Baked Santa Fe Spring Rolls

Hi there my loves! I hope everyone had a wonderful weekend. I have some catching up to do so here we go….

Saturday

I cracked open the Parkers Farm Crunchy Honey peanut butter and let me tell you, I was in heaven. The slight sweetness of the honey mixed with the crunchy and smoothness of the peanuts paired with a good ol’ banana made me one happy little girl.

After breakfast I hopped on the treadmill and did one sweaty and very nonboring routine:

  • 10 minute walk to warm up
  • 1 mile run at 6.0 mph
  • 2 minute walk at 4.0
  • 1 mile run at 6.5
  • 2 minute walk at 4.0
  • 1 mile run at 7.0
  • 10 minute recovery walk

I was really sweating after this one and the best part was it went by very fast.

After the run I completed my second session of the Ab Challenge circuit. I’ll be completing my third session today so that I reach the weekly goal of 3-4x a week. Tomorrow begins the second week with a new ab workout. I’m loving it.

I wasn’t very hungry for lunch but knew I needed to eat, so I whipped together a smoothie with Jay Robb’s chocolate egg white protein, almond milk, kale, strawberries, half a banana, and blueberries. Very satisfying.

Then I got to work on what I love doing oh so much…experimenting in the kitchen. Later in the afternoon I had plans to go to my mom and dad’s for dinner. They were going to be making chicken and I told them I would bring a salad.

My wonderful aunt introduced me to a deli-bought salad couple of weeks ago that I absolutely adored, and I had decided I needed to try to recreate it. The salad she had was made with chickpeas, but I wanted to use black beans instead. You could definitely substitute with chickpeas if you would like.

Here is what I came up with!

Ingredients
  • 2 (15 ounce) cans black beans, rinsed and drained
  • 1 cup bell peppers, diced
  • ⅓ cup red onion, diced
  • 1 green onion, diced
  • 2 Tbsp. cilantro, chopped
  • Sauce:
  • juice of ½ of a lime
  • juice from ½ of an orange
  • 1 tsp. red wine vinegar
  • salt and pepper
Instructions
  1. In medium bowl combine beans, peppers, onions and cilantro.
  2. In a separate small bowl mix the sauce.
  3. Pour the sauce over the bean mixture and stir gently to combine.
  4. Serve cold as a salad or with corn tortilla chips.

I snacked on a small handful of Driscoll’s blackberries in the afternoon. I realize now how much fruit I ate that day!

Sunday

I was a cleaning machine in the morning not to mention we hit the coupon jackpot. I swear the coupon books (all four of them) were made specifically for me. There were coupons for so many things I actually use. I was psyched.

I headed to the treadmill again on Sunday this time for a long walk (4.0 pace). I walked for about 50 minutes while watching who knows what t.v. shows. Okay, I watched the Kardashians. Guilty pleasure. I also completed my 1-minute plank from the challenge.

Dinner:

I used the leftover bean salad to make Santa Fe Spring Rolls! I added about 3/4 cup of corn and 1/4 cup of shredded cheese into the black bean salad recipe.

The spring rolls I used are made from rice flour, water, and salt. They come in a round package and are very hard. To soften them you simply take one and turn it in a bowl of warm water. It softens right up and is pliable to work with.

Santa Fe Spring Rolls:

Step 1: Preheat oven to 375°F and prepare a baking pan with parchment paper. Once rice paper is pliable, place on flat surface and spoon in bean mixture just off-center.

Step 2: Fold up bottom end of paper to cover mixture.

Step 3: Fold in both right and left sides of paper.

Step 4: Gently roll up the paper into a roll and place on prepared baking pan and spray the tops with olive oil.

Here’s the kicker…since this was my first time ever working with rice paper, I had no idea how long to bake these. We baked the rolls for about 20 minutes and then switched the oven to low broil where they sat for another 10 minutes. Since the inside did not need to be cooked for any reason, our biggest intention was to crisp up the rice paper.

If I were to do it again I would still probably bake it for 20 minutes, and broil for 10, but I would flip the rolls half way through the broiling process to crisp up both sides.

But anyway, the result was a very tasty sinless meal. I served the rolls with a side of Parkers Farm mild salsa.

They were definitely very crunchy too! This was a fun change of pace meal for us. BTW before I prepared these rolls I devoured a load of broccoli and hummus, so that was part of my dinner too.

The rest of the evening was spent being pretty lazy on the couch. I made myself a bowl of FAGE 0% fat Greek Yogurt with fresh Driscoll’s strawberries and blackberries.

It was a nummy day!

A Great Day on So Many Levels

Yesterday was a GREAT day on so many levels.

For one, I received wonderful news regarding some of my friends and family. I am so blessed and thankful for my family and friends and my heart is so full of love for all of them.

Also, this box of goodies from Parkers Farm landed on my doorstep.

They sent me:

  • Mild Salsa
  • Roasted Garlic Salsa
  • All Natural Honey Crunchy Peanut Butter
  • All Natural Creamy Peanut Butter
  • 2 Gourmet Cheese Balls (smokey bacon and cheddar ranch)
  • 2 Cheese Spreads (port wine and sharp cheddar)

I am so excited to try out each and every one of these products and share them with family and friends! I’m especially pumped about the honey crunchy peanut butter because I’m pb obsessed obviously. There will be some recipes coming your way involving these products–you can bet your bottom dollar.

And as if it couldn’t get any better, I also had this wonderful package delivered to my house from Driscoll’s Berry. They kindly sent me six cans of their Perrier Sparkling Water in original flavor, lime, and grapefruit. I really enjoy a sparkling water beverage on occasion. I feel like it’s a special treat when I drink one. I was very happy when they asked me if I would be interested in giving them a whirl.

Along with the Perrier, they also send me $20 coupons towards a Driscoll’s berry purchase. Are you kidding me? I hit the jackpot! I am in berry heaven.

I will be tossing a review your way as soon as I crack into these cool crisp beverages, and you will be seeing some fresh berries in my posts over the next couple of months. Wooop woopp! How fun, right?!

I realize this post is quickly turning very random but, I have to share a newly discovery snack that I have fallen in love with. It is Angie’s Boom Chicka Pop lightly sweetened popcorn. At just 37 calories a cup, an ingredient list that gets my stamp of approval (popcorn, cane juice, sunflower oil, and sea salt), and an absolutely delicious taste, this little snacky snack gets an A+ in my book. ANNNNnnndd…it’s made in Mankato, MN which is my alma mater! I love when I find local products!

I snacked on a few handfuls of the golden kernels after work before heading over to Dana’s parent’s house for dinner. They invited Dana, me, and my parents over for a nice casual dinner.

A chicken dish that I went nuts over full of flavor and olives and cooked prunes. There is a fancy name for this dish but I can’t recall it.

Seriously, everything was AMAZING. I cleaned my plate in no time. For dessert we had some Christmas cookies and chocolates. It was so great having our families together post-Christmas. It was very low key, casual, and a great way to finish off this beautiful day.

I have to be perfectly honest with you all, I have let my healthy living habits fall slightly to the wayside. The Christmas cookies tend to take control over me and I can hardly resist, the workouts have been few and far between this last week, and I feel completely sluggish. I am ready to turn this truck around and get back to the cleaner eating and increase my physical activity again. Bring on the New Year baby! It’s time to work off those extra cookies I enjoyed (and don’t regret eating) so thoroughly over the holidays.

A Christmas Full of Family, Friends, and Joy

Well hello there my beautiful friends! I hope everyone had a wonderful holiday full of family, friends, and the joy of the season.

I gave the food photos a break this weekend, and really the camera in general as well. I soaked up every moment of the celebrations. I’m feeling a bit groggy today so I will be short-winded, but still wanted to recap the events for you all and relive them for myself.

Sunday: Extended family get together on my mom’s side. There were LOTs of people there (I have like a million cousins). We all hung out, caught up, enjoyed some great food and great company.

Christmas Eve: Gift wrapping at the Children’s hospital in the morning and then shuffled off to my mom and dad’s for appetizers, gifts, dinner (french onion soup, tortilla soup, oyster stew, bread, and veggies), and 10:00 pm church service. We actually had my whole immediate family home and of course I had to make sure we got a family photo. I’ll be posting it soon—-very special to me!

Christmas Day: A lazy morning and a yoga session (we opted out of our run given it was –15°F windchill) followed by Moose asking nicely if he could open his Christmas presents…

Next, off to Dana’s parent’s house for a celebration full of gifts, food (ham, beef roast, scalloped potatoes, asparagus, etc.), and again, wonderful company. I did not snap one single photo at Dana’s parents house but I can tell you we had some great food and lots of time to relax.

We got home around 8:30 and after putting away a few gifts, cleaning up the kitchen, and washing my face, I hunkered down on the couch with my new slippers as we watched How the Grinch Stole Christmas and continued planning a future vacation which is yet to be revealed!!

I had the most incredible Christmas. I am so very grateful for my amazing family and friends who fill my heart with so much love and whom I love unconditionally. I hope you all had an equally delightful holiday.

Now, it’s time to get back into the clean eating!

I’m off to do about 5 loads of laundry and clean up this house a bit! Happy day to all!

Christmas Survey (my turn)

After yesterday’s more serious post, I was feeling the need for a fun light post. So that’s exactly what it’s going to be today.

This Christmas survey has been floating around the blog community (I got this one from Courtney who got it from someone else and so on). It’s time to relive some Christmas memories! Are you ready?!

1. Favorite Christmas Album/CD/Song? .

The past couple of years I have been really into Glee Christmas on Pandora. Also, my bro got me Lady Antebellem’s On This Winter’s Night CD and I have been listening to that each morning as I get ready for work. I like hearing different versions of Christmas songs versus the originals over and over and over…

2. Run on Christmas morning or take the day off?

Usually I would say no running in the morning, but this year since we are training for a 10K on January 1st, and Christmas falls on a Tuesday (our 3 mile run day), and since we don’t have plans until later in the day, I think Dana and I will be running a Christmas morning 5K together around the neighborhood. I may have to wear something festive or maybe carry bells? 🙂

3. What do you usually eat on Christmas morning?

Growing up mom would always make cinnamon rolls on Christmas morning and I loved them. I’d always try and pick out the one with the most frosting. Mmmmm…

4. Favorite holiday or Christmas tradition?

I keep trying to decide if I want to answer these in the present moment or from the past. I think I will go with the past to relive the memories…On Christmas Eve we would go to 5:00 mass which I always love because of all of the great music and warm holiday spirit in the room, and then we would travel to my Grandparents house who lived just a short distance away. Grandma would make spaghetti with homemade meatballs and although it has been quite some time since I’ve had them, I still remember how delicious they were.

After dinner, we would exchange gifts amongst the siblings as well as give mom and dad their gifts from us (usually something homemade from school) and then gifts to grandma and grandpa.

On the ride home at the end of the night I would watch the sky for Santa and his reindeer and would usually mistake an airplane with a red light for his sleigh. I didn’t tell anyone of course.

5. Real tree, fake tree or no tree?

I grew up with a real tree, and continue to go the real tree route. It’s become a tradition for Dana and me to go and cut one down ourselves. I LOVE the smell of real trees, and it’s a “greener” way to go, plus I love that it’s become our tradition as a couple.

6. Christmas pajamas… yay or nay?

Not usually but I did used to sport some amazing homemade PJ’s from grandma back in the day. That woman really knew how to sew. Someday I will be like that!

7. Where do you spend the holidays?

Now that I’m married, our Christmas plans pretty much change every year. This year, we will be with my family on Christmas eve, and Dana’s family on Christmas day. Both of our families live near by which makes it very easy to celebrate with both sides. I am very lucky.

8. Food that you always have during the holiday season? Favorite Christmas food/treat? 

Cookies! Although I don’t like to keep too many around the house because both hubby and I have incredible sweet tooths.

9. Open presents all at once or take turns?

We always take turns. We usually do oldest to youngest or youngest to oldest. Something simple. We’ve always been good about waiting for the other person to finish opening before starting to open our own.

10. Favorite Christmas(ish) movie?

Elf, Home Alone, White Christmas, It’s a Wonderful Life, The Holiday. A couple of classics, a couple more modern.

A Cozy Day to Make Cookies

I had every intention of making actual cooked meals this weekend but for some reason when it came time to do it, I just wasn’t in the mood. You saw Friday night’s dinner and now here you have Saturday night’s dinner…

On Saturday night we stayed in and watched “The Change Up” which was an okay movie. I did like that it was filmed in Atlanta, more specifically in Piedmont Park, which I loved so much when I visited Kate and Luke last month in Atlanta.

We were also entertained by the dog per usual…

Sunday

Minnesota got slammed with snow yesterday…12 inches of snow where I live. It is a winter wonderland around here and I LOVE IT!

What a perfect day to head to mom and dad’s and bake some cookies. Check out this little one out in the snow. She’s my little furry snowball.

Mom and I baked for about 5 hours. I’m always amazed at how long it ends up taking to make Christmas cookies.

We made peanut butter blossoms…

Spritz cookies and chocolate spritz cookies, chocolate chip M & M cookies, and homemade caramel.

We had tentative plans to make peppermint popcorn but being that is was 4:00 pm and the sun was going down, coupled with the fact that I had about 8 inches of snow to wipe off my car, we decided to wait on it.

It was the perfect cozy day to make cookies. The snow was coming down, we had the football game on for part of the time and Christmas music on for the other part, it was cozy, we were energized…it was wonderful.

I’m hoping to get back on the ball this week with making actual meals again. Wish me luck!

One of My Favorite Meals

Thanksgiving 2012 was a success! 

The day started off with a pre-run breakfast of banana with peanut butter and cinnamon and a cup of coffee.

Then off to Hale to the Bird 5k for a gorgeous morning run. It was mid 50’s and absolutely perfect running weather. I ran my fastest 5k ever yesterday and am super pumped about it!

I was a co-sponsor of the event and Beautifully Nutty made it on the back of the shirts! I was a whole lotta excited about that!

After the race, Dana and I made our way home to get the turkey in the oven, look through the Black Friday ads, and have a couple of snacks to hold us over until dinner.

Dinner Time

Our guests arrived at 2:00 pm and we enjoyed delicious appetizers, drinks, and company. I also opened up birthday presents from my mom and dad and Kevin. Now my birthday is officially over. Bummer! I guess three weeks is long enough. 🙂

The turkey took a lot longer to cook than I expected (ahem 5 plus hours in the oven–are you kidding me?!), so when it finally came time to eat everyone was pretty darn hungry.

But you know what, it all worked out. Here is our lovely Thanksgiving meal…

Cornbread stuffing, gluten-free (recipe to come!), and cheesy broccoli and cauliflower.

 

Mashed potatoes with a few lumps which is my FAVORITE. One big dog sitting by our feet while we ate just in case something were to drop. Sorry, no luck there pup.

I cleaned my plate and then had two more bites of mashed potatoes before calling it quits. I wish I could temporarily grow a second stomach just for Thanksgiving so that I could eat a little bit more of this delicious meal. This is one of my favorite meals of all time.

Birthday Dessert

When dessert rolled around everyone sang “Happy Birthday” to me and I blew out my birthday candles! I feel like my birthday is not complete until that song is sung. I love that my mom always harmonizes when she sings it.

 

For dessert I had a piece of mom’s homemade french silk pie (she made it gluten-free for me) and a small piece of pumpkin pie (minus the crust). Both were delectable!

With only a few minor set-backs during the meal preparation, I would say it was a very successful Thanksgiving. I am so thankful for my family for keeping my stress level under control when things don’t go as planned.

Now it’s time to start thinking about eating up those leftovers! I hope you all had a happy and healthy holiday and were able to enjoy time with family and friends.

Colombian Vacation: Part II

Let the second and final half of our Colombian vacation recap prevail! In case you missed it, check out the first half of my journey to Bogotá, Colombia.

I’m starting off from where I left off in Part Uno which is Saturday evening, just before heading out to dinner.

Jeff and Ana were really hyping up our dinner/night out joint all day. They said it is the coolest place and when asked to compare it to something from back home, they couldn’t.

“It’s indescribable, you just have to see it, then you’ll get it.”

The destination was called Andres Carne de Res, which basically means it’s a steak house. We drove about a half hour out from Jeff’s place to get there. Upon arrival I knew that this place was going to be incredible.

After parking our car in the lot, we were walking towards the restaurant entrance and passed two small buildings; one being restrooms and the other a room with little cots set up in case people had a few too many mojitos and needed a little rest. Crazy right? But smart.

Next, after paying the cover charge to get into the restaurant and bar, we were given bright red hearts to wear as our entrance tickets. We made our way to the entrance and were led to our table. I took in all of the eclectic decorations and was immediately struck by the lively atmosphere. This place is indescribable. They’re right.

 

The pictures I have don’t even begin to capture the outgoing and energetic ambiance. The energy inside was contagious. They greeted us newbies with crowns and sashes and entertained us with a little song and dance.

We sipped on our mojitos, ate some fabulous appetizers, steak, and desserts while enjoying eachother’s company, but the highlight of the evening was definitely this…

The dance floor. EVERYBODY was dancing. This is what Latin America is known for. They can all move. Every single one of them. I was so impressed and loved shaking it to popular music from the region. I didn’t understand the lyrics but it didn’t matter. The way everyone would cheer at the beginning of their favorite songs let me know if it was going to be a really good one or not.

We danced our little legs off for a good three hours (don’t mind the creepy eyes from a couple of us in this photo) before getting a ride back home.

And I crashed. Andres was amazing.

Sunday

On Sunday we all got well acquainted with the couch. We did get up to go to the market to buy some local fruits, snacks, and chocolate to bring home to family and friends, but besides that, the day was pretty much a relaxing one.

I loved trying the different fruits from the region! The market was like heaven for me.

 

Eventually, we cleaned up and headed out for a late dinner on our last night.

I don’t recall the name of the restaurant, but it specialized in meat mostly: steaks, chicken, seafood, and the special of the day was lamb. I wasn’t feeling too adventurous that night, so I stuck with the chicken. It was in a red wine sauce and topped with fresh herbs. Pretty tasty!

Ana and Jeff surprised me with birthday presents considering they won’t be seeing me on my birthday which was SO sweet and completely unexpected. They gave me a super cute black purse and a scarf. I love them both. I wore the scarf the next day in Bogotá, which is the perfect segway…

Our last morning in Bogotá

We got so lucky with nice weather during our stay. Jeff couldn’t believe how nice it was while we were there. He said it was unseasonably warm and dry. It even hit 80°F one day! Typically it rains just about every day and the temperature hovers right around 65° F. The last morning was a rainy one, but it didn’t stop us from heading out.

We started our day the right way…with Colombian coffee (num) and then made our way to the mall for a brunch time lunch.

Jeff and Ana wanted us to try this burger joint that they enjoy. It was kind of funny to me ending our trip with an all-American meal, but I liked it. I was having a difficult time making a decision (weird) so I ordered a regular burger with tomato and lettuce on a whole grain tortilla.

It hit the spot. We hung out and chatted as I soaked up every last bit of Jeff that I could before he head to bring us to the airport for our departure back to Minnesota.

Our weekend in Bogotá flew by but was filled with so many wonderful memories, sights, FOOD, and friends. I am so happy that we finally made the journey out to visit Jeff to see where he lives, works, hangs out, and to meet his wonderful friends and beautiful girlfriend. Thank you for everything! I love you so much and can’t wait to see you again!

Colombian Adventure: Part I

Happy Happy Friday!

It’s time to begin the big Bogotá, Colombia recap! I was going to try to fit it all into one post but it was nearly impossible, so I’m going to break it down into two posts: the first half of the trip and the second half of the trip. I weeded through the photos to condense as much as possible, yet still fill you in on the good stuff. It wasn’t easy, but here’s what I came up with.

Upon arrival in Bogotá, we met up with my brother Jeff who lives and works in the city and is also fluent in spanish. He had to finish up a couple of things at work, so Dana and I spent a couple of hours relaxing, and I talked myself into a 25-minute yoga session. Denise Austin really makes you work.

Later in the evening, our gracious host was home so we cleaned up and headed out to meet up with some friends for dinner.

The restaurant we went to was called Carta Central and their specialty is ceviche. Jeff said we had to experience their ceviche.

We ordered a couple of appetizers: one was fried seafood (calamari, shrimp, etc.) and the other was ceviche served with avocados. I snapped photos of both of them but they turned out to be pretty hideous, so they got the “x”.

I’m not a huge “fishy-fish” person meaning I don’t like my fish to taste fishy, and I’m weird about textures when it comes to seafood too, so I went the safer route and chose a shrimp ceviche where the shrimp are fully cooked. This particular dish came in a light cream sauce with plantains and chives. It was awesome! My first experience with ceviche was definitely a good one.

It was super dark in the restaurant so I apologize for the terrible flash on this bad boy but you can at least get an idea of my delicious dish.

After dinner we walked back to Jeff’s place and crashed. We needed our rest for the adventures of tomorrow.

Saturday in Bogotá

In the morning we walked over to a restaurant called Bagatelle for some breakfast. Colombia is known for their amazing juices so Dana and I split a guanabana mandarin juice (on the left) and Jeff got pineapple juice with mint. Both were excellent and so refreshing!

I love all of the fresh herbs used in Colombia. It inspires me to want to try to grow a mint plant in my house this winter. Is that possible? Any thoughts?

For breakfast I ordered some type of egg souffle. I was challenged each time we went out to eat considering I couldn’t understand half of the menu. I took spanish back in middle school and freshman year of high school, and I still remember some vocab, but not enough to decipher over the content of the menus and be 100% sure of my decision. 🙂 Also, I didn’t want to bother my brother or Dana each time it came down to it since they were trying to decide on their order as well. I did my best, and the boys (and Ana) helped me too.

Back to this egg dish…what they do is mix the egg whites with parmesan cheese and they whip them up and bake them so it turns into a souffle and in the middle of the puffy mass are two runny yolks. It looked like a TON of food when it was brought to the table, but it was actually very light, yet still filling. Again, the power of eggs and their satiety rate I tell ya.

After breakfast, Jeff, Ana, Dana and I made our way out to explore the city. Our first stop was taking a gondola up to the top of a mountain to visit Monserrate which is a beautiful church in the mountains.

Did I mention I’m claustrophobic? I was happy the packed gondola ride was a short one.

And the market where I tried ants for the first time and the last time. Ants are a delicacy in Colombia. There are only two regions in Colombia where they find these ants. They fry them and salt them and I have also heard they come in chocolate-covered, and people eat them. When in Rome…I tried some ants.

Okay, I tried a single ant. It tasted like a salty dirty soy nut. I may have preferred chocolate covered? I am proud of myself for trying it but am happy to say I never have to do that again.

After our mountain adventure, we walked over to La Candelaria which is a historic area in downtown Bogotá. We all shared a bag of freshly fried plantain chips which were SO good.

The side streets were lined with small cafes and restaurants. We stopped into one and ordered an authentic tamale which we all split.

Next stop, empanadas. Tamales and empanadas were two things on my list of foods to try while in Bogotá.

They were pretty good but not as good as a homemade version a Colombian friend of mine makes. 😉

We ended up having a snacky lunch with the plantain chips, the tamale, and empanadas which I actually prefer to one big meal. That way I am able to try more foods and not be completely stuffed.

I bought a sweet treat while we were at the tamale place. I am not 100% sure what it’s made of but I do know the outside is candied guava. The inside is sort of like a thick caramel. I really enjoyed this guy.

I’m going to stop there and save Saturday evening-Monday for the next Bogotá post. I am having so much fun reliving the memories! We seriously had such an incredible time and were able to see so much of the city in such a short period of time.

Birthday Surprises, Pot Roast, and a Pinch of Yoga

Hello there friends! You’re going to have to bear with me on this one, judging by the post title, you can maybe tell this is going to be a jam-packed post.

Last time I checked in with you all, I mentioned that we were going to be hosting a very special birthday celebration for my mom’s 60th on Saturday. I left you all dangling in anticipation about the secret menu I had planned for the party. 😉

That’s right…savory, warm and comforting pot roast; in the slow cooker of course. But I didn’t do just one roast, oh no. I did two. Who doesn’t love leftover pot roast? Also, I’d rather have too much food than not enough food for company any day.

I began by lightly searing all sides of the roast over medium-high heat on the stove top. I then transferred the meat to the slow cookers, added in the rest of the goodies, and set those bad boys on low for 8 hours. Check out the recipe at the bottom of this post!

An hour or so before company arrived, I got to work on the potatoes. I made simple boiled and smashed red potatoes. First I rinsed and scrubbed off any dirt on the potatoes. Don’t you love my apron BTW?! Thanks to Stacy for her creative sewing work. The other side has ladies on it so that if Dana wants to cook in it he can reverse it. How cute, right?!

Next, I halved the potatoes and placed them into a large pot, covered them with water and boiled for 15 minutes or until fork tender. I drained the water, added 1 tablespoon of butter, and some salt and pepper, and got to mashing.

Ta da! I also made a small batch of cheater beef gravy to go on top for those who were interested.

For some green love to go around I made a salad I found on Pinterest from Espresso and Cream’s website. I gotta give this girl major credit. This salad was amazing. I made just a few minor tweaks. You can check out her recipe here, but below is my modified version.

Pear Poppy Seed Salad
Ingredients

  • 8-9 cups chopped romaine lettuce
  • 2 medium pears, diced
  • 1/2 cup dried cranberries
  • 1/2 cup chopped walnuts
  • 3 slices turkey bacon, cooked crispy and crumbled
  • 1/3 cup feta cheese crumbles
  • Ken’s Lite Poppy Seed Dressing
Directions
  1. Add all ingredients into bowl except dressing. Allow guests to dress their own salads.

Once the food was all ready to go, we got a fire going in the fireplace, set the table, and relaxed while waiting for our guests to arrive.

Once my family arrived, we munched on a tasty shrimp appetizer that Kevi brought to share. Then I told everyone to move to the table. It was time for dinner. We gave the birthday girl the head seat at the table, right next to the fire. She’s the freeze baby of the family. Dad, Kevin, and Scott were our other lovely guests.

This photo below is pretty much the best food photo shot I got all night. I must have been so caught up in the excitement of the party and some surprises to come that I wasn’t really into snapping.

For example, these next two photos do not justify the awesomeness of dinner and dessert. The pot roast came out so tender and flavorful. We also had the baby red potatoes, the pear side salad, sunflower whole grain bread, and apple crisp for dessert.

Mom and dad even made me a special gluten-free apple crisp with almond flour. Bless their hearts. It was delicious too! Talk about an all around comforting meal.

After dinner, we moved on to gifts. My brothers and Dana and I bought mom a Cuisinart 7-cup Food Processor. She has been needing a new one for one for quite some time so I thought it would be the perfect birthday gift. I have the same exact food processor at home that ironically enough, my mom and dad gave Dana and I as a shower gift. I really like mine so I decided to get them the same one!

Next came the big surprises. First, dad started off by giving mom a few gifts: a sweater, a shower liner(!), and some golf balls. Mom’s reaction was so genuine after receiving just these few simple gifts being that it was a big birthday for her. She was just happy to have (almost) everyone together—gifts don’t matter to her. But really, a shower liner??

A short while later, dad grabs another gift and gives it to her confessing that he has one more gift for her, and that it’s for their anniversary which is in November. Mom goes right along with it all and opens her gift which is an iPad.

Her laptop has been on the fritz for a very long time, but he has been planning on getting her this iPad for months, so needed to keep making excuses as to why they should wait to buy one. The line that had worked best lately was, “let’s wait until Black Friday, then we’ll go get you a laptop or an iPad.” She was fine with that idea since it at least gave her a time frame and gave her hope. Haha. This all cracks me up.

So, anyway. She doesn’t believe it’s really an iPad, or really her iPad. As she’s still trying to grasp the fact, dad wants to show her something on YouTube. He opens up the application and there is a video clip of one of my mom’s best friends singing a special song she wrote to my mom to the tune of “Give My Regards to Broadway.” In this clip, she divulges to mom that my dad will be taking her to New York for her birthday, and her friend and her husband would be joining them. 

At this point mom is completely floored and practically unsure of what to believe. Her reactions to all of these surprises were absolutely priceless and so sincere.

The last surprise that dad pulled out was tickets to see Jersey Boys on Broadway, and that at the latter end of the trip, they are going to travel to New Jersey to visit my mom’s aunt and uncle that live out there. 

The whole series of surprises left everyone very emotional. Mom deserves every single bit of every one of these gifts. She is so giving, faithful, compassionate, and a rock for all of us. She always knows what to say to make me feel better and to put things into perspective. I hope someday I will have the wisdom that she has.

It was such a fun birthday celebration. I’ve said it a million times but I’ll say it again, HAPPY 60th BIRTHDAY MAMA! You are the most incredible woman and I love you to infinity!

The rest of the evening was spent playing with the iPad and watching these two lovers play. Scotty’s dog Tuner is a husky and black lab mix, and she is beautiful. Mooser and Tuner get a long very well. Moose and Tuner sitting in a tree…

This post is getting real lengthy, and I apologize but real quickly I just want to check in on the October Yoga Challenge.

On Thursday I whipped out an Ab Strengthening Yoga session OnDemand. I thought it was a 20 some minute session, but when I looked back at it, I realized it was a 30 some minute session. Score! 

I am still loving every bit of this yoga challenge. I would like to work more of it into my schedule!

Slow Cooker Pot Roast

Ingredients
  • beef pot roast
  • 2 medium onions, chopped in thick wedges
  • 5 carrots, chopped in 1 inch pieces
  • 2 garlic cloves, minced
  • 1 tsp. garlic powder
  • ½ tsp. onion powder
  • salt and pepper to taste
  • 2 cups beef broth
  • 1 Tbsp. Worcestershire
  • 1 tsp. red wine vinegar
Instructions
  1. Brown all sides of roast in pan over medium high heat. Place into slow cooker.
  2. Add remaining ingredients into slow cooker.
  3. Set on low for 8 hours.

Reinstated Confidence in My Running Capabilities

I am pretty pumped about my morning and want to share it with you, but first a quick recap of my evening last night.

After a little bit of cleaning and a couple of errands, I had very little energy left to make dinner so I kept it real simple with Fresco Shrimp Tacos. I cooked the shrimp on the stove top for 3 minutes with some seasoning just to warm them up.

To assemble the tacos: Butter lettuce cup as your shell, then chickpeas (because that is what we had on hand), tomatoes, cilantro, shrimp, and salsa if you feel like it.

We didn’t have any ripe avocados but if we had you better believe there would have been some in the mix. These tacos were simple, fresh, and very tasty.

Later, we got the itch for some Fro Yo and made our way to Cherry Berry. I tried to control myself but ended up getting a little wild. I went with a mix of cake batter and s’more Fro Yo. S’more what? S’more FroYo. On top was a lot of chocolately heaven, a few sprinkles and a gummy cherry on top.

Should I have gotten frozen yogurt…probably not, but I don’t regret it.

Saturday

So here we are now onto Saturday. I began with a piece of pumpkin bread with Parkers Farm peanut butter and honey…

I also drank 1.5 cups of coffee while getting dinner ready in the crock pot. Tonight my family is coming over to celebrate my mama’s birthday and it is going to be F.U.N. and DELICIOUS!

Any guesses on what’s for dinner? I am making enough food to feed an army even though there will only be 6 of us. I would rather have too much food than not enough!

Run Time

Once those crocks were rolling, it was time for me to get rollin’ outside. I geared up, laced up my pretty pink laces,s grabbed the dog and we headed out for a run.

The weather could not have been more perfect. It was about 50 to mid-50’s and overcast. I didn’t have a mileage goal set as I was leaving out the door, I had just planned on seeing how I felt throughout the run, and going as long as I felt like.

Well…something happened that hasn’t happened in quite some time. Let me premise by saying there is major road work going on in our neighborhood including sidewalk closures, which makes finding a running route slightly challenging. As I made my way through the known neighborhoods I was feeling really good. Like so good I wanted to keep going and going and going, which worked out in my favor because as I was trying to make my way home, I hit about 3 detours which led me back the way I came from. The mileage started piling up and I ran a distance that I haven’t seen in quite some time…

4.6 miles. 

I know that to many, 4.6 miles is a walk in the park, but considering I haven’t accomplished this distance in a very long time, it reinstated my confidence in my running capabilities and I owe thanks to the road closures I guess? Nahhh.

The run this morning really motivates me to sign up for a race, and to start running more often. The feeling you get post-run is indescribable and I always wish I could bottle that feeling up and release it during a time where I am feeling highly unmotivated.

After the run I headed to the living room and did 20 minute pilates stretch and breathe video OnDemand. It was just what I needed.

I am in such a great mood today. I’ll be excited to fill you in on the festivities taking place tonight. It’s looking mighty cozy in our humble abode.
