eve we would go to 5:00 mass which I always love because of all of the great music and warm holiday spirit in the room, and then we would travel to my Grandparents house who lived just a short distance away. Grandma would make spaghetti with homemade meatballs and although it has been quite some time since I’ve had them, I still remember how delicious they were.

After dinner, we would exchange gifts amongst the siblings as well as give mom and dad their gifts from us (usually something homemade from school) and then gifts to grandma and grandpa.

On the ride home at the end of the night I would watch the sky for Santa and his reindeer and would usually mistake an airplane with a red light for his sleigh. I didn’t tell anyone of course.

5. Real tree, fake tree or no tree?

I grew up with a real tree, and continue to go the real tree route. It’s become a tradition for Dana and me to go and cut one down ourselves. I LOVE the smell of real trees, and it’s a “greener” way to go, plus I love that it’s become our tradition as a couple.

6. Christmas pajamas… yay or nay?

Not usually but I did used to sport some amazing homemade PJ’s from grandma back in the day. That woman really knew how to sew. Someday I will be like that!

7. Where do you spend the holidays?

Now that I’m married, our Christmas plans pretty much change every year. This year, we will be with my family on Christmas eve, and Dana’s family on Christmas day. Both of our families live near by which makes it very easy to celebrate with both sides. I am very lucky.

8. Food that you always have during the holiday season? Favorite Christmas food/treat?

Cookies! Although I don’t like to keep too many around the house because both hubby and I have incredible sweet tooths.

9. Open presents all at once or take turns?

We always take turns. We usually do oldest to youngest or youngest to oldest. Something simple. We’ve always been good about waiting for the other person to finish opening before starting to open our own.

10. Favorite Christmas(ish) movie?

Elf, Home Alone, White Christmas, It’s a Wonderful Life, The Holiday. A couple of classics, a couple more modern.

And that ends the survey. That was fun!

I have to add just one more Christmas photo from the past and then I’ll be done…

Because really, it doesn’t get any cuter than that. I feel so warm and fuzzy! I have so much love for my family and can’t wait to have EVERYONE HOME very soon! Happy Holidays to all.

A Cozy Day to Make Cookies

I had every intention of making actual cooked meals this weekend but for some reason when it came time to do it, I just wasn’t in the mood. You saw Friday night’s dinner and now here you have Saturday night’s dinner…

On Saturday night we stayed in and watched “The Change Up” which was an okay movie. I did like that it was filmed in Atlanta, more specifically in Piedmont Park, which I loved so much when I visited Kate and Luke last month in Atlanta.

We were also entertained by the dog per usual…

Sunday

Minnesota got slammed with snow yesterday…12 inches of snow where I live. It is a winter wonderland around here and I LOVE IT!

What a perfect day to head to mom and dad’s and bake some cookies. Check out this little one out in the snow. She’s my little furry snowball.

Mom and I baked for about 5 hours. I’m always amazed at how long it ends up taking to make Christmas cookies.

We made peanut butter blossoms…

Spritz cookies and chocolate spritz cookies, chocolate chip M & M cookies, and homemade caramel.

We had tentative plans to make peppermint popcorn but being that is was 4:00 pm and the sun was going down, coupled with the fact that I had about 8 inches of snow to wipe off my car, we decided to wait on it.

It was the perfect cozy day to make cookies. The snow was coming down, we had the football game on for part of the time and Christmas music on for the other part, it was cozy, we were energized…it was wonderful.

I’m hoping to get back on the ball this week with making actual meals again. Wish me luck!

Question of the Day: What are your favorite holiday treats?

Cauliflower Pizza Crust

Happy Wednesday to all!

So a while back, Dana and I attempted making a gluten-free pizza crust. We struggled with finding the right time and temperature in baking the crust, and also failed to put parchment paper under the crust which resulted in a very stick-to-the-pan crust. It still tasted good, but I didn’t have a recipe to share considering it was a partial flop.

We learned from our last trial, and on Monday night gave it a second shot and have succeeded in our attempt. It’s a little time-consuming but so completely worth it especially if you are a pizza lover who can’t tolerate gluten or if wanting to watch the waistline.

Step 1: Preheat oven to 400° F. Rinse one large cauliflower head, cut off the stems, and toss them into a microwave safe bowl. Cover with plastic wrap and microwave for 10 minutes, or until cauliflower is fork-tender. Let cool slightly so that it is comfortable to handle. Place in food processor and process until you reach rice sized pieces.

Step 2: In a thin kitchen towel place cauliflower in center and fold up all edges to meet in the middle in a big clump. Over the sink, gather the edges and twist together so that the liquid drains out of the cauliflower (try to keep your hands away from the hot liquid). Continue twisting until liquid is removed. Open towel.

Step 3: Place cauliflower back into bowl. Make sure that it is slightly cool at this point. Add one egg, 1/2 teaspoon dried oregano, 1/4 teaspoon garlic powder, and 1/2 shredded mozzarella cheese. Stir to combine.

Step 4: Line a baking pan with parchment paper (**important step**) and use fingers to flatten cauliflower into a thin crust. I flattened mine to about 1/2 inch thickness. Spray lightly with cooking spray or olive oil.

Step 5: Place on the middle rack in preheated oven and bake for 50 minutes. Then turn the broiler on and broil for 5 minutes until top of crust begins to crisp up and turn golden color. Remove from oven.

Step 6: Add tomato sauce, shredded cheese, parmesan cheese, and toppings. Place back into oven and broil on low for 4 minutes or until cheese is melted.

Slice into squares and ENJOY!

Catch Up from Tuesday

Dana and I have been following our 10k training plan and have been lucky so far with the weather. Yesterday we bundled up and took Moose out for a 3 mile run around the neighborhood. I wore a tank top, two long-sleeve wicking shirts, pants, normal socks, light gloves, and ear warmers. The run was still pretty chilling given my layers but not painful at all. It was around 32°F when we went. Unfortunately, I think the cold-cold weather has finally arrived. This morning the thermometer says 16. I foresee adding on more layers in my next run.

My motivational level on a scale of 1-10 last night for making dinner was a 3, so I went the easy route and threw together a BBQ chicken salad. There were slim pickins’ on salad toppings that actually went with the chicken so I went with dill pickles, peas, cheddar cheese, and ranch dressing. Random, but good.

Speaking of random. Anyone else been watching Elf every time it’s on? “The only way to spread the cheer is by singing loud for all to hear.”  I had that saying all day in my head at work yesterday. I am loving all of the Christmas movies!

That is all for today….I hope you all have a fantastic Wednesday and are enjoying the holidays!

Question of the day: What is/are your favorite Holiday movie(s)?

My favorites are: Elf, White Christmas, It’s a Wonderful Life, The Holiday, and Home Alone (to name a few).

We Found “The One”

Yesterday you wouldn’t find me shopping in any malls for Black Friday deals, you would find me being productive around the house instead.

My morning started off with a post-Thanksgiving recovery breakfast of banana with peanut butter, cinnamon and honey.

I then got busy ordering our Christmas cards…yea I’m a little late on ordering those I know. Whoops! We didn’t do cards last year because of all the wedding shenanigans, but this year I really wanted to do some.

When lunch time rolled around I pulled together a few delicious Thanksgiving leftovers

Then I took down the fall decorations in order to prepare for Christmas decorations!!!

The next order of business was finding a Christmas tree. We drove down to Nelson’s Apple and Tree Farm to begin our search to find our perfect Christmas tree. I was bundled up in my long underwear, sweatshirt, wool socks, boots, head band, hat, and mittens, but that wind was still pretty darn chilly!

The tree farm was really pretty and very well organized. They had each row of trees labeled so that you knew what kind of tree you were looking at.

Here is the first tree I fell in love with…

But it wasn’t the one we chose. We usually go with the Frasier fir variety like that one but as we walked around a while longer, we found a beautiful white pine and we knew it was “the one.”

That was our baby. We took turns sawing it down…

We tied up that bad boy with love onto the top of our truck, paid for our tree, and called it a successful tree farm trip (ski patrol style)…

I anxiously watched the tree on top of the car on the way home as the wind whipped through it. I was pretty excited when we were able to exit the freeway. Our poor baby. 🙂

We set up our tree once we got home but we still need to decorate it. Once we get’er done, I will be sure to share it with you all! It’s a beaut.

After our tree adventure, we worked on the egress window outside. My fingers were frozen by the time we were done. That is quite the project I tell ya. At some point we will finish both windows so that we can finally finish our basement. Some day.

For dinner we ate some leftover turkey chili that I had frozen from this batch a couple of weeks ago. It was the perfect dinner to warm us up. We relaxed the rest of the evening and were in bed by 9:30, no joke.

*********

Today we are going to spending more time outside hanging up Christmas lights, finishing some yard work, and hopefully decorating the Christmas tree. I think it’s going to be a little warmer today than yesterday so hopefully we can make it an enjoyable experience outside. Oh the joys of Minnesota winters.

I will be perfectly honest with you…I am insanely distracted right now as I write this post because the Hangover II is on in the background. I was never one of those people who could study in college with the television on. I need complete silence. Nothing has changed since then! Sorry if this is somewhat of a splotchy post.

Anyway, time to get a move on it! Enjoy your Saturday friends!
