5-9 Servings of Fruits and Veggies

As I had mentioned before I am doing my darndest to continue to reach my fruit and veggie 5-9 servings a day goal throughout the holiday season (and always), and yesterday was no question a good day in that department.

I’ve definitely reused this photo more than once but here was my not so exciting to anyone anymore YET delicious breakfast yesterday!

I LOVE PEANUT BUTTER and BANANAs! B-A-N-A-N-A-S! That is serving #1 on the F/V  tally.

One could say I am in a “rut” with breakfast but rut can sometimes sound like a bad thing, and I will never consider PB and banana a bad thing.  :smile

An unphotographed Skinny Ho Ho Mint Mocha from Starbucks was thoroughly enjoyed mid-morning; quite possibly the last one of the year for me, but we’ll see.

Lunch was very random. I wasn’t super hungry (probably due to the mocha) so I had a snacky day.

Dinner

Serving #6 and 7 (and maybe even 8):  A seriously outstanding veggie hash. In the mix: kale, asparagus, broccoli, mushrooms, onions, leftover scalloped potatoes, black beans, an egg to hold it together a little bit, and cheddar cheese. Seasoned with salt and pepper and garlic powder and OhEmGeee soooo GOOD!

It’s a good thing I had a healthy day o’ eats because I have nothing to brag about in the physical activity department. I was completely wiped out and the most activity from my day involved a couple of errands and 5 loads of laundry. That’s okay though, I know I’ll get right back on that activity wagon. Plus, we have our 10K coming up in 5 days! Yaya I’m excited for it!

A Christmas Full of Family, Friends, and Joy

Well hello there my beautiful friends! I hope everyone had a wonderful holiday full of family, friends, and the joy of the season.

I gave the food photos a break this weekend, and really the camera in general as well. I soaked up every moment of the celebrations. I’m feeling a bit groggy today so I will be short-winded, but still wanted to recap the events for you all and relive them for myself.

Sunday: Extended family get together on my mom’s side. There were LOTs of people there (I have like a million cousins). We all hung out, caught up, enjoyed some great food and great company.

Christmas Eve: Gift wrapping at the Children’s hospital in the morning and then shuffled off to my mom and dad’s for appetizers, gifts, dinner (french onion soup, tortilla soup, oyster stew, bread, and veggies), and 10:00 pm church service. We actually had my whole immediate family home and of course I had to make sure we got a family photo. I’ll be posting it soon—-very special to me!

Christmas Day: A lazy morning and a yoga session (we opted out of our run given it was –15°F windchill) followed by Moose asking nicely if he could open his Christmas presents…

She may not always act like she loves him but I think secretly she does. She’s just playing hard to get.

Next, off to Dana’s parent’s house for a celebration full of gifts, food (ham, beef roast, scalloped potatoes, asparagus, etc.), and again, wonderful company. I did not snap one single photo at Dana’s parents house but I can tell you we had some great food and lots of time to relax.

We got home around 8:30 and after putting away a few gifts, cleaning up the kitchen, and washing my face, I hunkered down on the couch with my new slippers as we watched How the Grinch Stole Christmas and continued planning a future vacation which is yet to be revealed!!

I had the most incredible Christmas. I am so very grateful for my amazing family and friends who fill my heart with so much love and whom I love unconditionally. I hope you all had an equally delightful holiday.

Now, it’s time to get back into the clean eating!

Quick Veggie Packed Meals

Today begins the official start of my Christmas vacation and I’m thrilled of course. How could I not be? I have my whole immediate family coming in to town. That in itself is the best Christmas present on earth. I am so anxious to see everyone and to celebrate this very special holiday with the ones I love so dear.

A look ahead:

  • Tonight: Holiday party with friends
  • Tomorrow: Christmas party with family
  • Monday: Wrapping gifts at a local hospital and then heading to my parent’s house for gifts, dinner, and 10 pm church service.
  • Tuesday: A Christmas run in the morning followed by celebrating Christmas at Dana’s parent’s house

There is so much fun to be had and so much celebrating to be done and I.CAN’T.WAIT.

With all of the celebrating and festivities, I find it challenging (to say the least), to stay on top of my 5-9 servings of fruits and veggies a day. I decided it might be a good idea to put together a little recipe round-up of some quick and veggie-loaded meals to help keep me motivated throughout these next few days.

  1. Pear Salad: mixed dark greens, pears, walnuts, dried cranberries, feta cheese, turkey bacon with poppy-seed dressing

I find it easiest to get a big serving of veggies in when I make a salad which is why most of the meals I just showed you involve just that. Besides getting an incredible amount of the nutritionally dense veggies, salads are just SO quick which is always a plus if you ask me.

Throughout this holiday season I will do my best to hold true to my fruit and veggie intentions: 5-9 servings a day. Who’s with me?

Alright, I’ve had my morning cup of coffee and my pre-run breakfast, now it’s time to gear up for a frigid 6.5 mile run outside with the hubby. The official temperature outside right now is………9ºF. This will be perfect prep for the actual run on January 1st because the weather will most likely be similar to today’s. This will be fun. Unfortunately we will have to leave the pooch at home. He has an ear infection and it was advised he chill out for a few days.

Stress Relievers

We all have stressors in our lives. Some are minor like driving in rush hour, and some are major, maybe an unjust boss or financial struggles. Each and every one of us deals with stress and we all have our own ways of dealing with it. Some of us may not even know we are stressed until our bodies start to tell us otherwise.

I want to dabble into that topic in just a bit, but first I have a few food photos to share with ya’ll. This first one was actually from two nights ago, but it’s a favorite of mine:

The Southwest Salad but with a few minor changes. For one, I used the leftover lentils and black beans from the lentil tacos the other night. The rest of the toppings were virtually the same as always: tomatoes, cheddar cheese, corn, avocado, and a light drizzle of ranch dressing. I will sometimes add onion to this salad but wasn’t feeling the whole onion breath part of that idea so left it out last night. The only thing I forgot to add was cilantro. I even had cilantro in the fridge. Oh well.

Thursday

A morning smoothie in my new Home Goods coffee mug. I do drink coffee from it as well but thought it was perfect for my smoothies too. Yesterday’s smoothie: Almond milk, banana, vanilla egg white protein powder, peanut butter, a tiny bit of cocoa powder (I’m out of my chocolate protein!), and a large handful of kale.

Lunch was eaten while running errands during break and isn’t worth mentioning. But dinner….that’s a different story.

A while back I bought a Hawaiian marinade by Lawrys. I brought the summer back by brushing this marinade on shrimp and pineapple skewers. I broiled them for a short while, broiled up some broccoli with parmesan cheese for a veggie side, and ended up with a seriously delicious dinner that was SO easy.

The rest of the evening was spent relaxing and watching Glee and Modern Family!

Now, onto this stress talk. I found the top ten stress relievers according to the Mayo Clinic and wanted to see how I was doing personally with containing my stress in comparison to their list. Here we go…

1. Get active
“Physical activity pumps up your feel-good endorphins and refocuses your mind on your body’s movements, improving your mood and helping the day’s irritations fade away.”

I am physically active 6-7 days a week including different activities from yoga, to running, strength training, cross-training, etc. I would say 98% of the time, I feel fabulous after I finish a work out.

2. Meditate
“During meditation, you focus your attention and eliminate the stream of jumbled thoughts that may be crowding your mind and causing stress. Meditation instills a sense of calm, peace and balance that benefits both your emotional well-being and your overall health. Guided meditation, guided imagery, visualization and other forms of meditation can be practiced anywhere at any time…”

I’m working on this one. I am reading a book about meditation but I having a hard time getting through it. I like the idea of guided imagery and picturing positive outcomes in stressful situations and would like to work on that more often.

3. Laugh
“When you start to laugh, it lightens your mental load and actually causes positive physical changes in your body. Laughter fires up and then cools down your stress response and increases your heart rate and blood pressure, producing a good, relaxed feeling.” 

Listen to a comedian, hang out with family and friends, or watch Modern Family. I am guaranteed to giggle.

4. Connect
 “Social contact is a good stress reliever because it can distract you, provide support, help you weather life’s up and downs, and make you feel good by doing good.” 

I am lucky to have great friends at work who I get to socialize with daily if time permits. I love being with family and friends as well. We help eachother get through the good and the bad times.

5. Assert yourself
“Learn to say no to some tasks or to delegate them.”

Over the years I have been working on this one. I’m learning that it is OK to say no sometimes and be selfish if it means taking care of my well-being. Most of the time, I do like to say yes to social gatherings, but once and a while I can tell when my body is saying no, and I try to listen.

6. Do yoga
“Yoga brings together physical and mental disciplines to achieve peacefulness of body and mind, helping you relax and manage stress and anxiety.”

Oh yes, the wonderful benefits of yoga. This is also a fairly new hobby of mine but I truly do enjoy it and feel it does a great job of relieving stress.

7. Sleep
“…Sleep is the time when your brain and body recharge. And the quality and amount of sleep you get affects your mood, energy level, concentration and overall functioning.”

I’m definitely one of those people who needs at least 8 hours of sleep to function at my highest capacity. I’m usually in bed at 10 pm every night. I completely agree with this one.

8. Journal
Writing out thoughts and feelings can be a good release for otherwise pent-up emotions.

9. Get musical
“Listening to or playing music is a good stress reliever because it provides a mental distraction, reduces muscle tension and decreases stress hormones.”

I like this one, especially if I can dance too.

10. Seek counsel
If new stressors are challenging your ability to cope or if self-care stress relievers just aren’t relieving your stress, you may need to look for reinforcements in the form of professional therapy or counseling. Therapy may be a good idea if stress leaves you feeling overwhelmed or trapped, if you worry excessively, or if you have trouble carrying out daily routines or meeting responsibilities at work, home or school. Professional counselors or therapists can help you identify sources of your stress and learn new coping tools.

 I would also like to add “baking” to my stress reliever list. If I am not in a hurry and can leisurely roll out some cookies, it is very therapeutic to me.

There you have it. With the holidays now in full swing, it is easy to get caught up in the hustle and bustle of the season, but remember to relax and remember the true meaning of the celebration. Try some of these stress relievers and come up with some of your own if you need to. Enjoy the season!

Winter Running Gear

Happy Saturday! I’ve fallen a little behind so the plan is to quickly catch you up to speed annnnnnnddd here we go!

Thursday evening

After work I suited up and hit the road for a quick two-mile run outside before the sun went down. The temperature was in the 40’s so the weather was decent, but the run didn’t feel good to me at all. I really don’t appreciate afternoon runs and neither does my digestive system. I am definitely more of a morning runner person.

For dinner I whipped up a quick banana and egg pancake.

Ingredients:

  • 1 egg
  • 1 banana
  • cinnamon
  • blueberries
  • toppings: apple butter, peanut butter, and banana slices

Then Dana and I headed out for the night to do some volunteering for the Salvation Army. By the way, I am really feeling the holiday spirit lately. I LOVE Christmas!

Friday

Breakfast was a chocolate covered strawberry smoothie.

Ingredients:

I asked for more Jay Robb egg white chocolate protein powder for Christmas. I really really like it. Earlier this week I made another peanut butter chocolate smoothie for breakfast but added kale into the mix and I swear it tasted even better. Thanks again Shannon for the suggestion. NUM.
Fast forward to the evening…there were some major comforts happening around this house. Fire in the fireplace, sweatpants, puppy, hubby, Christmas decorations….

And a meat and cheese platter for dinner which included Nut Thins Pecan crackers (love), amazing havarti cheese which I do believe is my favorite cheese, turkey sausage, and crispy green beans with marinara dipping sauce.

For the beans: I dipped the beans into egg whites, then rolled in almond flour, parmesan cheese, salt and pepper. I placed them onto a lightly sprayed pan, sprayed the tops with olive oil, and broiled on low for about 7 minutes until the beans were golden on top. I really enjoyed them! I had to sneak some veggies in somehow so it was the perfect little side.

The rest of the evening was spent addressing holiday cards and watching Glee from last week. It feels so good to get the holiday cards all done and ready to mail. The way we had our assembly line set up reminded me a lot of writing out thank you cards after the wedding. This went a whole lot faster though!

Saturday

Now here we are on Saturday. This morning I woke up at my leisure, ate my usual pre-run breakfast, banana and peanut butter, and layered up for our Saturday run. This Saturday was our 4.5 mile run. We are still sticking to our 10K training plan!

It was about 25°F outside; here is what I wore:

  • Leggings
  • Sweatpants
  • Long-sleeve wicking top with t-shirt over it
  • Fleece zip-up
  • Normal socks and running shoes
  • Fleece mittens
  • Cotton hat

The verdict: I was actually too warm. I ended up running without gloves for the last third or so of the run. I would much rather be too warm than cold though so I was okay with it.

Each run has been a trial in trying to figure out the best apparel and layers to wear for the given temperatures and the way my body reacts. I haven’t quite figured it out yet, but I hope to before January 1st!

My feet and bottom of my pants were soaked at the end of the run, but that’s to be expected after running in the snow.

Overall, it was a good snowy run. That was the furthest I have ever run in the snow before. It was like running on wet sand and was definitely more challenging than running on pavement.

10K Training Plan & Other Fitness Challenges

Hello world! The weekend came and went as fast as I can say Happy Holidays. The holidays are now in full swing. We had an annual holiday party with our friends on Saturday which was a blast. I gave the camera a rest for the night however so you’ll just have to take my word that it was a great party full of lots of laughs, great food, and great friends.

The last time we caught up was on Friday, so it’s time to play catch up from Friday night, Saturday and Sunday. So here we go!

Friday Night

On Friday we went over to my mom and dad’s (and Kev too) to watch our wedding video with them. We laughed, some of us teared up, and really enjoyed reliving the memories of our wedding day together.

Mom made us gluten-free spaghetti noodles with red sauce that had italian sausage, mushrooms, onions and spinach. It tasted SO good and I could not tell the difference in taste or texture between gluten-free and ordinary pasta. We also had a side salad—can’t forget about the greens!

Saturday

I had my standard pre-run breakfast of banana and peanut butter before Dana, Moose, and I hit the road for a 3.5 mile run.

The training plan for our 10K on January 1st is such:

  • Mon: cross-training and/or strength train
  • Tues: 3 mile run
  • Wed: cross-train and/or strength
  • Thurs: 2 mile run
  • Fri: rest or cross-train
  • Sat: week 1—3.5 mile run; week 2—4.5 mile; week 3—5.5 mile; week 4—6.6 mile; rest or short run; then the 10K!
  • Sun: rest or cross-train

The weather has been pretty unpredictable around here. On Saturday morning the temperature was around mid to upper 30’s and now this morning the thermometer says it’s 49º F outside! It’s supposed to drop down again later in the week but I am loving the warm for as long as I can get it.

After our run we made a stop at Caribou Coffee for their BOGO 20¢ deal. We treated ourselves to the Light Salted Caramel Dark Chocolate Mocha. That was the same one I got in Atlanta and once again, it was like taking a bite of dessert each time I took a sip. Amazing.

We continued our journey over to Minneapolis to pick-up our bibs and race gear for the 10K for early packet pickup.

We even got to meet a local meteorologist, Ken Barlow, who was volunteering at the pick up! As you can see in the photo I was a tad bit excited about it.

Once we arrived home I made myself a simple fall salad with mixed greens, pear, feta cheese, walnuts, and poppy-seed dressing.

After some food prep, and errands, we said good-bye to the pooch and headed out to the holiday party for the evening.

Sunday

Brunch: sautéed onion with chili beans topped with cheese, a runny egg, tomatoes, and avocado. Outstanding.

Next on the agenda was flipping through the Sunday paper, coupon cutting, vegging on the couch, and watching the Vikings lose.

I managed to get myself on the treadmill for 35 minutes while I watched Elf on ABC Family’s 25 Days of Christmas. I also completed some reps for a current challenge I’m participating in…

Courtney of Sweet Tooth Sweet Life is hosting a 2012 Closeout Workout Challenge. The challenge is to complete 2012 reps of exercises of your choice by the end of 2012. After day 2 I have 1,837 reps to go. I figure it’s worth a shot, even if I don’t reach 2012, I was still doing extra activities daily that I wouldn’t normally do. It’s a great motivator for me to do more strength activities.

Dinner: Broccoli salad (recipe to come most likely) and mixed greens with leftover beans from the morning, avocado, and honey mustard dressing.

If you can’t tell I was trying to veggie load yesterday. I didn’t get much sleep on Saturday night so I was trying to energize my body with good foods versus falling into the ever-so-easy slump of eating not so good food choices when feeling tired. Sleep, activity, and food choices are all very related. It’s important to keep all three aspects in check in order to stay healthy.

Comfy Belly Soup

After yesterday’s morning run to test drive my new shoes, the verdict is in. The Brooks are keepers! After 3 trips to Marathon Sports and a lot of patience from the staff, I finally found a shoe that is comfortable, supportive, and lightweight.
I had made the decision to run inside on the treadmill versus outside so that I could test out the shoes and keep them in good shape just in case I didn’t like them and needed to return them.
From here on out, the majority of my runs will be outside so that I can prepare my lungs and my body for the coldness that will be at the 10K I’m running on January 1st.
No more shorts until next year. Sayonara!
Speaking of cold, even though it’s been pretty darn chilly around here, I am still making myself a smoothie now and again for breakfast. Yesterdays was particularly amazing and it was suggested to me by my friend and fellow blogger Shannon.
In this smoothie:
Unsweetened Vanilla Almond Breeze
1 ripe banana
1 large scoop of Parkers Farm PB
1/2 packet of Jay Robb’s chocolate egg white protein powder
Shannon usually includes spinach in hers too but I didn’t have any on hand so I omitted it this time.
The result…a smoothie that tastes like a peanut butter cup. It doesn’t get much better than that. I ate it with a spoon to make it last longer. 🙂 I LOVE the chocolate flavored egg white protein powder.
This bad boy held me over for a very long time. It’s the perfect combination of carbs, fat, and protein.
Moving on to dinner.
On Monday I started preparing for what would be leftover turkey and veggie soup. I saved the remains of the turkey (aka the carcass but I don’t love that word) so that I could try my hand at boiling it to make broth. This was my first attempt at making soup from leftover turkey btw. We didn’t have a pot quite big enough to house our 20 lb’er but I was still able to plunk some of it into a hot water bath.
As it bathed for a while, it softened a bit and I was able to push it down into the water a little more. I let it simmer on low for about 2 hours, then removed the turkey from the broth and placed it onto a cutting board. I placed the turkey broth (covered) in the fridge after it cooled down and it sat there to cool overnight.
On the cutting board, I began working on my turkey; salvaging any non-fatty pieces of meat on the bone. Being that I’m not a huge meat person, this job was a little on the gross side for me, but I made it through. Once I gathered my turkey meat, I gave it a chop, and refrigerated it for the night.
Don’t forget to save the wish bone!
Next, I chopped 1 cup of carrots, onions, and celery, and 2 cloves of garlic, and sautéed them lightly for about 5 minutes. I added 1 teaspoon of sage and some cracked black pepper during the last minute of saute time. I then let these cool and placed them in the refrigerator overnight.
Come Tuesday morning I removed the broth from the fridge. The fat had gathered on the top of the broth and hardened so that it is easier to scoop out. I scooped out the majority of it using a slotted spoon, added in the prepared turkey and veggies, popped in a bay leaf, covered it and let it simmer for an hour. I then added 1 cup of frozen green peas, a dash of garlic powder, onion powder, and salt and pepper to taste. I let the soup simmer for 5 more minutes.
Soup is on! Not the most attractive photo ever; I miss my natural light in the evening!
Such a healthy bowl of soup to comfort any belly. It really adds a lot of flavor to make your own turkey broth. We had a ton of leftovers so I froze the soup in individual serving size bags for another day or for when we’re feeling under the weather. If you wish you could add in whole wheat pasta or brown rice to add a little more “staying power” to this soup. I enjoyed it just as is but did end up needing a snack later in the evening.
I am happy it’s Wednesday. I didn’t sleep too well last night but have a lovely cup of jo by my side as I write who is really helping me perk up. It’s not that I need coffee in the morning, I just really enjoy it and am comforted by it. I look forward to it every morning.

We Found “The One”

Yesterday you wouldn’t find me shopping in any malls for Black Friday deals, you would find me being productive around the house instead.

My morning started off with a post-Thanksgiving recovery breakfast of banana with peanut butter, cinnamon and honey.

I then got busy ordering our Christmas cards…yea I’m a little late on ordering those I know. Whoops! We didn’t do cards last year because of all the wedding shenanigans, but this year I really wanted to do some.

When lunch time rolled around I pulled together a few delicious Thanksgiving leftovers

Then I took down the fall decorations in order to prepare for Christmas decorations!!!

The next order of business was finding a Christmas tree. We drove down to Nelson’s Apple and Tree Farm to begin our search to find our perfect Christmas tree. I was bundled up in my long underwear, sweatshirt, wool socks, boots, head band, hat, and mittens, but that wind was still pretty darn chilly!

The tree farm was really pretty and very well organized. They had each row of trees labeled so that you knew what kind of tree you were looking at.

But it wasn’t the one we chose. We usually go with the Frasier fir variety like that one but as we walked around a while longer, we found a beautiful white pine and we knew it was “the one.”

That was our baby. We took turns sawing it down…

We tied up that bad boy with love onto the top of our truck, paid for our tree, and called it a successful tree farm trip (ski patrol style)…

I anxiously watched the tree on top of the car on the way home as the wind whipped through it. I was pretty excited when we were able to exit the freeway. Our poor baby. 🙂

We set up our tree once we got home but we still need to decorate it. Once we get’er done, I will be sure to share it with you all! It’s a beaut.

After our tree adventure, we worked on the egress window outside. My fingers were frozen by the time we were done. That is quite the project I tell ya. At some point we will finish both windows so that we can finally finish our basement. Some day.

For dinner we ate some leftover turkey chili that I had frozen from this batch a couple of weeks ago. It was the perfect dinner to warm us up. We relaxed the rest of the evening and were in bed by 9:30, no joke.

Today we are going to spending more time outside hanging up Christmas lights, finishing some yard work, and hopefully decorating the Christmas tree. I think it’s going to be a little warmer today than yesterday so hopefully we can make it an enjoyable experience outside. Oh the joys of Minnesota winters.

I will be perfectly honest with you…I am insanely distracted right now as I write this post because the Hangover II is on in the background. I was never one of those people who could study in college with the television on. I need complete silence. Nothing has changed since then! Sorry if this is somewhat of a splotchy post.

Mmm mmm Turkey Chili

Happy mid-way through the work week day aka Hump Day! 🙂

I worked late yesterday therefore don’t really have any catching up to do from yesterday, BUT I do want to catch you up from Monday. I keep getting so behind on my posts but you don’t mind that I have to rewind a day or two do you?!

Monday

I’ve really been loving this combo lately: one banana topped with Parkers Farm creamy peanut butter and Peanut Butter & Co Dark Chocolate Dreams. Mmm mmm that’s the stuff.

I had a bucket load of things to do including doctor visits, a haircut, Target run, and most importantly, using some of my birthday money (which I got early) to go shopping for a few new items.

I can proudly say that I bought four items at TJMaxx: three were clearance items and this sweater below was regular price.

I loathe trying on clothes at the actual store. I prefer to purchase items, take them home and try them on, and return them if necessary. Of course if the store isn’t conveniently located near my home, I go a different route. Anyway, I went home and tried on the four items and it turns out I love them all, however I am going to return an oversized sweater which would be so comfortable if it weren’t so itchy. I can’t handle itchy or uncomfortable anything, so back it goes. I’d say 3 out of 4 isn’t bad though right?!

Lunch

Once lunch time rolled around I pulled together this beautiful thing. We have a mixed green salad with blackberries, chicken, feta cheese, walnuts, and Ken’s Lite Poppy Seed dressing. Oh, and avocado. Goodness, I can’t forget the avocado. This salad was fabulous.

I did end up getting a half hour walk in but the walk was done on the treadmill this time around. On Monday it was a whopping 28°F or so here so I thought I would stay warm and walk inside. I flipped the TV back and forth between Ellen and Paula Deen. I was a happy camper.

Big news! I am hosting Thanksgiving at my house this year! This will be my first time ever hosting as well as my first time ever preparing turkey. I am planning the menu and getting super excited about it! More to come on that.

Check out my new kicks! On Sunday actually, Dana and I headed over to Marathon Sports in Minneapolis because we both needed some new running shoes. We had our other pair since March and we were both starting to feel some discomfort in our feet after runs, so we declared it time for new shoes. You don’t have to twist my arm for new shoes!

I stuck with the Asic Gel Kayano 19. The 19 is a little bit lighter than the 18 yet still provides cushioning, not to mention I LOVE the colors! Score.

On to dinner. We’re talking comfort on what was a pretty cold Minnesota day. What does that call for?

CHILI! I pulled a bag of garden tomatoes from the freezer which I had peeled and froze this summer. I threw a handful ingredients into a pot, let them all simmer together for a couple of hours, and something magical happened. I am excited to share this recipe because it was such a wing-it one for me and turned out just FANTASTIC! Mmm mmm!


Turkey Chili

Ingredients
  • 4½ cups pureed tomatoes
  • ⅓ lb lean ground turkey, browned
  • 1-15 oz. can chili beans
  • 1-15 oz. can red kidney beans
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1 Tbsp. chili powder
  • ½ Tbsp. cumin
  • ½ Tbsp. garlic powder
  • ½ Tbsp. salt
  • 1-2 tsp. black pepper
  • Optional toppings:
  • fresh cilantro
  • shredded cheddar cheese
  • avocado
Instructions
  1. Combine all soup ingredients into medium pot; stir to combine.
  2. Cover and let simmer on low for two hours, stirring occasionally.
  3. Ladle into soup bowls and top with avocado, cilantro, and cheese (optional).

One last bit of exciting news…My 27th birthday is this Friday and I am lucky enough to be celebrating it in Georgia this weekend with some amazing friends! We will be staying with these two foxy individuals…

I am SOOO excited! I can’t wait! I miss them so much.

Hearty Lentils with Spinach

Hello there! Happy Sunday my friends. What’s everyone have on the agenda? Resting and relaxing or running errands and prepping for the week ahead? Whatever it may be I hope it’s a good one so far!

I still have yet to recap the second part of our Colombia vacation but I was really itching to write a “normal” post plus I have a recipe I want to share with you all, so the second recap will have to wait a little while longer. Here’s the Miami recap, and Colombia Part I recap if you’re interested.

I have a little bit of catching up to do from Friday first so we’re going to be starting off there right at lunch time. To celebrate my birthday (a week early) my co-workers and I went out to Houlihan’s for lunch. I received a free $15 coupon for my birthday to the restaurant so that’s why we decided to go there.

I ordered the french onion soup and a caesar salad with grilled chicken and polenta croutons. I was very happy with both of my selections.

Moving on to dinner…

This is your forewarning that the meal you are about to see is one of the most unappetizing dishes ever to appear on BN. However, I promise you that although unappealing to the eyes, it is very appealing to the palate.

Hearty Lentils with Spinach.

After I plated the lentils over the spinach, I stirred the warm lentils into the spinach and decided that I liked it that way better.

Oh yes I am falling in love with lentils. First the Curry Stew and now this.

Hearty Lentils with Spinach

Ingredients
  • 1 small onion, diced
  • 1 cup carrots, chopped
  • 1½ cups lentils
  • ¾ tsp. garlic powder
  • ½ tsp. ginger powder
  • ¾ tsp. cumin
  • ½ tsp. curry
  • ¼ tsp. paprika
  • 1 Tbsp. brown sugar
  • 3 cups reduced sodium chicken broth*
  • 3 cups spinach
  • *Use vegetable broth if cooking vegetarian
Instructions
  1. In a medium saucepan, saute onions and carrots on stovetop for 3 minutes.
  2. Add in spices and stir.
  3. Add in chicken broth, stir, reduce heat to simmer, cover and let simmer for 2 hours; stirring occasionally.
  4. Before serving, add spinach and stir in until it wilts into lentils.
  5. Serve hot.

It’s such a hearty and healthy dish that I truly enjoyed (and Dana did too).

Saturday

I enjoyed two cups of Dunkin Donut’s Pumpkin Spice coffee with hazelnut creamer to kickstart my morning.

Have you tried this stuff?! If you haven’t please go buy some. You won’t regret it. NUM.

Next was breakfast. I topped one banana half with Parkers Farm creamy peanut butter and the other half with Peanut Butter & Co’s Dark Chocolate Dreams peanut butter. Yes it is a dream how good that stuff is. A dangerous dream. Thanks to Peanut Butter & Co. for sending me some coupons for their heavenly product.

I gave breakfast time to settle while watching two episodes of Anthony Bourdain’s No Reservations, Dominican Republic and Maine. Both episodes were great. His humor cracks me up.

Then it was time to lace up and head out the door and face the dreary morning with a run. Moose surely didn’t care that it was drizzly and dreary, he was so ready to go. We trekked through the neighborhood and covered about 4 miles.

The rest of the day was spent cleaning up the house, “helping” Dana dig out the window well to prepare for egress windows so that we can finish our basement at some point, putting the patio furniture away for the season, hanging out with Moose, and baking up a treat for the worker crew.
